What have you eaten today? (Low carb forum)

Funny I thought the same thing about @shelley262 ‘s crackers and the prawn and crab cocktail.

A while ago someone on here posted a link for a low carb coffee and walnut cake, but I didn’t have the ‘copy me that’ app at the time so didn’t save it. It was one of my favourites too before lchf and I’m hoping they might post it again now?
@DJC3 we were distraught when one of ours had to stay overnight at the vets. Very worried, and the thought of him being alone there, away from the home Pack... but if they are that ill, it is the best place for them. They need the drip and the supervision, and there is usually a vet nurse on duty all night.

Of course, that doesn't make you feel any better at all, but it is kind of reassuring.

I hope she is better soon and home with you where she belongs.

Delicious. But be warned, there is nothing light and airy about it. More like a meal in a slice, and resembles a brick. :D
That’s the one I’ve made as well but smaller quantities and icing made from inulin must give it another go at some stage but think choc olive oil cake is next! Going to buy some macadamia nut oil fancy trying it with nut oil rather than olive oil
 
Thanks @Brunneria you’ve hit the nail on the head exactly. Its just the thought of her being on her own in a place that makes her nervous at the best of times. You are right of course, she’s in the best place I know.

Ooh thanks for the c&w recipe - I love a brick- like cake, much better than an airy fairy light sponge. I might try @shelley262 ‘s method of beating the egg whites and adding them separately though.

Thanks @jayney27 There is no particular result I want just no rise from last time and all other markers as good or better. I am actually just below my own target but I have no confidence in what that means for the lab numbers

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: Skinny Café low carb pancake with bacon and SF maple syrup followed by Greek yoghurt and raspberries. I also had the tiniest ever slice of my daughter’s birthday cake, blood sugar two hours after lunch 4.6! (Pic above to show how small it really was!)
Mid afternoon: coffee at a cafe with pdf HP bar.
Dinner: family dinner at Hungry Horse for daughter’s birthday, full English for me, fried egg, bacon, sausage, mushrooms, tomato, one hash brown (gave the other away) and side salad instead of beans.

I think that’s a wise attitude to have, as you say to not see a rise is great and at the very least keeps you on track, other markers are just as important to us as they reflect overall health and we need them to be considered, I think we may sometimes get too fixed on out BG numbers.
I wasn’t confident about my result this time around as I had had my holiday and a virus all in the 5 week period before my test, despite my own readings giving me an average of 5.3 to 5.5 which as it turned out was pretty close to official result. Cholesterol was the same as at the time of diagnosis and blood pressure was lower, in fact the lowest I’ve had for years.

It actually tasted really sweet, I could never have managed a normal sized slice, way too sickly for my tastes now!

@Rachox Ive never seen a tinier slice of cake! Enough to sing happy birthday to though, which is the main thing.

@ianpspurs what a day Tuesday will be, got fingers and toes crossed for you but don’t see how you can fail to get a great result. Hope its the happiest of birthdays.

It’s surprising isn’t it how our tastebuds change? I think that’s good though, helps us not to want too many sweet or sugary things.

Tastes do change a lot! Would you believe I didn’t used to like coconut very much, I love it now! :joyful::hilarious:

I’ve always loved coconut, didn’t know about coconut oil or flour until recently but they feature quite a lot now in things I make :happy:

As you know I love my coconut ’porridge’, I also discovered this recipe, which if you use SF maple syrup and 85% choc, they work out low carb 4g per piece if you make the recipe into 12 squares. They remind me of Bounties :hungry:

@maglil55 I don’t have a sandwich toaster but your link almost makes me want to get one!! My plain old toaster is sitting idle.

@jayney27 not enjoying the cake might be a sign of your taste buds changing. My eyes still look longingly at certain sweet things, but on the couple of occasions I’ve succumbed, they’ve been way too sweet and I haven’t finished them. Eyes need to catch up with tongue!

Had another OMAD day yesterday, trying to drive BG back down. Dinner was a chicken leg with cauliflower cheese followed by some extra thick double cream mixed with a few broken up Hotel Chocolat 100% buttons.

I made a loaf tin version ie smaller with following ratios
75g butter
75g erythritol
2 eggs separated
34 mls espresso
75g ground almonds
1 and a half teaspoons baking powder
25g of walnuts
Beat butter and erythritol to pale yellow
Beat egg whites separately to soft peaks
Add yolks and coffee a bit at a time
Fold in dry ingredients followed by egg whites
Cook 160 fan
Cooked for 50 mins
Iced when cool with a mix of inulin, powdered erythritol, butter and coffee produced a fudge texture topped with walnuts
Hope you enjoy x

@jayney27 and @DJC3 forgot to put add coffee ( which needs to be cool so put to cool before start!) along with egg yolks! Should not put on recipes in a hurry !

I got it at 1.8g per slice if 10 pieces
you can just use powdered erythritol with something like stevia but powdered erythritol on its own tastes odd in icing a bit cold! I get big bags of powdered inulin from Amazon it’s often made from chicory root and it is a powdered sugar substitute but not very sweet and very low carb it balances the erythritol I think but it’s not essential that was my variation. I take inulin every day in my morning coffee for my gut health too
I do also sometimes use just powdered inulin for icing and add a few drops of stevia to sweeten it up I do this with the lemon drizzle. Mix a bit of powdered inulin and one drop of stevia into th3 lemon juice to produce the drizzle
