That looks doable - doesn't mention keto or IP anywhere. Pity I didn't see it before I fed the chickens and compost heap most of the pears from both trees. I did take bites from some along the way and they seemed exceptionally sweet this year. Think we do have some we bottled last year.
Cakes/desserts on this site tend to be adapted. I've made the Black Forest one a few times and the carbaholics don't even know it is any different to any other Black Forest Gateaux. The kirsch helps with that I must admit.

I sort of happened upon it when looking for banana bread to use up a couple of over-ripe bananas MrB hadn't got around to munching.

He now has a stash of banana bread muffins - muffins because they're easy to defrost in single portions.
I would just vary the recipe I use. I'd still poach the whole pears in the same mix with cinnamon and star anise as it gives it a Christmassy feel. I seem to recall you crystallize your own ginger? If not this is a bit labour intensive but gives you ginger and a syrup.

Any granulated sweetener does the trick. I'd use the chocolate cake mix from the recipe on diabetic good baking but add either some of the blitzed candied ginger or use some of the syrup to taste. Personally I'd put blitzed candied ginger in it and use the syrup to make s cream cheese 'icing' to drizzle on top. As I said that cake recipe makes a dense cake so I'd still be inclined to lighten it by whisking the whites and adding at the end but cook in a loaf tin.
The pears poached in red wine with granulated sweetener and cinnamon would work well too.

The mix for cream cheese icing is 100g full fat cream cheese, 125 ml natural unsweetened yoghurt (I use greek) and a tablespoon of sweetener. Add whatever flavouring you want after you've beaten them together. If you want less just drop the quantities but keep the ratios.

Wow. I can see the attraction and labour here. I can't stand ginger or the whole frosting idea but totally respect the thought and effort.(Our boys would say, "that's some weird sh*t right there") Star Anise, cinnamon and cloves are definitely Christmassy - need to revisit the Hemsley babes ideas methinks.

Bed 3.7 FBG 4.3. Was going to eat something around 5am as I felt 'off' and when I tested my BGs were 2.7. Had a drink of water, moved about and they came up again. I was going to have a very strict DD week but decided I'd better eat a breakfast as BGs were dropping again.
B. 3 Tesco GF pork chipolatos, 4 Santini tomatoes, 1 mushrooms, 4 rashers crispy streaky bacon, 1 fried egg. Tassimo Americano grande with a dash of cream. That should do the trick!
L. Nothing
D. Leftover roast chicken, celeriac dauphinoise and tenderstem broccoli. Wilted spinach.

Will see how BGs go today as there is always Halo Top and Grenade Bars!

Goodness @maglil55 you’re on a bit of a rollercoaster with those bgs recently!

Tell me about it! I'm back in the 4's again which is fine but I don't like 2's. I'll just keep an eye on things but if this keeps up another medication review might be needed.
I can't see what's causing though. Usually I'm analysing unexplained rises not weird falls.

I didn’t realise it was possible to get as low as 2s without meds. Must have felt horrible.
Just when things were starting to get a bit calmer on the home front too.

If I go into the lower 2s, I'm just generally very hungry and circling the cooker (if dinner is on the go).

I was just exhausted and could barely stay awake. Hubby was not happy but I pointed out I eat enough so just a case of working out what is going on (although I admit I have no idea)

I am on meds but they had to half the dosage as I gradually lost weight and I've lost another 1 st since then. I've not really been paying much attention other than tracking my BGs with everything that's been going on in my life but maybe it's time to start paying a bit more attention.

@maglil55 looks like it’s look after yourself time! Do take care- you are very busy and have experienced lots of losses and stresses all of which have an impact on your health.
I’ve been starving hungry all day today and felt cold despite lots of hot drinks. Trying to sort out lots of stuff as will need to go back up to York’s soon for pre operative assessment for mum - consultant said in a week or so but waiting date.
Breakfast bacon, sausage and egg
Lunch slice of smoked trout bit of Stilton and handful of nuts
Dinner roast chicken, halloumi fries and cauliflower cheese about to have coffee and piece of chocolate.

Breakfast - Hi-lo toast and butter
Lunch - Avocado, bacon strips, M & S Hickory chicken drumsticks, cucumber, tomatoes, olives. Strawberries and cream.
Dinner - Turkey with homemade mushroom and leek sauce, carrots, green beans and oven roasted sprouts with pancetta.
Snacks - Smoked almonds, Montezumas Black Forest 100% chocolate.

Better than yesterday!

I assume we're talking about the chocolate pear cake? Yes it has been low carbed.

I used 85% chocolate. Also they're correct that it is a very dense cake so I used my normal trick of separating the eggs, whisking the whites to stiff peaks and folding the whites in carefully at The end to get some lightness into it.

I've also made a chocolate topping for it before with melted 85% , some cream to loosen it and a hint of mint.

That web site also has the fabby Black Forest Gateax which I adjust as well by soaking the black cherries in kirsch and dark chocolate decoration and I use the whisked sponge method as always. Also there's a really good chocolate and coconut cake.
This looks great! Do you know if using Erythritol instead of Xylitol in the same quantity will work please?

Seem to have devised a new low carb way of eating - the 3 cs: carnivore, chocolate and cream. Need to reduce the middle element.

Lunch today started out as smoked salmon and cream cheese and ended up including M&S Serrano ham and manchego cheese rollitos and a bag of their pork crackling.

Then too much Coop 85% chocolate on the way to my physio appointment.

Dinner has been abandoned as no longer hungry.

Evening everyone, busy Monday arranging hotels for work trips next week and completing assessments today, the day flew by, just getting ready to go for my monthly pamper, can’t wait.
@maglil55 and @shelley262 please take care and try to find some time to catch your breaths.
Coffee with cream on waking no breakfast as I wasn’t hungry but as usual BG continued to rise until I ate something late morning! I had a small pack of pork scratchings and then quickly followed with my lunch which was homemade cauliflower soup
Late afternoon I had half a PhD bar
D pigs in blankets, celeriac chips and mushrooms with a dollop of mayo

Interesting reading @shelley262 and @maglil55 trying to manage their own care alongside wider family responsibilities. MIL came out of hospital this afternoon and is with us - basically needs 2 of us to lift her from loo etc. Julie finally went to doctor and has been given antibiotics - that is 3 out of 3 times her mum has been in hospital. I had an OMAD day and would have been less hungry had I not eaten the meal:arghh:
Breakfast: - Lots of tea - Needs a serious rethink of IF/No breaky routine - alarming numbers coming up ( 5.5ish is alarming - especially for starving)
Dockey : Waitrose americano with soya cream
Lunch : Nothing MIL arrived and appetite strangely vanished
Mid Afternoon: Tea - just to mix it up a bit; dog walk; tea - found out I am going to be a grandfather again; facetimed huge Soton granddaughter - in yr old clothes at 3 months - very, very long
Evening meal: Belly pork, celeriac and cauliflower mash, sprouts, wind - rude not to give guests a present

I’m nearly at the end of my week of 30hr fasts, thank heavens. I’m going to have to find a compromise.

3 coffees with cream and a few teas with almond milk throughout the day.

Luckily I was busy - taking stuff to the dump and several trips to the charity shop in my trusty shopping trolley ( no parking so had to lug it all) - good exercise.

D: turned out to be IP chicken korma as the chicken portions hadn’t defrosted enough. ( intended to have aDD recipe) Cauli rice and spinach with it, then IP custard with some garden raspberries I found in the freezer.

@Goonergal you were doing well with cutting down on the chocolate - has it started creeping up again? You have my sympathies.
@shelley262 you have a pretty manic schedule these days, hope you’re still finding time for your meditation

Off back to Cornwall tomorrow for a couple of months. Not looking forward to the drive.

Cor those grandchildren will keep you busy for several years ahead!
Look after yourselves both of you and hope that you are lifting MIL in right way - watch those backs of yours.
Main issue re my mum tbh is the distance we live away from her - it is more of a time pressure balancing the responsibilities and like you best way to manage post operative is probably staying with us if it’s practical.
Hope mobility returns for your MIL soon and that the antibiotics help Julie get better too.

Chocolate creeping back - easier to have none than try and be moderate, I think. Problem is the shops not stocking smaller bars alongside my inability to consume only a reasonable portion! Need a couple of weeks of self control to reduce desire for it in the first place.
