Had a great (fantabulous!) time. Choccy box woodland cottage. Thatched. Wood fire. No wifi!!!
Let my inner Girl Guide out of her box and collected kindling from the woods.
Took the IP, since I had no intention of wasting my hol slaving in a rather basic strange kitchen,.
Hi all I can't work out how to ask a question on this forum lol so I thought I'd ask on here just looking for suggestions of low carb accompaniments to have with steak instead of, the far from low carb, chips / garlic bread etc
@mojo37 get the best steak you can afford and cook it as little as possible. Add mushrooms and salad and close family. @Goonergal thanks for asking.Evening all.

Ended up with another unplanned OMAD day today and since yesterday’s meal was a late lunch, roughly a 28.5 hour fast. Most of the day wasn’t hungry at all, but ended up more than ready for my dinner of beef short rib. Followed it up with 50g roasted, salted macadamias. Large mug of tea with cream pending.
@mojo37 welcme. Can’t compete with @Brunneria s steak accompaniment. Mine are usually very simple - plenty of garlic butter and sometimes some buttered cabbage or cauliflower cheese made with cream. Someone on the thread (@maglil55 ?) posted a recipe for zucchini fries which were basically courgettes cut into chunks and wrapped in bacon and then baked. They might work with steak too.

The day was quite special. As I said earlier an 8 week and 9 week baby having facetime is bizarre enough. Added to it a 5 year old engrossed in the ryder cup and a lemon and lime drizzle cake with and 12 egg vanilla custard topped trifle very special. Best moment was both boys leaving with huge bas of eggs, apples, pear, rhubarb and blackberries. Not about what I ate today more about what I was able to share with/do for my loved ones. My race is run just need to make theirs as easy as possible.

Since we went v LC(and I decided that turkey is not worth the phaff), we always have steak as xmas dinner.
I fry/caramelise some onions and add balsamic vinegar or pomegranate syrup), garlic, and umami paste.
Sometimes do buttered mushrooms too.
Then using the same pan, i do 2 huge medium to rare steaks, adding crumbled Stilton on top for the last few minutes so that it starts to go all melty.
Then wop everything onto plates with a nice simple green salad.
Heavenly.

Hi Goonergal - I've noticed a few times you having a meal of short rib? How do you do it?
I either do it in the cauldron, so it's sort of braised, or by slow, slow roasting it, but I'm always curious how others do favourite things of mine.
Hi all back home in UK - day started with a very choppy crossing on ferry first thing! Also had to fast much of day as airport and plane food not low carb! Woman sat next to me on plane was a bit of a nightmare too she ate on a 2 hour 50 min flight two toasted sandwiches, a family bag of crisps, a twix plus a full sugar coke and an orange juice! I had a peppermint tea the only okay thing on menu list!
Breakfast cheese omelette and coffee
Lunch peppermint tea
Dinner chilli from freezer and one slice Lc garlic bread followed by two scoops of lc ice cream and square of 90% chocolate.
Heating on as home cold! Washing machine in full use!
Hi. I slow roast it - bit of water in the bottom of a roasting tin, cover with foil and leave for about 2.5 to 3 hours. Absolutely love it. Was yearning for an instant pot today though - day ran away from me and was getting very hungry, but had also run out of my favourite bacon and was racing to put dinner on and get to Asda for bacon before closing!
Do you add a sauce to yours? Mine is plain and delicious as is, but wondering about what might go well with it.

Lunch: roast chicken, one tiny roast potato with mixed veg and gravy followed by SF jelly, cream and LC chocolate granola.
Mid afternoon: raspberry phd bar and a black coffee.
Dinner at ILs: cold meats and cheese with saladfollowed by one Jaffa cake
Going away tomorrow for a couple of days to stay in a treehouse (!) to celebrate our 30th wedding anniversary. I’m going to have to wing it on the food at local pubs etc... as we will be in the countryside away from the big chains! I will of course be taking ingredients and my favourite saucepan to make my coconut ‘porridge’ for breakfast

From the IP, I usually make a "wet" dish, so it's sort of braised in this case, although it could be done on a trivet and finished in the oven oe a quick sear on the BBQ.
When I slow roast it, I just heat the oven to a hot setting 200c or 220c, but as soon as I put the meat in, it is turned down to 150c and left to it's devices for at least 3 hours, although often more like 4. The meat and fat rises up, from the bone, to become quite tall really, but much taller than they start. Yummmmmmm.
If I think I'll fancy something with a bit of a different flavour, I'll put them in a dry rub and marinade it that way overnight/24 hours or if I vacuum seal the dry rubbed meat, a few days in the fridge, then slow roast as above.
The most delicious of all I have never, ever been able to recreate - mainly as the dry rub was stored in a small clip-top box which I had neglected to label. It was a home made rub, but no idea what I had used it on before.
Cooking can be one of life's adventures in this hacienda, but nobody died,...............yet! The short ribs with balsamic onions was probably a close run thing though. It wasn't my finest hour, and the annoying thing is I had followed the recipe. I hadn't freestyled even a little bit!
