What have you eaten today? (Low carb forum)

Hello mouseee, are you wanting to lose weight? If not you will need to increase your calories. Possibly even double them.
For me breakfast is important. Not only does having a substantial breakfast stop the dawn phenomenon, it also keeps me full until lunchtime, making resisting unhealthy mid morning snacks a lot easier.
I have about 2 stone to lose so enough but not masses.

I do usually eat breakfast but just not today.

I am just not hungry most of the time. I'm on Metformin which could be why.

Dinner filled me up completely although I haven't kicked my 'need' a sweet pudding type thing yet. Although I'm not eating one!

There may be a few loose calories I've not counted like the splash of milk in tea. I'm not sure how I'd double it. More cheese maybe!

More cheese, nuts, do you like avocado? butter on veg, cream in coffee. Full fat yoghurt, Greek is delicious. And extra protein foods, give yourself a larger portion of meat, chicken or fish. Eggs for breakfast. Few ideas to get you started. If you really need that sweet thing after a meal have a few strawberries and cream.
Low Carb does not have to be starvation level calories.
 
Hoping to fast today but ended up eating more than usual!
A 3 Amazon delivery day today, exciting times.
Breakfast a 2 egg cheese omelette around 10am
Lunch tuna muffin melts x 2 with salad leaves and olive oil. Used the new silicone cupcake cases which had just arrived. Coffee chia pudding.
Dinner from the Caldesi’s book which also arrived today. Indian beef patties ( cooked in airfryer ) with salad leaves and cauliflower pilau also from the book. There are some super looking recipes in it.
(3rd Amazon delivery was some origami paper so we can make dinosaurs later in the week when granddaughters are here again)
@Annb I wished we lived closer, I’d buy your dehydrator off you but I expect haulage cost would be prohibitive.

Breakfast today was more strawberries and cottage cheese
Lunch was a salad made with the second mackerel I cooked yesterday
Dinner was cold roast chicken with a yoghurt and mayonnaise dressing (also using leftovers from the fridge)
Neil took me shopping today (I'll be looking after my granddaughter for most of the rest of the week) and I bought some salmon and some smoked mackerel plus a lot of different beans to try to do something with. Actually also found some fennel - not often available here. With the bits I bought today and what I have left in fridge and freezer I should manage to put some meals together for the rest of the week. Also bought anchovies as a special request from my almost 7 year old granddaughter. She likes olives and bell peppers but she prefers her olives with anchovies. Expensive tastes my little girl. She'll also scoff the soft cheese I bought (eats it with a teaspoon, just to be a bit gentile) all the berries and lots of full cream milk. Still, anything to keep her off the high sugar products.
 
I am concerned I'm not eating enough though. Carbs nice and low but not many calories. Regularly less than 800 a day. Advice???

I wouldn’t focus on calories, rather on what you’re trying to achieve and the impact of any carbs you’re eating on BG. A few questions first.

Are you hungry doing that? Are you losing weight? Are you trying to lose weight? The time restricted eating/skipping meals will be helping your BG as will the low carbs. If you’re not getting overly hungry I wouldn’t see a problem in the short term. Looking at the food you posted I’d say it looks a bit short of fat. Adding some would help with satiety (if that’s a problem).

Need a few more details to offer more constructive thoughts. Edited to say just seen you answered a couple of them above.

Glad to say they were no problem. About 35 mins on the phone. Had the initial call back from the loss adjuster's office just to go through all the details and to let me know the loss adjuster who will be in touch is ***** ****** and my mind is thinking is that not character in The Office? Then I remembered that was ***** *****! I've been given permission to clean up a bit I.e. remove the ceiling from our bed and put to one side. I've started on the washing and typical it is raining.
So far all I've had today is a coffee. What is it about things like this that puts you off eating.

Strawberries and cottage cheese again today for breakfast
I have some pork sausages in the fridge, so I'll make a whole lot of sausage meat balls, have some for lunch and put the rest in the freezer - granddaughter will eat some of those with some peppers but I'll have to leave the chilli peppers out.
Dinner will be one of the packs of lamb tagine that I froze a while back.

A few years ago now, we had quite a significant claim, due to a summer freak storm, where hailstones damaged some fascia boarding and window frames, and later we discovered a couple of roof tiles. The roof tiles came to light when a damp patch (no the mouldy sort, the new damp sort) appear that wouldn't dry.

Good old Bank of Scotland Home Insurance were absoluetly fabulous; paying up without a whimper and persevering until it was all right.

In fact, we have just renewed with them at not the cheapest available premium, but they are very good for long terms unoccupancy (for when we flee the winter), and what they do and don't allow in those circumstances. A few extra pounts is worth it for the peace of mind.

CWC in the morning.
Lunch was 2 tuna muffin melts with green salad and olive oil. Then sf jelly and Gk yog.
Dinner: Monkfish a l’Americaine ( from the Caldesi’s book - it was fab. Fish picked up from local fish market this morning) with sautéed courgettes and spinach. 2 glasses of white wine - well, we had to open a bottle for the recipe so it seemed silly not to enjoy a glass or 2 with it. I will probably have some 100% chocolate in a bit.
 
Evening all. Ate more than intended today.

Found myself very hungry mid-morning so ate a snack of Chorizo Crisps. New M&S product that @DJC3 had tipped me off about. Having scoured every branch I passed in the past few weeks, they finally showed up in the branch near work, along with their siblings Serrano Ham crisps and Salami Milano crisps. All practically zero carb, nice small bags and no fridge required. Pretty tasty too.

Lunch was 2 fried eggs, 4 rashers bacon and a tiny amount of grated cheese.

Mid afternoon was a colleague’s leaving do, for which I’d baked a lemon zucchini cake. Managed to limit myself to half a slice and a 40g pot of M&S clotted cream.

Dinner was my first air fryer creation. Pretty successful. Marinated lamb ribs in olive oil, garlic and thyme. Had to cook a bit longer than suggested and also turned the heat up. Could get to like this gadget. 3 ribs leftover for lunch tomorrow. Thanks @DJC3 and @DCUKMod for your assistance yesterday.

@ianpspurs what did you think of those teabags? I tried them a few months ago and thought they were vile. Sounded nice, but...

So that's where the crisps went? They used to have these in the plastic packs up beside the pork crackling crisps but obviously they are going green. I was disappointed because I thought they had been discontinued but snacks here I come again.
 
Bed 6.8 FBG 7. Didn't sleep well last night the back rooms are horribly hot despite the windows being open. It has also convinced me I have to change No 1's bed for a double. Busy morning with the insurers and tomorrow we have the plumber back and the loss adjuster. @DCUKMod - totally agree. They're not the cheapest but they get the job done very efficiently. Got almost all my washing done but had to hang it indoors due to heavy rain all day. Not eaten a lot today.

D. Made an oomi noodle carbonara. Also 1/2 a grenade bar. MFP hates me again "you are not consuming enough calories. Eat more" I'll find my appetite again once order is restored. SIL/BIL have one more night in Dubai before the very long leg back. Been sending me photos.
 
In many ways today was like a box fresh pair of red socks - you need to know me to understand how good that is. Shorts and t shirt, lawn mowing, no cooking involved (don't think egg boiler counts). B = 4 x 1.5 mugs assam tea with almond milk. Helped the ailing UK retail industry (food branch) and had a latte. NE1 was flaxseed cracker, butter, and egg and cress mayo. Had salted caramel green tea mid afternoon. NE2 was avocado and tinned mackerel fillets in evo then 80 gms comte. @Goonergal it will come as no surprise, since we are polar opposite in tastes, that I liked the teabags.

That all looks fab GG, and glad you've jumped right in with your airfryer. How deep is the drawer? I'm wondering if you could fit a trivet in there? That would effectively double the quantity you could get in there, but there's still be fab air distribution and the upper foods could baste the lower level?

As MrB has been playing in a golf match this afternoon, they eat afterwards, meaning I've been left to solo dining tonight.

I did a decent sized salmon fillet, in the A/F. I just rubbed it over with some oil, and popped it in on the fosh setting. At the 5 minute point, I put a couple of spoonfuls of an Indian style Onion Masala on the top of the fillet and put it back in for another 4 or 5 minutes.

I had a fabulous piece of salmon, with crispy skin, and a spicy topping.

I know the chorizo/salami crisps are very easy in the microwave, but I imagine they'll be at least as good in the A/F.

If I'm feeling very lazy about the clean-up job, I'll sometimes loosely scrunch up a piece of alluminium foil, and sit whatever I'm cooking on top of that. When done, I just fold the outside edges of the in on each other to enclose any drippings.

Lazy? Moi? You bet your life I am.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: small portion of left over edamame ‘pasta’ carbonara followed by Greek yoghurt and raspberries.
Mid afternoon: coconut chia pudding and black coffee.
Dinner: chicken, lemon grass and coconut stir fry (who needs noodles?!) followed by SF jelly, cream and LC chocolate granola.

Didn’t know they’d had them before. Really liked the chorizo ones. M&S is becoming low carb (even carnivore) heaven.

It’s 8cm deep, so doubling up could be possible. Thanks for the idea.

Glad you enjoyed the chorizo crisps, as you said nice size packs and don’t need refrigerating.
What will you do next in your airfryer? The lamb looked great.
