What have you eaten today? (Low carb forum)

Breakfast: overnight oats made with coconut milk, desiccated coconut and chia seeds. Blueberries and nuts

Lunch: sardines and tomatoes in wholemeal toast. SF jelly, strawberries and double cream.

Snack: Atkins bar

Dinner: from scratch chilli (daughter's speciality) with butternut squash 'noodles'

I am however going to have a sliver of 'chocoholic' cake which my daughter made for her boyfriend's birthday! It's an absolute beast of a cake. I made the chocolate sponge inside and we decorated it. So much chocolate!IMG_20180826_142559_565.jpg
 
Hi all - family all home now and busy with catch up later this pm getting ready for jollies tomorrow as I’m meeting up old school friend and going to see the jersey boys should be fun
Breakfast stuffed from previous days so gave it a miss just coffee inulin and cream
Lunch one slice lodough quiche and a few nuts
Dinner lamb chop and cauliflower cheese with glass of red followed by one slice of Lc lemon drizzle with yoghurt
 
Hi all. A bit out of sorts today - tired and dizzy and BG running about 1mmol higher than usual throughout the day. Didn’t stop me traipsing all round central London in search of Hotel Chocolat cacao breakfast tea - it is my favourite and is being discontinued so in short supply. Eventually tracked down about 6 months worth having visited 8 shops, of which 4 had stock,

Lunch - Shake Shack. Bunless double cheeseburger with tomato lettuce onion and mayonnaise. Followed by 3 Hotel Chocolat 85% batons. Discovered that the shops that are also cafes stock little packs of 3 of these.

Snack - having bought 3 of the packs of 3 batons, the remaining 2 packs disappeared on the train home.

Dinner - chicken wings coated in garlic butter. Will be having these again - as tasty as they were messy to eat. Dessert was a slice of lemon zucchini cake and extra thick double cream.
 
Hi folks. The early waking and rising resting pulse rate have gone leaving a cough behind so not an especially active day. Reflecting on what I ate today did make me feel guilty about very rarely actually eating leftovers in my life. I do wonder if I have a kind of ADHD for food. @Goonergal hope your out of sortsness soon subsides and Breakfast tea is good but that variant would be a step too far for me. Still have the "pleasure" of watching Spurs find even more creative ways to roll over and let Manure tickle their tummies to come:arghh:

No theory behind the coffee just that when we make a pot there is some left - about a cup full. I am often up well before Mrs P and if I have tea I can often have 2 pots before she gets up but never use it all up.
 
@VioletViolet here it is - there was a lot of experimentation with it on this thread a few days ago, the recipe below is the ‘perfected’ one:

Low Carb High Fibre Flapjacks or Chocolate Bars
The flapjacks/bars are made in a mould – the amounts below works for a
10 space mini loaf silicone mould (each mould 7cms by 4cms)
Carb content for Flapjacks is mainly the ground flaxseed, which with other dry ingredients totals 5g for all 10 bars = 0.5g per flapjack
Carb content for Chocolate Bars depends on the chocolate used so for example 85% choc is on average 22g per 100g and so would add 33g to total making mix 38g for all 10 bars = 3.8g of carb per chocolate bar. This could be reduced by using a 100% chocolate - but check nutrition on the bar of choice.
Ingredients
For Flapjacks/ Basic mix for chocolate bars
● Dry mix - 20g of Psyllium husk, 150g of ground flaxseed and 30g Of inulin mixed in large mixing bowl
● For caramel - 120g of butter, 50g of Inulin and 120g of erythritol OR skip this process, it can be hard to get it right - and use a sweetened zero carb caramel syrup and the 120g butter.
For chocolate bars (optional)
● 150g of 85% cocoa, or higher, dark chocolate Method
1. Have dry ingredients ready in large mixing bowl
2. If making caramel - melt the butter in a pan then add the inulin and
dissolve followed by the erythritol. It will crystallise if you don't keep stirring. You'll need to keep heat low until sweetener dissolves. Then raise temp slightly and lightly bubble while stirring until the mix turns a light caramel colour. NB don’t over cook - it will be difficult to work with and may make flapjack/bars too chewy, you're aiming for flavour it doesn't need to be thickened!
3. If using commercial caramel sauce -melt the butter in a pan and take off heat and cool and then add enough of the sauce to the butter to give flavour and sweetness to personal taste.
4. Mix the caramel sauce into dry mixture until it is combined
5. Divide mix into 10 and press into loaf tins - put in fridge to cool and set.
6. If making chocolate high fibre bars - once caramel and dry mix
combined leave to one side to cool a bit. Meanwhile melt the dark chocolate and then mix into the flapjack mixture. Then divide into moulds and put in fridge to cool and set.

Evening all
Another fairly quiet day, weather a little better than yesterday but not brilliant and no sunshine
Trip into town as I have been treated to a nutri veggie machine, it does slicing, shredding and spiralizing so will be a busy piece of equipment, I hope.
Coffee with cream first thing
B microwave 90 second bread toasted then topped with cheese and toasted, not had cheese on toast for such a long time it was a lovely change
Cappuccino on way home from town
L celeriac soup and lo dough quiche
Frothy coffee
D salad, 2 hot dog sausages wrapped in cheese, small portion of fried mushrooms and celeriac chips, cream and a spoonful of home made low carb granola, OMG THIS IS AMAZING

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: cold roast chicken with cauliflower, broccoli and radish salad followed by Greek yoghurt and raspberries.
Mid afternoon at Neros: cappuccino and a CCB out of my handbag!
Dinner: lamb burger on 1 x slice of Hilo with cauliflower, broccoli and celery salad followed by SF jelly, cream and LC chocolate granola

Sorry to hear you are not so good it’s wierd the bg rising side of things but it’s a natural defense mechanism I’ve read previously. Think rapid turn around in weather is a bit odd for us too I had to do up my coat today! Look after yourself @Goonergal - make sure you get better for Friday! So looking forward to our meet up.

The sesame brittle is actually very easy to make.

Put some erythritol in a pan and let it melt. Add a bit of clotted cream. Wait until most of the moisture has evaporated while stiring once in a while to avoid burning. It is done when most of the bubbling subsides and the caramel is a light brown color. Add the sesame seed to the mixture in the pan and stir. I leave the heat on for a bit to let the sesame seeds toast. When ready, pour the mixture on a piece of wax paper, spread it out and let it cool. Done.

Edit to add: I actually also add some salt because I enjoy the taste of salt caramel.
