What have you eaten today? (Low carb forum)

Me again. Sorry for stream of posts. This one is answering the question in the thread title!

A day of experimentation. Two successes, one near miss.

Lunch - M&S Serrano ham and manchego cheese rollitos.

Afternoon snack - not very caramelised high fibre chocolate bar. @shelley262 I used your recipe (minus inulin and psyllium husks) and added in some chopped almonds and macadamias and 50ml double cream with the chocolate. Got 11 bars @1.6g carbs each. Brittle rather than chewy.

Dinner - pan fried salmon in garlic and lemon butter sauce and pointed spring cabbage followed by lemon zucchini cake with extra thick double cream. Zucchini cake was a smaller one and the best yet. Halved all ingredients except the lemon, which I kept constant. Salmon based on this recipe:

I made the zucchini cake tonight, I did exactly the same, halved all the ingredients and it made 8 mini loaf size cakes
 
Hatsoff to Mrs P hope they are worth the effort. I am sure she goes to these lengths to keep you healthy and its really nice she joins in. Thats the reason I dont eat till 8pm with my husband each day, he’s out of the house 13/14 hours and its nice for us to eat at the same time though different dishes mind! It doesnt help my FBG I’m sure but there is a semblance of normal life to be acknowledged.
It’s the same for me most nights, 2 meals but eaten later than most people as my partner is never home at a regular time or particularly early, I do agree it’s important for us to at least share this part of the day together.

Well done and well deserved!

I was reading through the success stories earlier, I hadn’t seen your ‘before’ photo - you look at least 20yrs younger now! Really fantastic!
 
They look great and brilliant that they only use inulin and chicory which is often what inulin is made from worth a punt I’d say

I’ve sent off for a box - just to keep me going until I can crack caramelgate bars.
I told myself not to do any more online shopping for a bit after this morning’s delivery- a pack of 8 bottles of vanilla extract. 8!! Just one bottle takes me a few years to get through. How did I not notice they came in packs of 8?
I’m bringing 7 up with me to the event in Birmingham - free to good homes.

I agree @jayney27 looks loads younger in her after photo it’s amazing isn’t it. I don’t even recognise myself in my before photo and sure you feel the same Jayney. Only a week now before we do the meet up in brum.

Hi all on this caramelgate day - you thought talk of trumps possible impeachment was exciting who knew!
Breakfast scrambled eggs and usual morning coffee with inulin
Lunch 5 seeded crispbreads- new batch these are lovely and thin (a bit of patience rolling) so only 0.25g of carb each with tin mackerel with olive oil followed by a chocolate caramelgate bar - delicious
Dinner 2 lamb loin chops with buttered cauliflower followed by one small clafoutis with Greek yoghurt

Chocolate caramelgate bar is a brilliant name!

Thank you, someone else said the same thing and people I know who I haven’t seen for a while get a bit of a shock now!

I’m bringing some of the high % cocoa chocolate from the US - swap you some for a bottle of vanilla extract?

Aww thank you, it’s surprising isn’t it to look at photographs of our former selves and not recognise ourselves, I obviously knew I’d lost weight but didn’t comprehend the difference until I saw the photos side by side.
I’ve explained to Deb that I won’t be at the meet up, when the date changed it clashed with a weekend away we had planned, I will however be with you all in spirit and will raise a glass on the day to celebrate all our hard work, dedication and successes.
 
The icing on a not very successful day - just gone into the kitchen to find daughter’s cat has got at the remaining chicken thigh I was saving for tomorrow’s lunch - I’d left it wrapped in foil, cooling on the kichen counter.
Roll on tomorrow.
 
Hi y'all. Can't even get close to expressing how much I miss everyone too.

Everything is fine, just very stressed with work. It will be another two weeks, then I can start enjoying the semester break, and you should see more of me on here.

As to lupin flour -- as far as I know they are some kind of bean. Most of the starch in it can't be digested - so, it is actually very low carb. It tastes good in bread and is way cheaper than almond flour. I use it in DD keto rolls and use about three quarter cups lupin flour and 2 quarter cups almond flour plus, of course, the other ingredients.

You can also buy whole lupin beans, also known as altramuces or tremocos in Spain and Portugal. I use them instead of chick peas to make hummus.
