What have you eaten today? (Low carb forum)

Whilst on the topic of strange foods from far off lands my wife has often eaten chickens feet, grilled. I was in an Asian store recently where they were selling them by the bag full. I think they just snack on the remaining meat on the bone. I will have to check with her.

I am guessing they are tastier than I might imagine. But would need to leave out the sugar and the rice.
 
How do you make the chia pudding? With milk? I use chia seeds quite a bit and make it with milk but wondered if there were other approaches. I suppose coconut milk would work?
Sorry for the late reply, life threw a bit of a curve ball yesterday. I make mine with full fat Greek yoghurt (the authentic strained kind, not Greek style), double cream and unsweetened almond milk. 150g of yoghurt, 2 tbsp of cream and 4 tbsp of almond milk to about 40g chia seeds for two servings. I then add sweetener to taste and whatever flavourings I fancy, lemon, lime, almond, orange, coffee, etc. I sometimes add cocoa to make a chocolate chia, but add more liquid, as this makes it thicker. It's always best if you make it the day before. I love it. I used to make overnight oats before we went LC and this has replaced it for me.

Okay. Thanks. That’s useful. I find the ground chia seeds absorb the liquid much more quickly. Have you tried those? So not quite the need to leave overnight.
 
Thanks for the good wishes. Don't think you recover from being in your 60s. Also a very humbling lesson on what my dad did in a much bigger and longer way. Very easy to blithely say in sickness and in health without engaging brain properly when at your peak.

I think Mr C would agree with you on that. :oops:

No, I haven't tried the ground. I quite like preparing it ahead anyway. We have it for breakfast and I'm usually short on time in the morning. If I was doing it for a pudding, like a chocolate mousse, I might try the ground for a smoother consistency.
 
Never mind us. Safe travels and then enjoy the company of friends/loved ones. They are soon gone (within 5 hrs in one case.)
Lightening the mood a tad - does celeriac dauphinoise freeze if made with totes cream or do I need to mandolin a whole one and freeze some? Food fairy deserves better than to be taken for granted as an LC fixer so I need to step up to the (very small) plate.

We’ve never had any left to try freezing. We are a greedy bunch!

How are you? Have seen that your fasting readings are much improved? What has changed?

As to the Pad Thai -- I used konjac noodles -- I find they are quite similar to rice noodles anyway. Most other ingredients (galangal or ginger, sambal oelek (chili paste), some carrot peelings (about 1 carrot's worth for 3 servings), shallots, spring onion, mungo bean sprouts, scrambled eggs, coriander, peanuts, peanut butter oil, shrimps and chicken) are pretty low carb anyway, except for the sauce, which I made from scratch (fish sauce, tamarind paste, erythritol, lime juice). My estimate is that it would come out to about 3g of carbs per 100g.

That’s pretty good - I used to make something similar in the pre lc days but hadn’t thought of adapting it.
It’s nice of you to notice my fbg are a bit better these days - a combination of things I think:
Using Tee2 meter now which seems to read lower than the Codefree ( which means I’m probably in for a shock next HbA1c!)
Also I am trying to eat much earlier in the evening and in a narrower eating window. Lastly and I think probably most significantly is a real effort with exercise, I’m trying to do more strength training with weights rather than just walking. I walk quite slowly - more of an amble really and don’t do long walks as my foot tends to play up if I go more than a mile or 2. I don’t think it was enough to have a big impact on bg.
I’m probably wrong about it all and will have to rethink it all next week!
 
@DCUKMod oddly, this family I married in to lives in each other’s pockets and enjoys it. I love it - three extra sisters, and extra mother, all that.
@ianpspurs I hope Julie feels better soon. Bravo you rolling up sleeves in lc kitchen!
@Listlad I didn’t know you could grind chia seed! How did that turn out? It sounds amazing. I ran across a jar of espresso powder in my cupboard last night - you could make mocha pudding with that....
These bugs of everybody’s - I am thinking I’d definitely try fried insects! Fried lard flavor bugs might be the kosher way around all those meats. We have alllll kinds of large bugs around here...may have to try sautéing camel crickets,,,,,,
Posting from a 70mph bus here...I “slept” on short flight, Mr ZF asleep now next to me. Aha! Just crossing the bridge over the Cape Cod Canal - only half an hour to go. Yayyyyy!!!
Bfast mooshed egg and avocado. Second bfast black Dunkin Donuts decaf Americano
Going to attempt no lunch. I had an almond butter spoonlet blowout last night at about 10:30 because I knew I had 4-5 hrs work left and just couldn’t do it hungry and wiped out. Have not tested at all today.
Supper is anybody’s guess. My grocery order could arrive at 7, or at 10. All the good times were sold out.
Good suppers/outings/sleeps/wakings everyone!

It comes preground in the bag. Unfortunately I cannot recall where I bought them from as it was a few weeks back and have sampled so many shops in the quest for lchf friendly products. It turns out finer. But reacts with the liquid quite quickly.

My dear departed brother felt the same. His started with a laser treatment gone wrong. He nearly totally lost the sight in one eye. Thank goodness he only had one eye done. They had to admit him to the eye pavilion as he had to get injections into the eye every 30 mins for one week. Even had to wake him every 30 mins at night. He was exhausted by the time he got out. After that it was injections every 3 months but he said the same - you put up with it.
Goodness, I can't imagine what it must have been like to have injections every 30 minutes for a week.
 
Evening all. This thread gets more and more prolific. Work definitely gets in the way of keeping up.

@DCUKMod my sister lives in Cambodia and while I can’t claim to have tried it (way too much of a coward), one of the local delicacies is to eat chicken embryos from the shell of the egg!

Wanted to do an OMAD day today but was just too hungry by lunchtime. Lunch was M&S Serrano ham and manchego cheese rollitos.

Dinner was another slow cooker winner. Beef short rib. Followed by the whipped creamy cheese chocolate mousse and some salted almonds.
 
Hope everyone is doing okay and Julie is on the mend soon @ianpspurs.

After my post on Monday, we ended up with more stress. Mr B's vision got worse on Monday evening and he had more pain than usual. He got himself in quite a state and has only just started to calm down now. After seeking advice, it would seem that he has developed a sensitivity to the iodine they use. This has delayed his recovery from the injections and made him panic. Rest and using shed loads of lubricating eye drops has helped hugely and he's almost back to normal.

Anyway, today's menu has looked like this:

Breakfast: Coffee and cream
Mid morning: Almond milk cappuccino with a splash of cream
Lunch: Tomato, basil and radicchio salad, mortadella, provolone piccante, emmental. Baton of Hotel Chocolat 85% choc.
Afternoon: Almond milk cappuccino with a splash of cream. Square of a Green & Blacks Velvet Mint choc.
Dinner: Just about to have halloumi with roast pepper, aubergine and courgettes. Followed by decaf coffee.

Chicken embryos. Known as Balut. Yes. I was offered some but could not face them. I have seen them sold in the Isle of Man though.

If you google balut you will see. But the images might make you :wacky:
