What have you eaten today? (Low carb forum)

Evening all

Celebrated third wedding anniversary by showing restraint and not going out for a meal! Off to Liverpool for the weekend so will probably make up for it then. Over to the food bit.

Breakfast - Hi-lo toast and butter
Lunch - Morrisons salmon roulade, olives and flaxseed crispbreads. Strawberries and cream
Dinner - Asparagus wrapped in serrano ham with two poached eggs. Slice of Nigella chocolate olive cake.
Snacks - Almonds

The latest in my personal series of 'DIY Nutella' - this is the fastest version (I am 'low-carbing' in order to prevent my pre-diabetes ever becoming diabetes)

All I did was add 2 tsp (2g carb per tsp) of 'sweet freedom' chocolate spread to my customary peanut butter and give it a brisk stir. Simples! Not Nutella (obviously) but I'm keeping an eye on sugar and carbs and it'll do for me!

As an ex-Nutella nut case, it was one of the things I missed when I was diagnosed. I also have my own version now consisting of Meridian Hazelnut Butter, Green & Black Cocoa, Natvia icing "sugar"and a few drops of hazelnut oil if the mix is a bit too stiff. It doesn't actually taste much like real Nutella but it does fit the bill very nicely.:hungry::hungry:

And what I ate today - just one meal this evening:
100% beef burger with a LivLife "dip butty", melted appelwood cheese, and a few fried baby courgettes and cherry tomatoes. Followed by a rather hard nectarine which I chopped, sprinkled with cinnamon and Sukrin gold, topped with butter and ground almonds and zapped in the microwave. Turmeric tea for my drink, otherwise about a litre of water, and one coffee with cream and truvia midday..

And just for fun and out of idle curiosity since my glucose levels are generally high and often all over place at the moment due to oedema again - I did an extra dinner time test and saw some nice figures: pre meal 6.5, 1 hour post 6.6, 2 hours post 6.8... So almost flat as the proverbial pancake which made me a rather happy low carb bunny.

Evening everyone. I’m off on the long drive back to Cornwall tomorrow morning and as usual left all the washing and packing until the last minute so Ive only just got sorted.

B: 90 sec microwave bread ( snap @jayney27) toast with marmite, scrambled egg and mushrooms. Coffee and cream.

L: Another lovely thing from Waitrose - a Crab Pot a bit like potted shrimps with the butter on top. Seedy crackers and a few walnuts with it and Greek yoghurt with choc granola afterwards.

Early evening: coffee at Pret. They don’t always have cream so I had a brainwave and took my own in a single serving portion in an empty glucose test strip pot! I always thought they were too good to throw away. (Wouldnt advise this on a hot day obviously but I was only walking 10mins down the road so it was fine.)

D: Poached salmon fillet with a spoonful of M&S prawn cocktail and a green salad. Followed by a whole bar of Moser Roth ( from Aldi) 85% chocolate - they are only small.

@Tori71 happy 3rd Anniversary, glad you had a celebratory bit of cake even though you didn’t go out.

@ziggy_w I hope your fast today helps your bgs
 
Not eaten so far but wanted to post a kind of thank you. Just bottled some stock made in the IP so thanks all who put us on to that. It is the best we have made using very cheap meaty bones for a well known supermarket beginning with M. The bones still have enough meat for a meal - amazing value.
For jars especial thanks to @maglil55 (supergran?) for the link to the freezer jars form Trumpland. Not quite forum info but the lacto fermenting veggies I just burped smell amazing.

Can I just ask what the recipe you use for the 90 second bread is? I found one online and tried it but it was ... well ... let's say 'not very nice' ! I think it was the baking powder I could taste so strongly.

Once again, I am losing track of when I last posted on here.
Did I mention the lo-dough pizza? That was v nice. And so easy.
Also bacon and egg yesterday morning. Lovely buttery scram eggs.
Then yesterday I was out and about, and landed at a carvery type place for refueling. Had a mixed grill, since everything else seemed too carby or processed. Good choice. I am learning that mixed grills are usually a good choice! hahaha!

Going to try eating 3 meals a day for a while - the old story of needing to eat after taking medication. So this morning was Brussels Pate on a single GF cracker. Lunch will be chicken legs in a DIY lime and garlic rub (see if I can keep bg level, unlike that horrible sweet Nandos rub last time!), and this evening... well... that hasn't even been thought of - yet.

Morning @SamJB, I've tried the Lo-dough and ordered a sample pack of two which is great if you don't wabt to commit to a large order. Used them in a couple of wraps straight from the packet and as long as you are not expecting traditional 'wrap' consistancy, (which none of us are on this site)! they are good. I've not used them in quiches or pies but I know a lot of the site members have.

Its expensive, and i think it is over-hyped for things like sandwiches and wraps, but it will give you a fair pizza in 7 mins, and quiche is great with l-d as the crust. Worth trying as an experiment, I would say. :D
 
Quick question to anyone out there. W-rose website gives carbs in rhubarb as 0.8 per 100 gms. I know it is technically a vegetable so am inclined to believe it BUT does anyone have an authoritative source which contradicts that value? TIA

B. Mashed avocado and chopped cherry tomatoes with lime juice and chilli on HiLo toast. Black tea, black coffee.
5 mile walk.
L in cafe. Small slice salmon quiche with salad of kale, pear and sunflower seeds. More black coffee. Still hungry when I got home so small pot of fruit salad in natural juice with Greek yoghurt.
Snack. Far too many mixed nuts
D. Halloumi, courgette and pepper kebabs, stir fried vege.
Am currently eating the 27th yellow courgette. Four more just about ready and 3 tiny ones on the way. Is this a record?
