What have you eaten today? (Low carb forum)

Excellent. I love ours and it's coming back into it's own s the weather cools.

I have a stupidly busy day today - partly work, partly a meeting that over-ran and partly just life getting in the way of everything, but having the ability to do a ginagerous vat of casserole in 20 minutes is a equally ginagerous bonus.

If you haven't used such a beast before, do try out a few things. The fluids issue can be a challenge, as the evaporation rates are exceedingly low, so getting used to putting in little enough liquid takes a bit of getting used to. Sauteing off some of the fluid can be useful, as can the odd sprinkling of psyllium husk.

You'll be a dab hand at converting recipes before you know it. Do you use anything like CopyMeThat to save all your recipes and tips in the same place?

I have never cooked so much in my life since being diagnosed, not complaining though I enjoy making things from scratch.
I did add a bit too much liquid to my first attempt tonight, and didn’t consider adding psyllium or chia seeds to thicken it, I just strained off some of the sauce, however I have blended what was left so I have soup for tomorrow.
I have been scouring the internet for suitable recipes and am looking forward to trying new things, I got used to my slow cooker but sometimes panicked about leaving it all day unattended when at work. I’m hoping this new machine will mean I can come home and get a lovely tasty meal prepped and cooked quickly.

Does your machine have an automated "Keep Warm" function that kicks in when pressure cooking finishes? I find that incredibly useful when I want to cook at a an apparently random time, then ignore it when done.

Of course, the psyllium husk can render the sauce/liquid a bit gloopy (I overdid it a tiny bit tonight, leading to MrB commenting that the sauce had a "curious texture"), but I'll simply not be quite so enthusiastic next time. :)

You'd be surprised by how many LC bloggers use the IP, so there's plenty out there. You simply have to try ribs.

Yes it has a keep warm function. I am keen to try ribs, this was one of the reasons for going for the pressure cooker, so many comments here about them. I did quite a bit of research and couldn’t quite justify the cost of the instant pot compared to the machine I’ve bought, as you say they are all very similar, as I wasn’t sure if I’d get on with it and considering I already have a multi cooker I decided to go for the slightly cheaper option.

I wanted a multi-cooker, but the swinger for me was the IP's stainless steel inner pot, so no non-stick coating to peel. ((Non-stick inner pots are available as an accessory from IP) Thanks, @Brunneria . :) That cut down my options somewhat, ending up with the IP on Black Friday. For once, timing played into my hands. That'll never happen again!

My multi cooker has a non stick inner pot so it’s great, no real washing up to do.
 
Hi all in no way am I masterchef lol but I made something for dinner today which was really tasty and it is simple...

It tasted lovely, spinach, carrots and chopped gammon mixed and then sprinkled with rock salt sparingly. It tasted lovely, doesn't look it too much :D

My blood sugars today have been 5.3 and 5.7, 3 hours after eating a small amount of oats for breakfast, so hopefully this no carb meal will keep it there
 
Not eaten so far but wanted to post a kind of thank you. Just bottled some stock made in the IP so thanks all who put us on to that. It is the best we have made using very cheap meaty bones for a well known supermarket beginning with M. The bones still have enough meat for a meal - amazing value.
For jars especial thanks to @maglil55 (supergran?) for the link to the freezer jars form Trumpland. Not quite forum info but the lacto fermenting veggies I just burped smell amazing.

I have a massive amount of catching up to do. Been doing a lot of running about but boys are on a 4 day holiday from scho, in laws off to Spain for a few days break, and brother drove me to visit sister yesterday to give me a rest from driving.
@DJC3 - great review and glad you got to Cornwall. That looked a horrible accident on the M5.
@Tori71 - happy anniversary and enjoy Liverpool. We're off there in a few weeks to see the Terracotta Warrior Exhibition. I do like Liverpool - loads to do.
Had the boys for a couple of hours thus morning then decided to get shopping out of the way so I don't knock out my entire weekend.

Tuesday - Bed 6.3 FBG 6.2. Still lingering Tia Maria I reckon but not going too high thankfully.

B. Couple of rashers of back bacon and a fried egg. Tassimo Americano grande with a dash of cream.
L. Nothing
D. Thanks to @Brunneria my venison was minced and became a venison cheese "burglar". Venison, cheddar , parsley, egg to bind, lettuce, tomato, 1/2 avocado, Helmanns, mushrooms and mustard.
An Adonis bar later.

Wednesday - Bed 5.7 FBG 5.9 so getting more normal again.

B. Slice of Tesco high protein bread with 2 rashers streaky crispy bacon and a cheese slice melted on top. Tassimo Americano grande with a dash of cream.
L. Nothing
D. IP into action - chicken breasts done with broccoli, cauliflower, mushroom, green beans in a sauce of stock, mustard and the monk fruit maple syrup served with oomi noodles.
Breyers choc ice with 6 raspberries.

Squeezed in an Aqua Fit class and the gym today as well.

Thursday - Bed 6.1 FBG 5.8

B. Stuck with the Tesco high protein bread with just a slice of melted Cheddar Tassimo Americano grande with a dash of cream.
L. Quick lunch before heading off with brother to visit sister. Had some M&S stuff in the fridge - the paprika Honduran prawns, mozzarella pearls, anchovies and the tuna with red onion and a few of the beans.
D. Had to get back and feed the boys after school and didn't know what I wanted once I got them home. Ended up with 2 of M&S 97% pork chipolatos, fried egg, 2 rashers back bacon and a mushroom.
Had a Breyers choc ice later with 6 raspberries.

That's enough for now I reckon!

How far away does your sister live? I’m glad you’re managing to get over there so often. I hope things are working out reasonably well with the new nursing schedules.
 
Hi all.

Following in @ziggy_w s footsteps today with a bit of fasting after a period of indulgence.

Not quite an OMAD day, but almost.

Mid-afternoon snack, piece of lemon zucchini cake.

Dinner - ribeye steak with garlic butter followed by lazy dessert of extra thick double cream mixed with almond butter.

Vast quantities (although perhaps not by @ianpspurs standards) of Hotel Chocolat cacao breakfast tea with double cream throughout the day.

How far away does your sister live? I’m glad you’re managing to get over there so often. I hope things are working out reasonably well with the new nursing schedules.
It's a 2 hour round trip. It's the traffic though that makes it that long and that's timing it to avoid the rush hours. If I miss the slots you can easily add another 45 mins onto the one way trip.

The Tia Maria is far from empty but I'm resisting it. My other big failing is Baileys but that does go off if you leave it too long. I remember a Chinese friend telling me a good way to clear the head if you have a cold is 50/50 Baileys and Drambuie and give it a quick blast in the microwave. You didn't want it boiling - just pleasantly hot. Boy did it clear the nasal passages! Goodness knows what the sugar count is though.

The nurses are working out grand now. She's still slightly jaundiced but it doesn't look any worse than it was. The hospital bed has helped a lot as well.

I managed to sort out some more before photos for my mag article - it’s a problem for many I think who were bigger as we tended to hide away from the camera and instead take the photos of everyone else! Managed to find some I scanned in including one of me in a pumpkin field where I think I look like a pumpkin too! Never thought that at the time but do now! Also did long hike this morning as working tomorrow morning so will be sat at pc for a few hours before cooking and preps for trip to mums on Sunday.
Breakfast one each of bacon rasher, egg and mushroom
Lunch hummus with celery, two home grown purple tomatoes and a bit of Stilton with four LC seeded crispbreads
Dinner pork ribs served on bed of cauli mash followed by SF jelly with cream and yoghurt.

Know what you mean. Came across an old pic of me at Eurodisney from many winters ago - sure the padded coat didn’t help, but look like a weeble!

I think you are right about the photo situation, I struggled to find before pic for our inspirational stories, it’s not until you see a before pic that you can truly recognise the difference.
 
Not the day the weather forecasters promised but not a disaster. I really need forgiveness today for 2 things really. Firstly, I have let Mrs P sit in a travel agents getting quotes for holidays then researching other options online. I don't really have any intention of wasting money and time on a holiday:arghh: Secondly, I bought a very vivid pink Supedry jumper - hugely reduced but still a bit labelish for a geriatric:***: Karma will get me as today was another low carb one so another 4 O'Clock start beckons tomorrow:arghh::arghh:
Menu:
Wakey Wakey: 3 pints tea with almond milk - very restrained
Brunch: Cup of tea in travel agents - I only promised Mrs P we would look
Mid morning snack: 2nd day running not having this
Lunch 14.30: Meat from 2 of the meaty bones used for stock the other day; big salad with olive oil, acv, dijon and psyllium husk powder dressing; lots of chia seeds for topping; filter coffee with mix of almond milk and cream
Afternoon snack: None
Evening meal 18.45: Salmon; broccoli rice and h/m pesto (first time ever made); mushrooms; Tea

Evening everyone, I’m feeling much better than I did this morning, the headache didn’t last long, thankfully and the sore throat didn’t come to anything.
Coffee with cream when I woke
Partner made me a cheese omelette for breakfast, I think he thought I was coming down with something sinister :joyful:
L was salad with cheese and ham
Snack of a latte and portion of choc olive oil cake with blob of cream
D wafer thin chicken, chorizo crisps, mozzarella, tomato, peppers and cucumber

Should explain - my mother used to call her home made squished together beef mince ‘burglars’ to entertain myself and my sister. I am absolutely amazed that 40 yrs later I made that typo on here. Very nostalgic. And of course I will now be typing it deliberately for ever onwards. :D Thank you @Goonergal and @maglil55 , otherwise I would never have even noticed my own typo! Lol

Today was a fishy day.
B: Brussels pate on a single GF cracker (4g carbs)
L: tinned salmon and helmans with a sprinkle of chili oil
D: prawn cocktail (still in love with this!) and a single heck sausage.

Also accidentally ate half a bar of lindt lindor orange! The horror! Not quite sure how it happened, but now I have to eat the other half tomorrow. More horror! Good job my Libre sensor ran out, isn’t it?
