What have you eaten today? (Low carb forum)

Hello all.

First day back at work. Blood sugars are still quite a lot higher than usual. Getting a bit fed up with these higher levels. Sometimes, I am tempted to do a whole day fast, but feel I have to keep my energy levels a bit higher still to avoid another relapse. Fortunately, after a glass of wine tonight, levels were at 5.0. Let's see what tomorrow brings.

Breakfast: Three double decaffeinated espressos with cream and erythritol. A wiener sausage, a DD keto roll with mayo and beef salami.

Lunch: Nothing.

Late dinner because I was home late: Half a DD keto roll with butter and beef salami. A serving of homemade low-carb chocolate mousse with erythritol-sweetened whipped cream. A glass of dry red wine.

@Goonergal. The original flan recipe doesn't require coffee, so just leave it out. Alternatively, of course, you could also add a bit of melted chocolate. I am also thinking about ordering orange oil (made from orange peel) and trying this for flavoring or maybe orange blossom water.

L: DD Oopsie roll with smoked salmon and cream cheese

D: will be takeaway curry in a short while. Chicken tikka starter, saag paneer and cauliflower curry.

@maglil55 the oopsie bread worked well, thanks for posting your photos. I’m packing some to take to the airport tomorrow. Have to get up at 3am so will be hungry by the time we get there. Flying Easyjet so no breakfast on the plane.

I have packed my meter, don’t know if I’ll use it but felt a bit stressed at the thought of leaving it behind.

My copy of JF ‘The Diabetes code’arrived today so that’s already in my hand luggage to read on the flight.

Probably won’t post while I’m away, hope you all have a good weekend.
 
Evening all - back to normal caring duties at home as mum picking up again.
Breakfast bacon, egg and mushrooms fried in lard - not had lard since I was a child and it was lovely. Mum never gave up using it and I used to say she shouldn't eat it from my low fat perspective! Think will start using more regularly - it’s also cheap at 39p per pack a bargain.
Lunch bits of cheese, a few walnuts and one square 90% choc
Dinner mushroom and cheese omlette fried in coconut oil served with salad followed by two squares of 90%choc
Bloods very good today despite yesterday’s stress - maybe the indulgent half bottle of red wine yesterday evening or maybe the lard!
@DJC3 have a really good break this weekend and hope early flight isn’t too stressful I’m not keen on early starts but good when get there and have most of the day still on arrival.

Have a lovely time xxx Glad the Oopsie worked. I made my Oopsie with the Kenwood for the first time and the texture was great. I've had an Oopsie day and it was 2 days ago I made them.

I feel your pain with the high bloods. Mine are still going up late evening and good old DP but they do come down again. It's not food related so I just have to stick with it.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream (2 tsp) washed down with a black coffee.
Lunch: Covent Garden mushroom soup with a Joseph’s low carb mini pitta followed by Greek yoghurt and raspberries.
Mid-afternoon: lemon chia pudding and black coffee.
Dinner: cheddar and mushroom omelette with salad of raw cauli, broccoli and sweet pepper followed by Caramel Oppo, strawberries and 2x Lindt mini eggs.
 
Bed 6.2 but not before it shot up to an evening phenomenon of 8.8. FBG 6.8 followed by a DP of also 8.8.
Had a bit of an Oopsie day.
B. Tassimo Americano grande with a dash of cream. 2 rashers of back bacon and a fried egg. 4 Santini tomatoes.
L. An Oopsie sandwich with deli rare roast beef , lettuce, tomato and mustard mayo.
D. Made another tuna melt with the odd Oopsie and the tuna mix I had left. Had it with the leftover smoked salmon, 1/2 Tesco prawn cocktail , 1/2 avocado, lettuce and Santini tomatoes.
A weird mix but I enjoyed it.

Hiya planning on giving them a go in am - Do you make your oopsies exactly as dd site or any alterations note that some comments below recipe add cream of tartare to egg whites and wonder if you did?
 
Today has been a good day
Breakfast was ham and cheese, coffee
Mid morning a herbal tea and 18g pork scratchings
Lunch - salad, prawns and mayonnaise
Coffee with cream
Dinner - bacon, mushrooms, 2 poached eggs, tomatoes followed by jelly and cream
2 squares of Lindt 90% chocolate

BG was 5.2 before evening meal will update with 2hr result
 
My mates and I went for an "Eat all you can, till you drop dead (gorgeous) Chinese Buffet" for birthday celebration.

I had about 6 full plates - absolutely delicious.

BG before dinner was 5.6
1 hour later: 8.7 (so much spike!)
2 hours later: 4.8

I should have had 10 full plates!
 
My mates and I went for an "Eat all you can, till you drop dead (gorgeous) Chinese Buffet" for birthday celebration.

I had about 6 full plates - absolutely delicious.

BG before dinner was 5.6
1 hour later: 8.7 (so much spike!)
2 hours later: 4.8

I should have had 10 full plates!

6! :wideyed: My stomach has shrunk since low carbing, I couldn’t manage that much now!

B: coconut porridge with raspberries and cream

L: smoked mackerel salad with avocado, boiled egg, rocket and ACV dressing.
Choc olive oil cake ( still going strong) warm with double thick cream.

D: roast belly pork with celeriac mash and buttery garlicy kale. Few strawberries and cream afterwards.

We are off to Iceland early Friday morning for 4 days ( another of the ongoing birthday celebrations) I don’t know whether to pack my glucose monitor. I doubt we’ll have much choice of what to eat and I think I might get a bit stressed if I end up having no option but a carby meal and resulting sugar spike. It might ruin the holiday.

Any thoughts if you’ve travelled since lchf?
I am on holiday at the beginning of a May, this will be my first holiday since diagnoses and am debating whether to take my monitor, like you I don’t to spoil my time away if my results are to my liking. So long as I stay away from desserts I think I should be relatively safe, we are going to Crete so should be able to make some fairly good choices about what to eat. Not so sure that my holiday in October will be so easy to manage, cruise, need I say more

But if you stick with the olives, feta cheese, avocado, pomegranate seeds, bar-b-q (without the sauce) and lots of fresh salad
(low glycemic veggies of course) - all should be well.

Mediterranean food is healthy, diabetic friendly and delicious!

Hi Andrew, as you say Mediterranean food tends to be good for us and I’ve travelled to many destinations and eaten well, of course I wasn’t diabetic then but even so I’m familiar with the food so am fairly confident.

I have always found that when I go away I don’t tend to put on any weight, never really understood why or gave it any thought but now since diagnoses it makes sense, when away on holiday I eat very low carb just didn’t know it, now I do and it makes perfect sense.
