What have you eaten today? (Low carb forum)

Hi all hope you had a good day I worked all day and stuck at it but think should have taken time out for a walk as feeling lack of it this evening!
Breakfast one sausage and fried egg
Lunch one slice Hilo bread with pate, a few nuts and cheese followed by two squares of 81% choc
Mid pm got bored with work and tempted by one more square of choc how did that happen!
Dinner steak, mushroom sauce, celeriac chips and glass red wine followed by low carb raspberry pudding and spoonful of fage yoghurt.
Need not to buy any more of the 81% variety of choc!

Our last night in our weekend cottage. The weather has been amazing - no good for jumpers or storm watching but sunny and crisp and perfect for walks.

B: DD breakfast sandwich very early before the clan stirred large pot of tea with almond milk then 2 mugs coffee&cream

L: At hotel, starter of duck liver parfait with Little Gem lettuce leaves instead of toast. Then roast beef with mashed swede, broccoli and cauliflower cheese and buttered cabbage. I had a large dollop of the blandest horseradish I’ve ever encountered and had eaten most of it before it dawned on us that it was actually the bread sauce for the roast chicken one person had! That, and the cauli cheese put bgs up more than I’d like but not for too long. Also had a preprandial gin&soda and 1 glass red with the meal.

Latish supper to use up all the bacon, sausages and eggs we’d brought. 1 glass champagne

You have just reminded me of how much I loved and miss bread sauce :arghh:
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: roast chicken, one small roast potato, mixed veg and gravy thickened with milled flax seed, followed by SF jelly, cream and LC chocolate granola.
Mid afternoon: raspberry chia pudding and black coffee.
Tea at ILs: cold meat, cheese and salad buffet followed by one Jaffa cake.
 
Hi all funny day today good news and bad news
Bad news from mums apps diagnosis of glaucoma with possible blindness in about 15 years but - as mum joked to consultant- did he realise she’d be 103 then! Also two cataract ops on agenda one of which may be to quote same consultant be a “Christmas pressie” lots more caring lies ahead i think!
On the good news front we had mums hbaca1 results at her diabetic assessment at drs this afternoon and her hbaca1 had gone down to 35 from 55 - I’m thrilled for her. She said that she should share it with others that her hbaca1 could go down to normal and also that her kidneys haven’t deteriorated any more because she has being low carbing - moderately- she’s also lost a stone over last year all from her middle @Debandez sure you’d be interested that she wants to shout it from the rooftops that it’s never too late to discover low carbing - she’ll happily be on the tv am sofa with you!

Dinner beef stew, turnip mash, buttered cabbage and last of lc trifle
On to Lincs mid morning tomorrow and our air B and B I’m cooking for everyone at our self catering place.

What a difference the changes you helped introduce to you mum's diet have made. Small changes. Incredible result! She has taken everything on board. What a star. She can take centre stage on this morning :-) we will get there.waitijg both the PR team to confirm next step but they seem so busy. We may have to just go for it ourselves! Your mum at the helm :-)

Re the bad news, 15 years is a long time and hopefully lots of advances in treatments in that time. Imminent cataract op too. That will really help her. She must be struggling now needing both eyes doing. You have your work cut out. Your booking at airbnb would appear to be excellent timing. Have a lovely break.

Wish I were having a break soon! This is a report of things from three weeks ago! Up to mums again two weeks today as pre-operative assessment on the 10th of December.

Oh I am stupid. I have been catching up on the forum tonight and saw my tag. I didn't look at the timing. Apologies @shelley262 I thought your mum had had another appointment. Have you got a date for her first op?

@Goonergal -- The cheesy bread looks awesome. I agree with everyone here, have to also give it a try soon.

Yesterday ...

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: A small bowl of mushroom-zucchini-cream soup. Half a DD flatbread with mayonnaise, avocado and shrimps. A very small slice of low-carb carrot cake. A glass of red wine.

Dinner: A DD flatbread with chicken liver pate, a Greek yoghurt with lemon juice, erythritol and raspberries.
 
This is not what I have eaten but it's the something I plan to make. Just seen an episode of Secret Eats with Adam Richman. He had a pizza style steak at one place. Grilled steak acting as the base of a pizza with tomatoes, herbs, whatever you fancy and cheese on top. It looked fantastic, has anyone tried it?

No, no, no Violet, do not 'waste' a good steak, steaks need no additions!!!:)

The annoying thing for me is that I’ve never really liked it! I was very self controlled and refused the home made bread they came round with at the start of the meal - I would much rather have had that than waste carbs on bread sauce. I did wonder why the ‘horseradish’ was served warm though! Lol.
 
@shelley262 that is wonderful news about your mum’s hbA1c. You must both be over the moon.
The cataract op will make a huge difference to her vision, I hope she can get it out of the way before Christmas.
 
Breakfast: little bowl of ground almonds with erythritol, cinnamon, and walnut pieces, mixed up with melted butter - sort of porridge or semi muffin?? Hazelnut decaf with slightly elderly cream and Trivia ( ETA a bl**dy minded cheap keyboard combined with a wonky hand create havoc with my typing , but this blooper gave me a much needed laugh...)

Lunch - a different flavour tuna infusions pot (lemon & thyme), little gem lettuce, slightly sad mini cucumbers, some black olives and a bit of Hellmans, washed down with a mug of chicken stock cube "soup". Salted caramel Halo Top with roasted pecans and Sukrin gold syrup. Mint tea.

Dinner second half of my modified Diet Doctor recipe for Asian cabbage and mince with a bit more soured cream on it tonight; it tasted a bit better this time round presumably with flavours having been given time to sit and "blend" - I wasn't too enamoured with it yesterday :grumpy:; ginger & orange rhubarb with creme fraiche; cinnamon tea.

Lime flavoured water, and surprisingly very little (only 2 pieces!) Lindt 85% choc.

I don't know whether I want to eat or not at the moment - I'm hungry if I don't and feel a bit queasy if I have...

I always loved it, could devour quite a big helping too, oh those were the days lol
 
Evening all!

Breakfast - Hilo toast and butter
Lunch - Bresaola, applewood cheese, cucumber, cherry tomatoes, olives. Strawberries and thick cream.
Dinner - Turkey, sprouts, carrots, two aunt bessies yorkshires, gravy
Snacks - Montezuma's black forest gateaux chocolate and smoked almonds.

No longer make my own Yorkshires (despite being Yorkshire born and bread) as with the pre made ones I can count the carbs into my allowance. Just as well as they always came out gigantic!!

Evening all. Back to 2 meals today.

Lunch was another piece of the cheesy bread smothered with butter and 3 rashers of streaky bacon. It did go well with the bacon. Felt the need for a little something else so had a piece (about 30g) of the Hotel Chocolat 65% supermilk with hazelnuts and a spoon of extra thick double cream.

Dinner was a brined chicken leg followed by 5 of the chocolate hazelnuts and some more extra thick double cream.

Still feeling a bit peckish so might have to find something else to nibble on.
 
Evening all. I’m getting this post done while I can still feel my fingers - got home from fantastic weekend break to find heating is on the blink. Its very cold in my sitting room.

Breakfast - treated ourselves to posh hotel breakfast. A little plate of Smoked salmon, mackerel and whipped cream cheese first, then poached eggs, bacon, sausage and mushrooms. Lots of coffee and cream.
Completely stuffed afterwards but really happy I eat low carb now otherwise I know I’d have squeezed in a Danish or toast and marmalade, then regretted it.

No lunch but more coffee

Probably wont eat dinner either but have nibbled on some walnuts and a CCB since I’ve been in.

It’s a hot toddy I need!
