What have you eaten today? (Low carb forum)

Hope all had a good day today it’s been a bit grey here but got out there for a walk with the puppy!
Breakfast one boiled egg and one slice of Lc bread
Lunch 6 lc seeded crispbreads with chicken liver pate and a few almonds followed by small CCB
Dinner pork ribs on bed of mushrooms followed by SF jelly and yoghurt. About to have coffee but need to resist temptation of chocolate! Still have large stock of birthday chocolate supplies!
 
Real check your privilege day. 6 hours with no teapot making tea with tea bags in normal sized cups and I feel like some kind of detainee - hmm
Menu:
Breakfast: 3 pints tea with h/m almond milk
Mid morning snack: Swimming pool water
Lunch: 2 flaxseed crispbread with chicken liver pate; Schneider Protein brot beef and French mustard I award myself a star for not wasting all that beef. It will take some eating even for the dogs; coffee on the journey from Cambs to Breckland
Afternoon snack: 1 of latest batch of CCBs while baby sitting
Evening meal : Leaves and flowers salad with cheese and h/m mayo

Hello all.

Was a bit lazy last night and skipped my daily half hour on the elliptical trainer -- so blood sugars this morning were a bit higher.

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: A DD keto roll (fresh from the oven -- yummy) with goat cream cheese and smoked salmon, a DD keto roll with mayonnaise, cheese and beef salami, a small piece of low-carb carrot-zucchini cake.

Dinner: A piece of lamb, two tablespoons of lupin hummus, creamed bellpepper and zucchini. A salad with low-carb mustard-honey dressing and feta cheese.

Off to my half hour on the elliptical trainer now.
 
Hi, yes those numbers have a lot to answer for! I don’t know if my 5.4 this morning was a result of my pampering and or glass of red wine.

I guess it depends on the wine and how our body reacts to it. For me, it usually lowers my blood sugars a bit. Right now, I am trying to stay off the wine for a bit to see what happens. Miss it though.
 
Back on track today.
Coffee with cream first thing, fasting BG was 5.4 so skipped breakfast to see what happened as I generally see numbers climb until lunchtime regardless of whether I eat or not, I didn’t test until lunchtime having not eaten since 6pm last night and my 5.4 rose to 6.1 but that was after a brisk walk back to my office carrying training materials, laptop, handbag and 2 Ltr bottle of water!
L prawn salad and small pack of pork scratchings
Almond milk cappuccino when I got home
D chicken and prawn curry with hard boiled egg on a bed a broccoli rice, mix up mousse of raspberries, peanut butter, thick cream and sprinkle of granola, glass of red
 
Too right - colours the whole day doesn’t it? Did your facial affect your numbers? It’s so relaxing, I love having one too.
Sorry, that's a step too far along the metrosexual highway, lower numbers or no :angelic: Just to add to my food list - on return home pint of tea made in a teapot with almond and German milk.

Have you got a recipe for the flax crisp breads?

Me today:
B: Flax and ground almond porridge with almond milk
L: Bernstein salad. Salad leaves, salami, olives, radishes, spring onion, cheddar and olive oil and white whine vinegar dressing
D: pork vindaloo (authentic Indian, not the mega hot version from takeaways) with cauli rice
 
Finally found my holy grail of a milk substitute with very low carbs, an OK taste, no 'grainy' texture and that doesn't separate/curdle in coffee. Better still it's a brand sold in the supermarket chain we normally frequent here. It's an almond milk with only 0.3g/100ml carbs. Soooo...

B: 'Milky' coffee; slice of toasted 'soul bread', spread with 'Olivada' and cherry tomatoes on top. Olivada is a spread consisting mainly of olives with a bit of anchovy.
L: Went for a walk and scoffed some peanuts. Bought some salad stuff on the way back to the office but didn't get to eat it.
D: Cauliflower with melted cheese and spices on top plus slivers of the 'lacon' (boiled ham) that I had bought for lunch. Followed by some greengages.

250 gms flaxseeds ground in a nutribullet in 2 equal portions; wait until it "castles"
270 gms/mls water
Mix together to make a dough - use a spoon/spatula don't kneed but once combined roll in hands
we use 12 small loaf tins lined with lard - divide equally
heat the oven to 200C and cook - the outside will be very crusty but inside may/should be doughy after 1/2 hr to 45 mins
take out and cut in half then return to oven doughy side up on low heat until crisp

Must be tins not silicone and must be lard for greasing

Just finished watching Bake Off - talk about rubbing salt into my wounds, but I love it.
B: bacon and a fried egg with a large grilled mushroom. Coffee and cream
L: smoked mackerel, prawns iceberg lettuce with an individual pot of Tesco carsar dressing.
Small slice of lemon drizzle cake I found in the freezer this morning happily.
D: beef stir fry with mange tout, broccoli and konjac noodles - (I thought they were ok, expected to hate them) sesame oil, soy sauce and chilli.
Greek yoghurt with a few raspberries and a spoonful of @Rachox recipe choc granola.

@SamJB I love an authentic curry too. As students we used to make a pork vindaloo using a joint called hand of pork - it was very cheap, not sure if you can still get it.

@DJC3 You certainly get hand of pork in my neck of the woods it is absolutely the P family favourite £6 feeds 8-10 of us plus dogs and is never dry - dry meat is higher up my dislike list than cupcakes or coconut.

Breakfast - overnight oats (half oat, half coconut and chia seeds) made with coconut milk, few berries. Tea.

Lunch - lo dough with paté, olives, mozzarella and tomatoes

Snack - pepperoni and cheese

Dinner - from scratch carbonara with courgette instead of pasta. SF jelly and some watermelon
 
B: Coffee with teaspoon of cream
L: Greek yogurt, half a banana
D: runner beans, green cauliflower, pork belly slices, Pepsi Max
Afternoon coffee with cream, cherry scone with butter.

Black coffee no milk or sugar. Have coffee once a week
half grapefruit no added sugar
quarter avocado two cherry toms on top of toasted keto mediterranean flat bread

LUNCH
Omlette two eggs parmesan cheese, and basil
handful walnuts and almonds

DINNER
Juicy steak on the BBQ
raw salad, Kale, red pepper, green onions, celery, mung beans, half raw carrot salad drizzled with cider vinegar olive oil
Greek Yogurt and three raspberries, seeds

Note. Kale, have tried it for first time, it is really nice taste raw, will try it cooked as well tomorrow. It seemingly has so many good values, and especially aimed for a good healthy liver!! Was very impressed with this veggie, so crunchy and nice.

Absolutely No snacking as always inbetween meals, i.e. that means one is actually fasting daily, no snack between breakfast 7am to lunch 2pm. 2pm to 8pm dinner and then of course, 8pm until next morning breakie 7am. Must say, not snacking over one year has proved so beneficial energy wise quite amazing really.

That’s great news - when I go back to Where there is a proper butcher I’ll ask for it. Never understood why it was so cheap. And you’re right it feeds loads of hungry people.
It’s the perfect meat for the IP I reckon too.
BTW if Mr C who is the biggest grumpiest Yorkshireman in the world can enjoy a facial ( and yes he did) then you should certainly try one - bliss!

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: cold sliced meat, salad leaves, 2 cherry tomatoes and small bag pot k scratchings followed by SF Jelly, cream and LC chocolate granola.
Mid afternoon: Jaffa quake carb killa bar.
Dinner at Bella Italia: grilled chicken breast with garlic butter, mushrooms, side salad and tonight’s holiday treat 3 x battered onion rings (!) followed by strawberries and cream. 2 hours post meal 4.6 (5.1 before), so very pleased with that, our lodge is a good walk from the restaurants so I think that’s helping along with daily swimming :)

I agree a facial is bliss, I have one every 4 weeks, I have a pedicure, my eyebrows shaped and tinted and an hour facial which includes steam and a scalp massage, yesterday I had a new element, a jade stone was used, it was so cooling and smooth on my skin. Thankfully my therapist is now a friend so she isn’t offended if I actually fall asleep while she carries out my treatment.

Near the beginning of my LC journey, when I was scouring t'internet looking at recipes, I would regularly ask my butcher for cuts not obviously displayed in the window or cabinets. Being a decent butcher, he knew what I was talking about when I was using US terms, although he did once ask if it was a test. :)

When I bought my cauldron, I tasked myself, for a period, with only using cheaper, notionally tougher cuts of meat. Almost without exception I found the IP to be triumphant in transforming them.

One of my fave beef dishes is for shin. Beef or pork cheek is fab, and even lamb hearts can be transformed in the cauldron.

In the spirit of the thread, tonight we had cottage pie, with little potato and loads of cheese. MrB breaks into it, I pillage the under layer of deliciousness, and steal all the burnt on cheesy bits (we always top with a cheesy layer). Does such pillaging of the cheesy layer help entente cordiale in this hacienda? Not always, but my shoulders are broad. I'll cope.
