Thanks for the membrane tip I’ll have a look before cooking. What happens if you leave it on?
Well, the membrane is a non-flexible, sinuous membrane. If not removed the ribs, if cooked as a rack the membrrane will shrinks, making the rack sort of curl, but also not be as tender or easy to eat.
If I have forgotten to remove it before I freeze the rack, I will almost always (unless time absolutely prohibits it) defrost the ribs before cooking, whereas if I remove it as soon as I get home, then season and freeze the rack, I'll happily put them in the cauldron frozen and let the magic happen from there.
Your butcher may remove it as a standard practise. Ours doesn't, but usually asks if I'd like it done. I went through a phase of asking him to leave it so that I could practise to get more confident doing it.
The membrane left on isn't a show stopper. I just find it much better to remove it.
Enjoy your ribs. I have a small rack in the freezer, and my OH is out at a dinner tomorrow evening, so I may just indulge myself.
