Funny I thought the same thing about @shelley262 ‘s crackers and the prawn and crab cocktail.
A while ago someone on here posted a link for a low carb coffee and walnut cake, but I didn’t have the ‘copy me that’ app at the time so didn’t save it. It was one of my favourites too before lchf and I’m hoping they might post it again now?
That’s the one I’ve made as well but smaller quantities and icing made from inulin must give it another go at some stage but think choc olive oil cake is next! Going to buy some macadamia nut oil fancy trying it with nut oil rather than olive oil@DJC3 we were distraught when one of ours had to stay overnight at the vets. Very worried, and the thought of him being alone there, away from the home Pack... but if they are that ill, it is the best place for them. They need the drip and the supervision, and there is usually a vet nurse on duty all night.
Of course, that doesn't make you feel any better at all, but it is kind of reassuring.
I hope she is better soon and home with you where she belongs.

Delicious. But be warned, there is nothing light and airy about it. More like a meal in a slice, and resembles a brick.
Good luck with the tests next week@DJC3 I don't like the fasting but I also hate the idea of good food having a negative effect on me. Most of the food will be fine over the next few days until tests are done then I will relax and enjoy them for a month or so while its peak season.
Hope your four legged member of the family is okay @DJC3 thinking of youThanks @Brunneria you’ve hit the nail on the head exactly. Its just the thought of her being on her own in a place that makes her nervous at the best of times. You are right of course, she’s in the best place I know.
Ooh thanks for the c&w recipe - I love a brick- like cake, much better than an airy fairy light sponge. I might try @shelley262 ‘s method of beating the egg whites and adding them separately though.
Thanks @jayney27 There is no particular result I want just no rise from last time and all other markers as good or better. I am actually just below my own target but I have no confidence in what that means for the lab numbersFingers crossed for you I truly hope you get the result you want

I think that’s a wise attitude to have, as you say to not see a rise is great and at the very least keeps you on track, other markers are just as important to us as they reflect overall health and we need them to be considered, I think we may sometimes get too fixed on out BG numbers.Thanks @jayney27 There is no particular result I want just no rise from last time and all other markers as good or better. Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: Skinny Café low carb pancake with bacon and SF maple syrup followed by Greek yoghurt and raspberries. I also had the tiniest ever slice of my daughter’s birthday cake, blood sugar two hours after lunch 4.6! (Pic above to show how small it really was!)
Mid afternoon: coffee at a cafe with pdf HP bar.
Dinner: family dinner at Hungry Horse for daughter’s birthday, full English for me, fried egg, bacon, sausage, mushrooms, tomato, one hash brown (gave the other away) and side salad instead of beans.

It’s surprising isn’t it how our tastebuds change? I think that’s good though, helps us not to want too many sweet or sugary things.It actually tasted really sweet, I could never have managed a normal sized slice, way too sickly for my tastes now!

I’ve always loved coconut, didn’t know about coconut oil or flour until recently but they feature quite a lot now in things I makeTastes do change a lot! Would you believe I didn’t used to like coconut very much, I love it now!

@Rachox Ive never seen a tinier slice of cake! Enough to sing happy birthday to though, which is the main thing.
@ianpspurs what a day Tuesday will be, got fingers and toes crossed for you but don’t see how you can fail to get a great result. Hope its the happiest of birthdays.

I made a loaf tin version ie smaller with following ratios
75g butter
75g erythritol
2 eggs separated
34 mls espresso
75g ground almonds
1 and a half teaspoons baking powder
25g of walnuts
Beat butter and erythritol to pale yellow
Beat egg whites separately to soft peaks
Add yolks a bit at a time
Fold in dry ingredients followed by egg whites
Cook 160 fan
Cooked for 50 mins
Iced when cool with a mix of inulin, powdered erythritol, butter and coffee produced a fudge texture topped with walnuts

I got it at 1.8g per slice if 10 piecesThank you I’m going to try this today - Sunday without a walk with the dog is a very strange feeling so baking will keep me occupied I hope.
Have you worked out the number of carbs? And what proportions of ingredients do you use for the icing?
Ihaven’t got inulin but think Ive seen it in small pots in Sainsburys - is it a sugar substitute too?
