What have you eaten today? (Low carb forum)

Breakfast was two slices of cold pepperoni fathead pizza - took BG to 9.7 after 2 hrs (from 8.0) - learnt a lesson there!
what was your lesson?

I think mine would be that the pizza only raised me 1.7 so it makes a good breakfast :)

Mind you, I would be wondering why I was at 8 for my fasting blood glucose...?

Sorry @Ultramum can't remember whether you are a lc veteran or new to it. Because we have very different reactions to readings depending on our various back stories :)

One week in and FBG was 10.8 a fortnight ago. It was the 9.7 that alarmed me but when you look at the increase it isn't that much!

Need to get used to this ☺

Hello and you are very welcome to the forum and to this thread. :) :)

As you have been lurking you've probably seen the post that @daisy1 has for newcomers but I've just tagged her again because I find it useful to read it again every now and then - but going by your menu I'd say you've taken on board how useful low carbing is to us Type 2s. Once again, welcome.

Thank you, I will have a look.

Breakfast - 2 sausages, 4 small rashers bacon

Lunch - roast lamb, cauliflower, brussel sprouts, very small amount of gravy

Dinner - cold lamb, a few cherry tomatoes, half an avocado, dash of olive oil

The coffee question is inconclusive. Without the coffee on its own BG crept up 0.2 from the fasting level which is not a lot (and a lot less than yesterday). Need to repeat it again and see what happens.
B. 2 scrambled eggs with parsley and 2 rashers of crispy bacon and my delayed coffee.
L. Black tea and another Oopsie ham, avocado and salad sandwich. (Day 2 and the Oopsie was still soft and springy. Will be making a lot more and freezing).
D. Another air fried chicken thigh and drumstick with mixed leaf salad and Helmanns.
Going out tomorrow so alcohol will figure!
I find that coffee can increase my blood sugars. It's weird as they say it's good for folk with diabetes so you'd think it would have the opposite effect.

@Lesleywo
I love your avatar picture, is that a Lab running on the beach?
Thank you @Chook. The picture is of my beloved Sadie, our golden retriever who went to Rainbow Bridge a few weeks ago. Our poor Bosley (goldie boy age 3) has been lost without her but we have a lovely girl arriving on Wednesday for him. She is 3 aswell and her name is Angel .. can't help but think our Sadie is sending her to us :-)

That is lovely and how apt that she should be called Angel. :)

I have had experience of a mourning dog and its so sad because they can't tell you how they are feeling. When our old black Lab, George, passed away our girl, Millie (yellow Lab) pined so much that she stopped eating. The vet said either he could put her on antidepressants or - better - we could get her a new companion. And that's why we got our Labradoodle Archie. It was amazing, the evening he came to live with us she started eating again and they absolutely adore each other.

Saturday

breakfast - porridge
lunch - homemade ham and veggie soup
dinner - chicken curry with plenty of mushrooms and lots of broccoli on the side

Sunday
brunch - buttery scrambled eggs and a slice of back bacon.

dinner - turkey breast stuffed (with the insides of a couple of chipolatas mixed with chopped leek, red pepper and mushrooms with a very small amount of sage and onion stuffing mix to help bind it), a few mangetout peas and carrots, a small spoonful of root veg mash and a good portion of cauli.
Afters was the latest version of the coffee jelly thing with some Alpro yoghurt on top.

I've given up on the coffee mousse for the moment, (the latest version was very good but I have to keep an eye on the calories too because I still have lots of weight to lose).

Coffee jelly sweet is 1 half sachet of gelatine, add hot water to 1/4 pint, mix in 2 good two tsp of your favourite instant coffee powder/granules and 3 tsps worth of sweetener, 2 tbsp of yoghurt (I used Alpro this time but sometimes I use Lidl Greek) stir until amalgamated then top up to 1/2 pint mark with almond milk.
Bung it in the fridge to set.

1/4 of this amount is enough for me as I don't find I have the same sweet tooth any more and it keeps well enough for me to have it as a sweet snack or pud. if I feel like one (with the Alpro yoghurt the jelly on it's own works out about 30 calories and 2.5g of carb, with the full fat greek yoghurt it's about 40 calories and 2.7g of carb for that amount).

Here is the Basic Information, recommended by Chook, which we give to new members. You will find the links in my signature.

3 eggs scrambled for breakfast

2 rashers of bacon and 2 square sliced sausages for lunch

2 salmon steaks with veggies for dinner

Likely to have some tongue for a late snack

Today's food was lower in carbs than I usually have, but my BG levels are a bit higher than I've been used to. Not sure why.

Hello
B. Red berries with Greek yoghurt

L. Minute steak with salad

D. Scrambled egg with 2 rashers of bacon and a sliced tomato. :)

B Boiled egg, half Lidl roll toasted with butter & Marmite
L Ham & cheese omelette with undressed salad. Well done the local garden centre cafe!
D Warmed smoked mackerel, rocket, baby leaf spinach & mayo, plus other half of Lidl roll buttered

The coffee experiment continues. Regrettably things are not looking good for my early morning coffee. Must have still been suffering from the ill effects of that sneaky bit of birthday cake as I got up to a fasting 8. After the nursery run and pre breakfast I was still at 8. Will continue with no morning coffee and see if this continues
B. 2 scrambled eggs with parsley and 2 rashers of crispy bacon. 1 chestnut mushroom.
L. Nothing
D. Lettuce , tomato, small avocado, 1/2 boiled egg, 3 walnuts, crispy bacon, 2 slices mortadella, 2 slices prosciutto, 8 bits salami with truffle and tablespoon of Helmanns.
Just water to drink today.

How lovely .. same with Bosley. He hasn't been eating either ... and as you know, for a lab or retriever, that's pretty much unheard of! :-)
