What have you eaten today? (Low carb forum)

@maglil55 I didn’t have an IP when you first started posting about your creme brulee but I’m an addict now, which recipe do you use? Also could you repost your monkfruit supplier please?

@jayney27 sounds like it was a good day and worth the brief oopage.

Monk fruit is from my diet shop. Brand is Lakanto. Golden Classic is the one I use most. Their pretendy maple syrup is good too.

Inulin makes a very real topping - and you get the real creme brulee crack with it.

What a grotty day weatherwise! Walked 1.5 miles to the PO depot to pick up a parcel, rather than driving, good exercise I thought, but it started hammering it down by the time I came out so got completely drenched on the way home.

B: smoked salmon, scrambled egg, 1/2 avocado
L: Pot of M&S prawn and Orkney crab cocktail ( which is delicious and only 2g carb for the whole pot) 1/2 avocado.

Late dinner today so MAS of pack of pork scratchings

Today is middle daughter’s birthday - she’s the one still living at home, and luckily is eating low carb too. She was working til 8pm so late birthday tea of her choice: roast lamb, celeriac dauphinoise and cavolo nero. I made her a lemon drizzle birthday cake ( and added a few candles on top - not 28 of them)

@ziggy_w I’m glad you feel better after a good night’s sleep

@shelley262 I love egg custard, Ive not done any desserts in my IP yet ( but have sent off for some IP yoghurt pots which were on special offer on Amazon, looking forward to trying that) where did you get the recipe?

Just spotted this one carbs seem to be much lower than others I’ve seen - think 1.8 per 100g if I’m reading label right. Maybe chocolate egg custards ?

is it super low carb? I use Lidl which is quite low (8.7g carbs/100g)
It is in a jar so I don't have the nutritional values. My fitness says it is 13g total carbs, dietry fibre 28g(?)
The amount you would use for a mug of chocolate is pretty negligible (I think). Dutch refers to the extraction process, it is supposed to be superior to the usual stuff.

How long did you cook the egg custards for in the little pots? I’ve just ordered some of them as planning on yoghurt this week but like ideaof small egg custards too! I meant to say used some of the vanilla extract youkindly gave me in the custards. I love the custards and so easy to make.

I used 1/2 quantity which was just right for the 5 pots, and cooked for 4 mins.

I wasn’t sure if I should cook with the lids on so I made little foil hats for them and pierced a venting hole. The lids aren’t tight though so I think I’ll try with them on next time.

They look set to become a family favourite, and as you say, so simple. Glad the vanilla was useful!

Thank you - I remember your experiments to get the perfect cracking top.

@DJC3 What have I missed with the vanilla extract - is there a special LC one? I adore vanilla

No, nothing special about it. I ordered it from Amazon when I was a bit tired ( thats my excuse) and didn’t notice it came in a pack of 8!
I took the surplus to Birmingham for anyone who wanted some, as it would take 100 yrs to get through 8 bottles of the stuff.

All you IPers @DCUKMod @DJC3 @ianpspurs @shelley262 @maglil55 @Brunneria (hope I haven’t missed anyone), this pic came up on my Facebook feed.

I must admit, I have stopped accumulating recipe books these days. There are so many food bloggers and sites out there for every sort of cooking method and way of eating, I just consult Dr Google, the link into CopyMeThat. My CopyMeThat account is a real mish-mash, so I make sure I tag recipes really well or it becomes a car crash!

Thanks, it looks impressive, but 19.5g carbs/100g is much higher than the Lidl brand. I wonder why?
Does seem high and the Dutch process one seems too good to be true low. I only use 10 gms in a big mug of hot chocolate and no spikes yet. Anyone actually drunk the Dutch process one?

CopyMeThat is brilliant isn’t it? Probably my favourite app. I’m having to refine my tagging protocol as I didn’t realise at the beginning how much I’d use it.

Hope everyone had a good Monday. I got my dentists appt over first thing - 2 old fillings needed replacing. Pleased all done and dusted. Also went in to medical centre and got appt for the dreaded hbaca1 blood draw and my flu jab ( walk in cancelled as no vaccine left) all booked for a week on Thursday (18th) so it’s countdown time again! Que sera sera!
Breakfast eggy lodough bread, bacon and egg
Lunch soup
Dinner beef curry followed by my LC ‘trifle’ with SF jelly, egg custard and cream also just had coffee with one square of 90% choc.

As it is time for the centuries old Michaelmas Fair in our local town I finally had to concede it was autumn. This meant I trimmed hedges and cleared the ditch - very exciting. What that did do was keep me busy and take my mind off a disappointing fbg. Doesn't mean the lesson will sink in:arghh:
Breakfast: Tea
Docky (very local dialect) : Soya and cream latte (https://www.cam.ac.uk/museums-and-collections/collaborative-projects/my-museum-favourite/docky-bag) Neither lunch nor elevenses hereabouts
Lunch : Salad with Mackerel in olive oil and avocado
Mid Afternoon: Mango sugar free hokey cokey cola
Evening meal: Leftover cottage pie (celeriac topping); nibbled some turkey and piece of cheddar;Tea
Fair time starts the countdown to Christmas in this area - legend has it it is the time to make your mincemeat

Breakfast - wholemeal toast, butter and marmite

Lunch - paté and celery ... sounds a bit odd but quite nice to fill the celery up and use as a scoop. Chocolate chia pudding, coconut cream and blueberries

Snacking on walnuts

Dinner - steak, broccoli and carbonara sauce (home made by daughter who has hers with pasta - just bacon, onion, mushrooms, garlic and chicken stock with soft cheese to thicken it)

Halo Top - new flavour (candy bar) very nice, like snickers (or marathon depending on your age ) and SF jelly
