What have you eaten today? (Low carb forum)

Breakfast- omelette and avocado

Big Late lunch- just under 1/2 a Grilled baby chicken, with a crunchy salad, broccoli rice and avocado. 1 tbs of mayo.

Stuffed from lunch and decided not to have dinner but plummeted to 2.3 so treated with OJ & half a banana. The OJ was probably enough but had the shakes :(

Hi all. Still feeling under the weather - and amazingly hungry - but have had 2 pieces of good news today:

Firstly have joined @shelley262 in the 30 club - that is my new HbA1c (meter averages suggested a couple of points lower, but pleased to see a reduction) and secondly my MRI review on my shins revealed no bone, muscle, tissue or tendon damage. Apparently it’s just my body objecting after years of inactivity, so have the green light to continue as I am and just be guided by pain as to when to stop, safe in the knowledge that no damage is being done. Conversation with nurse was very positive - have posted in the success stories section.

On to eating. Consumed a vast amount today. Hungry all day.

Breakfast - 2 poached eggs and 2 rashers of bacon. Was very glad to have decided to eat when I arrived at the hospital to find an enormous queue - took 30 minutes just to book in!

Lunch - small fathead pizza with pepperoni topping followed by lemon zucchini cake with extra thick double cream.

Dinner - M&S Serrano ham and manchego cheese rollitos.

Snacks - lazy dessert of extra thick double cream mixed with almond butter and a 64g bag of salted almonds. 50g Sainsbury’s 85% chocolate.

Hi. Here it is.

Lemon zucchini/courgette cake is 25 grams of carb for total cake – so if divided into 10 slices will work out at 2.5 grams of carb per portion
Preheat oven to 170C (150 fan) / 350F/ gas mark 5 Line and grease large loaf tin
Ingredients
● 250g erythritol
● 90ml olive oil
● 2eggs
● 75ml unsweetened almond milk
● Juice and zest of 1 large lemon
● 225g courgettes, grated
● 215g ground almonds
● 45g chia seeds
● 1 tsp vanilla extract
● 2 tsp baking powder
● half teaspoon salt
Method
1. Combine ground almonds, baking powder and salt and set aside.
2. Whisk erythritol and olive oil in a large bowl.
3. Add eggs and almond milk to bowl and whisk again.
4. Stir in the lemon juice and vanilla extract followed by the almonds, baking
powder and salt.
5. Fold in courgettes and lemon zest.
6. Add chia seeds and stir.
7. Bake for around 55 minutes.

Editing to say that I used twice as much lemon in last cake and got a better result.

I have all those ingredients! It sounds like it will make a huge cake. Which can only be a good thing
 
Hello all.

Been out and about today, so only had breakfast and a late dinner.

Breakfast: Two double decaffeinated espressos. Two scrambled eggs. A DD keto roll with mayonnaise, chicken breast and cheddar cheese.

Snack: About 15g of 85% chocolate.

Dinner: Half a T-bone steak, one avocado, a tiny sliver of carrot-zucchini cake. A glass of dry red wine.

Funny thing happened to my blood sugars during dinner. Before eating 5.7 and about 15 minutes into eating they dropped to 4.8. I hope this means my first phase insulin response is working again.

@Goonergal -- Congrats on those fab HbA1c results. Well done, you are a super star.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: cold left over lamb burger with cauliflower and broccoli salad followed by Greek yoghurt and raspberries.
Mid afternoon:raspberry chia pudding and black coffee.
Dinner: coconut and lemongrass chicken stir fry, no noodles just extra beans sprouts to kid the eye, followed by strawberries and salted caramel Oppo with a spoonful of LC chocolate granola.

B. Tassimo Americano grande with a dash of cream.
L. Couple of Costcos sausages with a fried egg and 2 rashers of streaky bacon.
D. Tesco prawn cocktail, mini plum tomatoes, lettuce and 1/2 avocado.
Chia Pudding with 6 raspberries.

Today bed 5.2 FBG 5.7 but soon hit 8 7
B. Nothing
L. Nothing
Lay about nursing a sore throat and trying to stay awake.
D. eventually, slice Tesco high protein bread with smoked salmon pate. Lettuce, tomatoes
Loads of water and paracetamol.
Right now I'm off to bed. Shattered!

Hope you are soon on the mend @maglil55 I seem to have something similar but not as virulent

@ziggy_w your food sounds great today. I hope, like you, that the bg drop halfway through your meal is a positive sign.

I haven’t been able to monitor bg much today - I popped out for a paper this morning and when I got back Mr C had gonebout and locked up! I didnt have my key on me so had to wait for my daughter to get round and we went out for the day with dog and kids

B: scramled eggs, smoked salmon, coffee and cream

L: (out at a country park cafe) Warm bacon and chicken salad with mayo. Coffee and milk.

D: Garlicky Chicken leg done in IP with saag paneer. (Daughter is now keeping an eye on Amazon for special offers on IPs) followed by one of my original batch of CCBs looking forward to finishing this batch and trying again.
Got grandchildren staying over tonight so probably wont have much time to post tomorrow. Night all.
 
Hi all late tonight - brilliant production of the jersey boys and meal out
Breakfast one slice bacon and egg
Lunch husband had his birthday pressie from m and s premium club a cream tea so I took along a lc flapjack and a few seed crackers had the egg filling from out of one of sandwiches and a pot of clotted cream with the flapjack felt very naughty
Dinner Italian restaurant glass of red wine, salad caprese followed by grilled fish
, broccoli and cauliflower and French beans. They were great about not putting the sauces on. First time with green beans though and they did put my bgs up but delicious really enjoyed them.
Back home tomorrow

This looks great, thank you. Very interesting about the difference between 3 and 4 lobed peppers - I’d no idea.

I actually wasn't aware they were gender specific, but my OH (who is main chef in this hacienda) always prefers 4-lobed peppers, where there is a choice, as they're usually sweeter, according to him. Now, I can tell him it's because they're lady peppers.

Not altogether sure he'll be impressed by that little nugget. :)

Are you still always following recipes, or are you starting to lob stuff into the cauldron and just seeing what comes out?

One of my jobs in the coming days is probably to do another batch of tomato onion masala, as a curry base: https://joshicooks.com/onion-tomato-masala-2/ There are others online, utilising fewer ingredients, but this one, in my view, has good depth of flavour. It makes c24 portions, so in our 2 person household, a batch, frozen in aluminium takeaway containers, lasts a while, and the containers (10 for £1 in Poundstretcher) just go out when used.
 
B. One slice of homemade quiche, made with no flour. L.Naughty chicken drumstick from KFC with pasta salad and potato salad and yes bloods were high, never do that again. D. Nice piece of fish with egg and avocado salad and some side greens. Lots of fluids. Might have chia dessert later if bloods are down from the lunch, i was so surprised how high it went but it was an experiment.:hilarious:

D cauliflower prepared in my new veggie bullet, fried with a little bit of onion, peppers and chilli spice, buttered asparagus and tuna steak
glass of wine with some stilton and salami crisps
 
Hi all back home from my jollies lovely time especially the jersey boys
Breakfast little cafe and a bit complex they struggled with not doing standard breakfast and tried to give me toast, hash brown, beans etc etc so had to explain again - eventually simple bacon and egg arrived!
Lunch picnic cheese and ham rollitos from m and s and lc flapjack
Dinner at home large cheese and ham omlette and salad ( my purple tomatoes are just starting to ripen and are delicious but not too sweet) glass red wine followed by raspberry clafoutis and yoghurt.
