What have you eaten today? (Low carb forum)

@maglil55 I really enjoyed the fathead crackers but they weren't crispy really. I thought it was maybe because I had included too much cream cheese. I think they were more like cheese biscuits with the consistency of digestives.
 
Gee everything seems to be all over the place today. Must be the high winds - Just found the cover for my garden furniture that went for a fly overnight. Anyway,
B. Less sugar latte followed 1 hour later by 2 M&S 97% chipolatos, scrambled egg, 3 button mushrooms, 3 Santini tomatoes and 2 crispy bacon rashers
L. Black Tea and 2 walnuts
D. Will be rump steak , steamed greens, mushrooms and cauliflower in some format.

Snack: (still hungry after lunch) 20 almonds

B. Red berries with Greek yoghurt

L. Fathead crackers with some melted Camambert

D. Smoked haddock with asparagus. Raspberries with yoghurt.
 
Breakfast: Chia pudding, 1/4 green apple chopped, dessertspoon mixed chopped nuts, teaspoon coconut cream - delicious
Lunch: 2 fried eggs, 2 slices bacon followed by 3 dessertspoons Greek yogurt
Dinner: smoked salmon slices with cream cheese and salad (cucumber, 1 small tomato, lots of lettuce/spinach) followed by a low carb pancake (made with eggs, cottage cheese and psyllium husk) topped with a few raspberries and a dollop of whipping cream

No meds just the lchf diet and exercise.
 
B Guesthouse full English of scrambled egg, bacon, tomato, mushroom, hog pudding (? sausage meat?), chipolata.
L Nuffink (travelling)
D 3-egg souffle omelette with mushrooms, tomatoes, bacon bits & yellow pepper, plus half Lidl roll and butter with cheese.
My Libre has been low to mid 5 all day :)

MM espresso with double cream and 1 square 85% (predictable)

MA Greek yoghurt with 3 strawberries (treat)

Dinner Rabbit loins, quickly fried in olive oil and butter with whole garlic cloves and onions. Shredded white cabbage, fried with onion and garlic in butter and olive oil, with cauliflower cheese - totally totally delicious!

Drinks, black tea, hibiscus tea, mineral water, 2 glasses red wine.

Yum yum!

Rump steak was actually a rib eye and the cauliflower was replaced by aubergine chips. Apart from that jump this morning following my lone less sugar latte my BG has been roaming around the 7's all day which is certainly heading the right way. Fingers crossed the dawn readings drop again.

L. 2 tablespoons Alpro coconut yogurt.. soy and very low carb, but low fat too so I added a bit of double cream ;)
D. Homemade lamb mince chilli .. low carb forest fruit roulade.

I was doing so well but have got a serious case of the munchies tonight.. Help !
Trying to keep it low carb though.. I seem to be wanting salty things ? Had some mixed nuts, a piece of cheese and now nibbling pork scratchings.

Coffee. recounted the weeks since diagnosis, realised I am not a week behind weightloss schedule after all.
more coffee - obviously need the caffeine.
second meal. Lidl protein roll kippers and coleslaw
 
OK Another 7.9 and hubby had made the less sugar latte so got up a bit earlier and scrambled an egg. Will see if the egg plus coffee helps. If not the coffee will be changed.

D: Lamb Tagine, including Cous-Cous (just wanted to know how badly it impacts my BS - was 6.1 after 2hrs :) )

later..... a bottle of sparkling water and 200 yes 200 grams of peanuts:eek:
 
@maglil55 Buy yourself an old fashioned espresso machine (the ones, usually aluminium, with 2 metal 'chambers').

Here's one from 'Lakeland'

Then you can use pure ground real coffee, no additives and it's gorgeous. Add double cream, some people add coconut oil and put it in a blender to froth 'bullet proof coffee'. Neither should cause spikes at all. If you must add sweetener use the liquid type. Personally, I have now educated my sweet tooth away, no sugar / sweetener required! If your coffee is spiking you, change it!

My daily espresso with double cream and a square of 85% is a highlight of the day!
 
I've been trying the diet doctor regime - low carb, high fat (LCHF). Not working for me - huge amounts of fat aren't suiting me AND my weight's gone up! Chicken casserole with full fat cream and loads of cheese. Too rich!
 
@Judlepip have you had a look at the low carb recipes on this website? If you go to the home page you will find the low carb course. I think many people adapt their food options to suit their bodies. Are you monitoring your food intake? I use myfitnesspal to help me track my carb and calorie intake.
 
Thanks Mo53. I haven't found my way around this site yet; it's tricky! Yes, I use MFP too - a good way to check carb intake. I think I did find a recipe forum and downloaded some info on carb amounts.
 
@Judlepip, hello there, nice to meet you :)
I do lowish carb (less than 80g of carb a day) and I eat healthy fats but I also have a lot of weight to lose so I watch the calories too, it's not obligatory to eat extra whopping helpings of fat with your low carb. The idea is to eat a higher proportion of fat (and protein) in your diet because it keeps hunger away longer and smooths out blood glucose response. Most of us have tailored the diet to see what suits us. I keep a food diary too so I can keep notes. I've brought my blood glucose A1C down and lost weight doing this.

loads of good ideas on this forum and it helped (and continues to help) me hugely. As with any lifestyle or 'diet' it's still important to keep an eye on the total range of outcomes (weight, blood glucose, lipids, vitamins etc). though.

Having said that

Tuesday
Breakfast - Porridge made with water, added splash of almond milk and a tablespoonful of ground flax seeds.
Lunch - coffee with a splash of cream
Dinner - shepherds pie made with spicy mince topped with root veg mash with a nice knob of butter and a sprinkle of cheese.

Wednesday
Breakfast - Porridge
Lunch - homemade ham and veggie soup
Dinner - beef stir fry with extra peppers and mushrooms.

I've got one from Italy. Sister is married to an Italian so got one on one of my many visits (all sorts of things came back from Italy!). The scrambled egg seemed to make a difference though. Yesterday I jumped over 4 points today with the egg it was 0.9 so just less than 1 point. I may still change it some days though - it depends how important these 5g of carbs are on the day! Just found a recipe in the Tesco magazine for hot avocado wedges. Needs the flour and breadcrumbs replaced by almond/coconut flour to bring the carbs down but could be a nice breakfast addition.
