What have you eaten today? (Low carb forum)

B.Scrambled Egg with a tblsp of cream and parsley in it. Less sugar latte.
Had to get something before swimming with the grandson as we were all off to the Santa Train after.

L. Minestrone with no pasta and a black Tea.
D. Chicken in red wine & cauliflower mash
Snack Boiled Egg and 3 Walnuts.
Black Tea
May have to have something else as My Fitness Pal won't complete again!

What is the Santa Train?
Local steam train enthusiasts run a steam train "Santa Express" to the North Pole (that's what they tell the kids anyway). You get teas and mincemeat pies (skipped the pies) kids get a soft drink and a pack of Santa raisins. Lovely journey along the side of the Forth - 30 mins there and another 30 mins back. On board Santa comes around , each child gets a gift , magician as well and truly joyous helpers with an accordion and a violin leading some very noisy singing. They do it really well and you have to book as soon as they go online as they sell out really quickly. They also run a little cafe with all home cooked food and some glorious looking baking which I have to resist. I say "local" - it's about a 90 mile round trip but the boys love it. Next week to have 1st two of many Christmas parties followed by the annual visit to Santa's grotto at Dobbies Garden Centre (another place that does it well). Comment of the day was from the little one who's 3 and has been very naughty at pre school. On seeing Santa he whispered "does he know??".

L: Smoked makral mashed in mayo with a salad
D: Lamb meatballs and Konjac, suspect Mrs W_F did the meatballs in flour :(

Added in half a kiwi, 3 strawberries , 2 melon chunks and a sugarless creme brulle. MFP finally let me complete the daily diary.

That sounds absolutely gorgeous. I really miss having children around at this time of the year - all those lovely little rituals gave Christmas different kind of meaning than it has with an all adults environment.

Breakfast: Bacon and mushroom roll (Lidl protein roll)
Lunch: Nothing
Dinner: Roast Moroccan Lamb (from Asda), cauliflower couscous, Moroccan salad (Asda) and Moroccan Lamb Houmous (Asda)
Snack: Prosecco

Every year from 1st to 24th December my family doesn't cook doing traditional roast dinners - I don't know why, its just something I was brought up with. I think its supposed to make us appreciate our Christmas and New Year dinners (both roasts) all the more. However.... its OH's birthday on the 14th so we'll be having a meal out to celebrate which usually means carvery. Ah well, at least I won't be cooking it.

Liking the snack Chook. I have quite a few of the mini bottles in the fridge for emergency use!
 
Saturday
breakfast - porridge, almond milk and flax seed
lunch - homemade veg soup
dinner - chicken tikka masala with mushrooms and cauliflower
 
B: bacon and egg, herb tea
L/S: Posh pork scratchings and a Perky bar
D: slow cooked lemon chicken with whatever veg I rummage out of the fridge. possibly broccoli cheese, and very likely sugarsnaps and green beans
 
Friday -
Breakfast - porridge with added flax seed and almond milk.
Lunch - cabbage braised with a slice of bacon, orange pepper, garlic, a bit of sliced leek, a knob of butter and lashings of black pepper.
Dinner - stuffed red pepper (mince, onions, sliced leek and mushrooms with some tomato puree ), topped with cheese and tomato slices, celeriac cubes for me and one v. small cubed potato and celeriac for Mr. G baked with olive oil and garlic, and some broccoli on the side.

Haven't had celeriac baked in the oven like that before, it was very good.
I love celeriac! Have you tried Celeriac Rosti? It's delicious...

Sunday
B. Fried egg , 2 M&S 97% sausages, portobello mushroom , 4 cherry tomatoes, less sugar latte.
L. Nothing - I cook family dinner on Sundays
D. Campari and soda and a wee bottle of prosecco.
Veal with a creamy mushroom sauce, steamed mixed greens, cauliflower mash. A wee bit of M&S Pearl and Chocolate tart with cream.
To start we all had @Resurgam's air fried chicken thighs although I adapted it a bit. I made a low carb marinade with tomato puree, mayo, Lea & Perrin, stevia, garlic salt, chilli and paprika, liquid smoke and Tamari Soy. Pulled back the chicken skin and rubbed this into the meat on the thighs. I didn't want to damage the crispy chicken skins to be. Popped them in the air fryer for 45 mins with a grind of rock salt on top then served with a home made low carb dip. You were correct @Resurgam the chicken skins come out fabulously crispy!
Despite this lot I was 8.2 this morning - I expected worse!

Sunday
B: Yoghurt
L: Smoked mackeral mashed with mayo, and salad
D: Roast Chicken, cabbage, peas, High carb roast spuds and parsnip

Monday

D: 80% pork Sausages, broccolli, spinach, coli mash, and onion and red wine sauce

Oh and some almonds while cooking it
 
B: none
S: 2 x coffeesubstitute and cream
S2: an unfortunate excess of Lidl macaroons. Was supposed to eat 3. But they were so nice I ended up having more... 25g carbs. Oops.
D: LC GF local butchers sausages. Best ever. Green beans, lots of.

dinner - pork loin chops braised with leek, mushrooms and green pepper. carrots and cauliflower on the side, 4 black grapes and a small piece of mature cheddar cheese.
