What have you eaten today? (Low carb forum)

Found it - it was ham and avocado ( although chicken and avocado may become tomorrow's Oopsie sandwich for lunch).
The other is the well used cheesy corned beef thingy.

The oopsie bread looks great, I’ve seen it on DD site before and wondered if it comes out as well as their photos. Yours looks even better though.
You answered another question I had too - about keeping or freezing, thank you.
 
Evening all difficult day as mum poorly overnight so no sleep but she's back on antibiotics and sorted out her jobs list so when go back home hopefully she'll be back on track. She was too I'll for a shopping outing though.
Breakfast fried egg and low carb toast (took with me)
Lunch smoked salmon advocado and walnuts
Dinner steak and salad and mayo
Now on red wine -much needed ! Hoping back home tomorrow younger brother on mum care duty! Back to normal autistic son caring! I'm afraid after sleepless night decided not to test bgs today at all didn't want additional stress. Hoping motorway less busy tomorrow!

So sorry to hear of all your stress Shelley. You’ve done amazingly well to keep to lchf regime with all you have on your plate.

B: coconut porridge with raspberries and cream

L: smoked mackerel salad with avocado, boiled egg, rocket and ACV dressing.
Choc olive oil cake ( still going strong) warm with double thick cream.

D: roast belly pork with celeriac mash and buttery garlicy kale. Few strawberries and cream afterwards.

We are off to Iceland early Friday morning for 4 days ( another of the ongoing birthday celebrations) I don’t know whether to pack my glucose monitor. I doubt we’ll have much choice of what to eat and I think I might get a bit stressed if I end up having no option but a carby meal and resulting sugar spike. It might ruin the holiday.

Any thoughts if you’ve travelled since lchf?

@Mufflana glad to see that you managed to get your weight shifting again.

@ziggy_w your flan sounds interesting. Have kept the recipe, although I’ll need to find something to replace the coffee.

@maglil55 sorry to hear about your sister but glad your arm is a bit better.

@shelley262 I also succumbed to way too much Easter chocolate. My friend and her mum found the 85% Hotel Chocolat batons too bitter, so I ended up going through the rest of the box on our day trip! Sorry to hear about your mum.

Well, I took feasting to a whole new level on my first two days away - @DJC3 I was also in the 3,000 calories club on Monday!

Sunday - on the train and did not stop eating all day, but bizarrely my blood sugars kept going down, even after allowing myself to eat a small bag of crisps.

Monday - on a trip to the Scottish Highlands. Ate the hotel breakfast of bacon, eggs, cold meat and cheese and took large quantities of food in case there was nothing suitable en route. Of course there was, so I just ended up eating more, including polishing off a large quantity of chicken in the hotel lounge.

Yesterday - almost back on track. Fasting day with a dinner of ribeye steak, garlic butter and creamed cabbage with pancetta. However hotel lounge had miniature (good job they were miniature as I had 2) dark chocolate mousse. Tasted a bit sweet, but not too much so guess around 70% chocolate.

Today - managed to shun all offers of food on the train home and successfully completed a fasting day, including a visit to the gym when I got home. Dinner was Waitrose lamb kleftico followed by a small portion of lazy mousse and 2 Hotel Chocolat 85% batons.

I’d be inclined to take the meter - better to know what you’re dealing with, and you might get a few pleasant surprises.

I’ve travelled a few times - first time for Work and ended up eating all sorts and sending bloods shooting up. Last summer went away for 3 weeks and managed to eat fine (and lose a lot of weight) but discovered that heat sends my bloods up.

Hope you have a great trip. Iceland is on my bucket list.

I probably wouldn't pack my meter for short break - gave me a break when didn't and it's not as if you can learn anything about where to eat again or not - you know the rules. When went to Italy didn't take it and good when got back had lost weight and bgs fine but had had a break. I was concerned about impact of stress of travelling too. As @Goonergal says you may be surprised if you take it but know I wouldn't but it's what works for you. What fun though to go to Iceland it's on my list !

I always took my meter otherwise I would have been tempted to bury my head in the sand. I rarely have problems finding food I can eat. I must admit I tend to research the restaurants in the area we are staying to make sure it is suitable.
A friend of mine was in Iceland with her mother at Christmas time and she said the menus were mainly fish/shellfish and lamb was common too. She did say there are most cuisines available now. As you go further out from the cities she said there is weirder and more controversial stuff like whale meat but the cities are pretty normal.
She also said their hotdogs are amazing ( if you can manage to discard the bun).

@Goonergal glad your trip to Scotland was good, sounds like you kept the faith pretty well, and straight back to the gym- impressive! You did really well to go away for 3 weeks and still lose weight last summer.

@shelley262 I remember your post when you came back from Italy, you did so well then too, I can remember you saying you made a conscious choice not to test.

@maglil55 you’ve given me hope, fish, shellfish lamb - very do-able. I reckon I could discard a hot dog bun at the moment too - feeling quite focussed so that’s a good suggestion.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream (2 tsp) washed down with a black coffee.
Lunch: cold roast chicken, sweet pepper, cauli and broccoli salad with Caesar dressing followed by lemon chia pudding,
Mid-afternoon: lemon chia pudding and black coffee.
Dinner: chicken chasseur, carrot and swede mash and mixed veg followed by caramel Oppo and strawberries with two Lindt mini eggs.

I recently discovered oppo ice cream, pleasantly surprised by how nice it is
