What have you eaten today? (Low carb forum)

Very warm here today but exactly a year ago I was dressed in suit and tie in Skiathos for son's wedding - that was properly hot! Today he and his wife have brought home their new baby and we also have the other granddaughter - 1 week old today. Interesting year. Menu today:
Breakfast+Mid morning snack: 3 pints of tea with h/m almond milk; version of bulletproof coffee with h/m low carb Nutella, 2 tsps inulin and cream in - I can only imagine my reaction to anyone even suggesting that to me 3 years ago! Tempted to try the official version without all the exotica which makes matey even richer
Lunch : 2 Egg mayo and avocado with acv, chia seeds, mackerel in olive oil and grated cheddar; spring onion (essential); 3 pints tea
Afternoon snack: Thought better of it
Evening meal: 8 oz burger with cheese, salad and celeriac remoulade

Hi all

Work has been very intense this week. Feeling very behind with forum chat. Today’s menu was:

Breakfast - none

Lunch - 100g pack of Lidl Deluxe antipasto

Dinner - 2 Waitrose free range Cumberland sausages, 2 rashers bacon followed by lazy dessert of extra thick Jersey cream mixed with almond butter and 3 Hotel Chocolat 100% buttons

@Goonergal you have my sympathies my week has been mega busy too, I have to arrange training for over 150 staff and then deliver it, major headache I think it’s been reflected in my BG readings, I feel calm but this week they’ve been higher than normal!
B 3salami crisps with cream cheese and my smoothie mix
L 3 slices of roast beef, gherkins and mayo
Snack half a PhD smart bar
D mixed salad, beef burger, mushrooms, mayo and 6 mini feta cubes
 
I love bullet proof coffee, like you, if someone had suggested it to me last year I would have thought they were mad, how times change, now people think I’m the mad one.
Do you use coconut oil or mct? I don't think I could face coconut and MCT seems to have glucose in it from many suppliers.

Do you use coconut oil or mct? I don't think I could face coconut and MCT seems to have glucose in it from many suppliers.
I use coconut oil in mine, I also now put normal coffee with a spoonful of cream in my nutri bullet to make it frothy :)

Ooh I didn’t know that would work. I’ll give it a try when I’m back home, I like a frothy coffee
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: tuna mayo with cauliflower, broccoli and red onion salad followed by Greek yoghurt and raspberries.
Mid afternoon: peanut phd bar with a black coffee.
Dinner: cheese and mushroom omelette with lettuce, white cabbage, carrot and celery salad followed by strawberries, Oppo ice cream and a spoonful of LC chocolate granola.

@ianpspurs you’ve had a great year. How well does your suit fit you now? Have you lost weight since then?

I had a lovely first day here although it wasn’t very sunny. Spent most of the day tackling the garden with a couple of walks to break it up.

B: scrambled egg and smoked salmon. Nespresso coffee and cream.

L: 2 slices ham from the wonderful local butcher with a poached egg and avocado. More coffee

Late afternoon snack of Adonis nut bar as my daughter and I were going out to her friend’s to get our nails done and I didn’t want to be tempted if they handed round crisps etc. As it happened they had olives too so I was pleased.

D: when we got back: a slice of mushroom and brie quiche made with an almond flour and butter crust with salad greens and olive oil.

What was the almond flour pastry like? Did it use same breakdown as flour based pastry? Interested in how it was done and how it worked out!
 
Bed 6.8 FBG 6.4 really busy day but got through it. Eyes are fine so I don't have to tackle The Eye Pavilion for another6 months. I hate the field test I always refer to it as the sneaky dot test. I'm convinced they are putting in more and more of the extremely faint dots.
B. Tassimo Americano grande with a dash of cream.
L. Nothing - no time
D. Rack of spicy ribs and 6 Santini tomatoes with cheese and chive dip.
2 squares of Lindt 90%.

Swimming with No 1 tomorrow. Only 1 . 5 weeks until schools go back here. Rest period will soon be over. Got a good downpour at the moment. Good for the gardens.
 
What was the almond flour pastry like? Did it use same breakdown as flour based pastry? Interested in how it was done and how it worked out!

I got the recipe from my new Carolyn Ketchum book - she also blogs on AlldayIdreamaboutfood.com.

150g almond flour ( well, I used ground almonds) and 50g melted butter stirred in then pressed around the inside of the flan tin, like making shortbread. Then stab the base with a fork and cook for around 10mins at 180 and allow to cool before adding the filling.
I think I overcooked it a bit so the edges were a bit too brown but it worked better than I expected. The almond flour has a pronounced flavour though doesn’t it? - I quite like it but I don’t think it’d go with all fillings.
On the whole I think the LoDough base was easier and better.

@DJC3 The pronounced almond flour taste and mouthfeel in savoury dishes is a big turn off for me - sweet ones mask the flavour enough to be tolerable. In a strange quirk, we made a quiche with a coconut flour base and I liked that taste. Just looked at the Lo dough quiche recipe - I personally would avoid like the plague just know the base would be a waste of resources for me.
I have no idea re the suit and fit. I am about 2ks lighter and waist is smaller. I now how to quickly shed 2 kgs with fasting for a couple of days. May wear for christenings if they happen - big deal for me but not my call.

Hi Ian could you share how you or your OH uses coconut flour for pastry please? Coconut flour is a bit odd as it absorbs loads of liquid so wondering how much you add and what type of liquid? Would love to know.
