What have you eaten today? (Low carb forum)

Evening everyone. I’m getting sorely tempted by all this talk of IPs. I really really dont need any more kitchen gadgets but.....
O, reason not the need! Our basest beggars
Are in the poorest thing superfluous.
Allow not nature more than nature needs,
Man’s life’s as cheap as beast’s . . . ;);)

B: 2 v thin slices of bacon. Fried egg and halloumi - bit of a shock here as I’d unknowingly picked up halloumi with chilli.

L: 2x G&Ts not the best or healthiest lunch but I’ve probably had worse.

D: Steak with parmentier celeriac - good call @maglil55 I’m glad I read through the posts before cooking. Great idea. Also had cheesy zucchini bake from alldayidreamaboutfood.com I probably wont do it again - tasted like a cheese omelette with watery courgettes. Not terrible but not brilliant either.
Coffee and cream and probably a bit of lemon drizzle cake in a few minutes
 
No roast today.

Ive had low carb cottage cheese wrapped in sliced ham. X4

Ive had a banana for cramps. (High in potassium)

Ive had a small handful of almonds and melted cheese on pepperoni from an oven pizza.

Little and often today. All low carb except banana.

No added sugar orange and pineapple squash.

No more fizzy diet lemonade in readiness for op.
 
The 8ltr is awesome.
I got it on Prime day. Wanted the 6 ltr but it was the 8ltr had the best offer.
It is the same footprint as the 6, but taller.

I have filled it a couple of times (Dragons Breath chilli and a mega stew. Oh, and there was a lamb shoulder and a beef rib that filled it too). The rest of the time it works just like a 6.

Can’t imagine just using it for stocks and stews @ianpspurs. My cooking is now all done in one of three ways. Oven/grill, IP or a chef’s pan. Simple.

My non stew/broth IP uses include soups, chilli, bolognese, pork ribs, beef ribs (WoW beer basted are next), oxtail, whole and part chickens, curries, coq au vin, hard boiled eggs, steamed salmon, lamb shoulders, breasts and mutton, braised red cabbage and new potatoes, cauliflower for mash (and endless variations of all of them). Of course, now i am eating meat almost exclusively, which limits veg options a bit.

Todays eating:
Bacon and egg (again)
Followed by buzzard bites and bloodberry pie.

I didn’t think things through properly with the bloodberry.
It is a fathead pastry pie crust filled with pureed raspberry and blueberries. The recipe bizarrely used pectin. Disaster. Will use jelly/gelatine next time. Very, very, very delicious. However, because it didn’t set (stupid pectin) i had to put each slice of crust and liquid filling into a individual dishes, ramekins and bowls, then refrigerate. So they need eating rapidly. Instead of me eating a single token slice and passing the rest to Mr B, now I have to eat half before they ‘age’ too much. Very enjoyable, but too many carbs! That amount of rasp and blueberries will twinge my tendons.

Next time, half the amount, gelatin, no crust and serve like jellies with cream in ramekins.
 
(Reminder that I'm just barely prediabetic and looking to reverse it, so I'm not as strict as some)

Brekkie - bit of a fail as I had cereal but a small bowl with blueberries. Hadn't done my overnight oats and really couldn't be ar**d

Anyhoo - mid morning handful of nuts while I waited for shopping delivery

Lunch - salad with chicken, cheese, sundried tomatoes. Sugar free jelly and a bit of halo top

Dinner - that's more like it. Daughter just back from holiday and desperate for chilli which she makes from scratch, so I know what's in it - I had mine with roasted butternut squash not rice. Chia chocolate pudding.

An IP gets more and more likely with each new post from @DCUKMod @maglil55 and @Brunneria

Early morning swim today which eventually left me ravenous and very sleepy. Should sleep well tonight.

Breakfast - none

Lunch - pan fried sea bass fillet with buttered and salted cabbage

Dinner - beef short rib followed by lazy dessert of extra thick Jersey cream mixed with almond butter and 2 squares of Alter Eco 85% chocolate (one of the US ones)
 
Hi all, the wind and rain arrived and stayed until about an hour ago. Very lazy day, partly due to the weather and also surfing the internet, needed to find flights and hotels for our holiday in Oct, thankfully found, booked and flights paid for.
No breakfast just a coffee with cream
Decided to make a dash for it and went to the local eatery for a cooked breakfast, I wanted eggs and bacon but couldn’t face cooking it today, other half needed comfort food after parting with a large sum of money!
D tuna steak, asparagus wrapped in bacon and cauliflower mash, this unfortunately got blitzed a little too long so ended up more of a purée, however it was tasty so I just poured it over the tuna, followed by 3 large strawberries and cream and a glass of red is now being sipped.

Cauliflower soup made for lunch tomorrow, the warm sunshine is not due to return to my little corner until Tuesday so the soup will be a nice change from salad.
 
Very attractive IP on amazon. I think I'll wait til new tiled kitchen is finished. By then silver may be dated.
Just bought new slicing, cutting and grinding machine so slow cooker will have to still do its job. Lamb is to die for from it. I must admit soft meat will be my future not roasted or grilled.
My dentist was pleased with my gums, they have improved since my last visit so soft meat must be helping. Maybe jelly in low sugar jam too which I put in low carb natural yoguarts I share with little one for calcium in his growing years and my premenopause.

Good evening all. A day of discoveries here whilst tidying and generally H and S checking premises for arrival of grandson and updates on travails of DIL in Soton. Amazing what I found!
7.30-9.20 3 pint mugs tea with almond milk
11.05 Vente filter coffee with whole milk, 2 tsps inulin and 1 tsp 3 x zero stevia ; theme for today is drink , don’t test and Let the wind carry me ( Kidding myself. I’d probably set targets for how far the wind should carry me and what was the most effective way to be carried) a smaller Starbucks Cambridge coffee with cream
14.15: Halloumi, chorizo and avocado salad ( spring onion; cucumber; radish; pea shoots; watercress; Lambs lettuce Mrs P has not procured rocket); with h/m LC raspberry vinaigrette dressing - forgot the parmesan shavings I was going to have!! 2 pints tea with almond milk
16.45 Tea with h/m almond milk
18.50 Sous vide lamb ribs ( small but dirt cheap so don’t care); roast fennel, mushrooms, tomatoes, our baby beetroot ( tomatoes and beetroot seem to give an amazing sauce/juice), courgette and our own elephant garlic (free); found 6 bottles of red I forgot about so a glass of wine; Gin and Lemon Cheshire cheese (didn't know we had that) Later a Calvados - found that as well (purely for medicinal purposes you understand and hopefully to celebrate the other new Miss P if not will just have to try the other bottle I found when she does appear.) .
No IP was used in the making of this food - except me! :angelic:

Hi all dreadful journey to mums this am with lots of rain and congestion on motorways- journey too was longer at three and a half hours but I’m here ! Lots of resistance exercise too this afternoon for the arms in the form of cleaning the carpets at mums with my very heavy carpet cleaner! She struggles spilling stuff so this is a regular job ! Combined with gutter cleaning, heavy kitchen cleaning etc - thank heavens I’m fitter due to lCHF!
Breakfast one sausage, slice bacon and egg
Late lunch celeriac and cabbage coleslaw and ham ( cooked ham in slow cooker yesterday)
Dinner chicken, green salad and more home made coleslaw also sharing bottle of white Chardonnay- LC lemon and lime mousse later!
Med appt for mum in am and sorting her packing and then home with mum - at least forecast more benign!

@shelley262 journey sounds dreadful and sympathy for cleaning. Hope mums medical appointment goes well and journey home is less fraught.

Lots of resistance exercise too this afternoon for the arms in the form of cleaning the carpets at mums with my very heavy carpet cleaner! She struggles spilling stuff so this is a regular job ! Combined with gutter cleaning, heavy kitchen cleaning etc - thank heavens I’m fitter due to lCHF!
Breakfast one sausage, slice bacon and egg
Late lunch celeriac and cabbage coleslaw and ham ( cooked ham in slow cooker yesterday)

This is 3 days food and BG readings, I’m sort of despondent because with such low carb intake and plenty of exercise every day I thought I’d be lower. I also worry that such a proteiny diet might have a downside

Can understand your concerns but what I see when looking at this is that your low carb eating is working in that g3nerally speaking your post two hour readings are not significantly higher than your pre meal readings. The general rule is to aim at no more than a rise of two two hours after a meal.
Issue is more that currently your pre meal readings are higher probably than you are aiming for however if you keep going all your numbers will come down. What was your hbaca1 on diagnosis and how long ago were you diagnosed? LCHF eating takes a while to produce results. I personally took months to take it down to a lower level.
You are doing great taking records, monitoring and counting carbs you will get there you’ll just need some patience to slowly move your figures downwards. Meanwhile aim is to keep the Post meal 2 hours later figure less than 2 above th3 pre dinner reading
Just a note too exercise can also put your bgs up on a temp basis but longer term exercise does help!

Hi @Geoffno6 welcome to this great part of the forum, you will find lots of support and motivation here, not to mention tips and food menu ideas.
I second the wise words of @shelley262 it takes a little while for your body to adjust but once it does you will see a drop in your readings and hopefully in weight, even if the scales don’t show a lower weight you may find clothes feeling less snug.
Keep doing what you are doing, make careful choices and enjoy the foods you choose, this way you will succeed.
Ask questions, we are all on this journey together, we all have ups and downs and question things occasionally but as I said you will find encouragement and support from many here on this thread, I wouldn’t be where I am now without the advice and friendship I have found here.

Hi @Geoffno6 no need for despondency - yes, I know its easy for me to say! What you don't know is what the levels would be without the diet and exercise regime you now have. The body seems to prefer everything staying steady and takes a while to adjust to change. As @shelley262 says, the rises are in a good range and exercise definitely lowers bg ultimately but immediately after vigorous exercise bg can rise. My personal guide is not to test for an hour after vigorous exercise.
