What have you eaten today? (Low carb forum)

The coconut flour sauce was such a failure that instead of adding cheese, added pudding rice, sweetener and spices.
Tried again with ordinary flour, this time used the wrong cheese. Didn't know such a thing was possible, but while emmental does melt, it doesnt blend, remains a sludgy layer in the bottom of the pan. Aded some wholegrain mustard and used it anyway.
So two failures today.
Wonder what MrSlim will make of his dinner ?

breakfast - two slices of pain kapnor with avocado and a hint of marmite. Had to check the contents, but yes, @28 carbs per 100g two slices is allowable. only one cup of tea though as off out shopping.
lunch - MrSlim had baguette, pate and green salad. I fried up some cauli rice, stuck an egg on top and ate it with salad. tea.
more tea in the afternoon.
dinner - leg off the bargain smoked chicken, the cauli cheese ( sauce still a bit thin) runner beans and carrots. Glass of rose.

Also made today the mince layer for cottage pie, was to have been dinner tonight , but the chcken has a two day use by date. Mince was tasty and tender, so hours in the kitchen not entirely wasted.

The rice pudding? Well it was ok, but the coconut flour gave it a slightly granular texture. We both ate some though, my portion was about three spoonfuls. No idea of carb units and forgot to check BG before meal.
More marks for effort then achievment today, i think.

Although i didnt check befor the meal, thought it worth trying hour later just to see if there was a big spike.
approx hour after meal BG 6.4
another hour later still 6.4
hour later again 5.8

Counting that as a win :)
Grated gruyere with cream and black pepper makes a wonderful cheese sauce.

I might have missed a discussion on this while I was off but did anyone get an email about Copy Me That being removed from the App Store?
Does anyone use a different app?
I did but it still works. That will be the one where they are encouraging us to contact Apple/Google. They said all our recipes are safe on the server. It's all a bit daft as we could just input the recipes ourself. It will take longer, robs the sites of "hits" but hey ho, if a few want to get silly about it. Guess it will be a wait and see.

Lunch today was my usual bacon, eggs and cheese at the cafe near work.

Dinner was at Five Guys prior to an excellent Hidden London tour of the disused bits of Piccadilly Circus station. Bunless bacon cheeseburger with mayo and grilled onions.

@ziggy_w the pork was indeed to die for! I’ve discovered that the same stall operates in a different location on weekends so will be tracking it down.

Dinner was at Five Guys prior to an excellent Hidden London tour of the disused bits of Piccadilly Circus station. Bunless bacon cheeseburger with mayo and grilled onions.

Goonergal, we haven't tried it out yet, but I reckon the AF could achieve great roasts. Our AF has a rotisserie function (not used yet), but Mr comments every now and then we should try a decent fatty roast on it for the automatic/natural basting, then of course the option for hot, hot crackling.

I must have play one day. In fact, MrB is away for a few days next week, so it may just happen then.
 
Ah well add a bit more in. Still catching up on the posts though. @Brunneria. I did a double take on your gin. I thought at first you'd drunk the bottle! After leaving 3 wired up kids behind on Saturday I needed a bottle of gin! See you're back from hols too. Still reading through but I'm sure you had a great time. You too @PenguinMum - how was your hols? @DJC3 - how's the shoulder doing now?
Back to food. After yesterdays escapades with the car I was wary of going too far but I needed shopping so Hubby came with me in case of any breakdowns. Managed to get there and back without incident. Later took a chance on getting the boys to swimming and again no incidents other than the 1/2 marathon meant we almost didn't get there. Got back and had to finish the carpets as the Rug Doctor was being collected on the Monday. Today (Sunday 22) was also No 1's birthday so presents had to be delivered.
Bed 5.4 FBG 6.4.

D. Rib roast, horseradish, mushrooms, spinach and the Lowest carb Yorkshire pudding I could find at 5.5. Usual campari and soda. Raspberries and a warmed DGF strawberry and cream blondie with cream.

Monday- No 1 was transporting yet more cupcakes to school for his class. He saw the sense of me taping the box when he dropped them! Thankfully, apart from a few bashes they were fine. Got the Rug Doctor cleaned and packed then off to Aqua as I needed some normality. Fat chance! Car started acting up again! Got it to Aqua, knew it would settle but I knew what I would be doing the rest of the day.

L. Nothing - on the phone to Motability, RAC and dealership to sort out a hire car and get my car in. I'm now on first name terms with Europcar.
D. I was past caring but I ended up with the remains of the rib roast cold with horseradish and 1/2 avocado. DGF Millionaire shortbread. I shall explain.

Arranged to take car in about 5pm when I was taking the boys home. Europcar called to ask if I could head to dealership early and they'd collect me and drive me to pick up car. Got car to dealership and apart from having sent them a lengthy email and the RAC report, I had to add that the car was fine so long as:-
1) Journey was no longer than 50 mins
2) Wasn"t on a motorway or dual carriageway
3) Road was level or downhill ( it doesn't like going up hills now)
4) It was not a hot day and if it was, it had been parked in the shade.

I got a very curious look and I had to confirm that I wasn't joking. Bit of a mix up with the hire car but Europcar ferried me about in a merc and it was sorted. Been using a very fancy Toyota Hybrid since Monday. Got the boys home then much later had my leftovers.

Will be very interested in the outcome. Beginning to think I should have gone for a higher end model as I’m using mine more than I thought I would. Maybe Santa can be persuaded.....
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: 2 boiled eggs with Marmite soldiers made from fried halloumi followed by Greek yoghurt, raspberries and macadamia and coconut keto granola.
Mid afternoon: coffee chia pudding
Dinner: cold sweet chilli chicken with cauliflower and broccoli salad, coleslaw and pork scratchings followed by SF jelly, cream and LC chocolate granola

I always put a little dash of brandy in my Marie Rose.

Yes, I believe that is the right way to make it but I don't use alcohol at all - makes me ill in whatever form it comes. Oddly enough, on the odd occasion when I have been more or less obliged to drink alcohol, sometimes to keep the peace some very strong alcohol, others watch with interest expecting me to get pretty tipsy, pretty quickly. It just doesn't happen, it appears that I metabolise the alcohol differently to most people which is why it makes me ill a few hours later. My father was the same and so is No 1 son (and No 2 son, to a lesser extent, but he doesn't like the taste of any alcohol that he has ever come across). Makes for a cheaper lifestyle anyway.

Late wakeup, was gone 10am, very unusual for me and MrSlim was still asleep as well.
breakfast, coffee with cream .... cant remember any breakfast. Maybe there wasn't any.

lunch, small piece of baguette with the last of the smoked chicken, french salad, greek yoghurt and raspberries. tea.
tea and more tea
dinner, cottage pie with cauliflower topping, carrots, and brocolli. water and rosé, We ate the apples from tree no two, (now renamed No4)
MrSlim had icecream with his, just cream for me.

Went round the trees numbering them with paint, it turns out we dont have 21 apple trees - We have 24! Plus two walnut, a pear and several cherry trees, one of which is huge and badly infested. Likewise for the pear tree. Does anyone know how to deal with fruit flies? The small, young cherry trees appear to be wild, self seeded from cherry stones. Unproductive. Some are in the hedge.
Have been feeding a feral cat, it didnt turn up for supper tonight, so opened the door just now to see if it was late - and was promptly mobbed by daddylong legs and something loud and buzzy. Thought it was a beetle, then a hornet, but when caught turned out to be the biggest wasp ever seen. Perhaps its a queen? Either way, am not opening any doors tonight so she will have to stay in the pint pyrex jug until morning. The daddy longlegs? Having a swatathon to deal with them. I know they are harmless, but one landed on my face in the night, cant stand them in the house since then.

Hoping to finish the tedious digging project tomorrow.
 
Em arrived earlier than expected - her Mum had slept in and didn't get her ready for school (says she woke up at 11 am and found Em still in her pyjamas and sitting on the bed with her. Big brother had gone to school and never thought to check his mum (she is diabetic and epileptic, so he should have thought to check). So Mum had to go to town for a sewing job and Em had to come to me.

Lunch for both of us, at about 1.30, was some proscuitto, followed by Em by some Philadelphia cheese taken with a spoon and a Jammie Dodger biscuit.

I had to go out to the children's class at 5.30 and Dad didn't arrive to pick Em up until 5.15 so I just grabbed some cold chicken and rushed to get ready to go.

A bit short on the fluids again today, just trying to make up for that with cups of tea.

Tomorrow will be another Em day, from about 9.30 am. Must try to organise myself a bit better. Dad will come for her about 4.30 and I have visitors arriving about 5, so I have to try to get a late afternoon tea ready as well. That will be mini frittatas, apple/hazelnut buns, an orange cake and some biscuits and cheese. All before 9.30!

Yes that’s the one. As you said, it still works with the recipes I already have, and I can still see everyone else’s so hopefully they’ll sort something out and reinstate the copy part of it soon.
Btw I noticed the Liqueur egg cake in your collection is that the same one @ziggy_w has?

Yes it is. I didn't want it to disappear in the posts so I added it manually.
 
@SlimLizzy- it is indeed wonderful to be in our own room again. Order is restored in that room and is slowly being restored in the other rooms. The antics with the car hasn't helped. You seem to be in the same boat - moving furniture etc. Brings back memories of living here when we were having a large extension built. @mouseee - I can take 2 chips with no effect but you need willpower to stop at 2! @ianpspurs - I'm going to look at TVs tomorrow. Still haven't got around to getting a new one after it going "pow". One of my friends has gone one better with the Rugby - 3 of them are in Japan minus the wives & children. They're sending amazing photos. You've also reminded me to get my next Skinny loaf made.
Anyway - Tuesday 24 - bed 5.8 and FBG was also 5.8.

L. Nothing. Today was a catch up on ironing day having had my board and steam generator stuck behind our furniture for a while.
D. Ended up with the boys staying for dinner as Mum & Dad were working late. By the time I picked up Mum from work and took them all home I wasn't sure what I wanted.
Ended up getting a pack of Iceland's mixed seafood out of the freezer and pepping it up with 4 chopped up santini tomatoes, a mushroom, spinach and oomi noodles. DGF Millionaire shortbread later.
 
OK, a bit more before I head out.
Wednesday 25 Sept - Bed 6.6 FBG 6.7. Finally caught a break today to get more sorting out done. Also got a bit more time before school pick up as No 2 now has after school Drama group on Wednesdays so I only have to go to school once.
B. TAG with ADOC and couple of GF pork chipolatas, fried egg and slice of back bacon.
L. Nothing.
D. One of M&S Best ever burgers that I took from the freezer, veggie chips, couple of mushrooms.

Thursday 26 Sept. - Feeding boys tonight as normal so a trip to the shops was needed as they have almost eaten me out of house and home this week. So, Aqua followed by shopping. Didn't leave too much time for anything else before pick up. Bed 7.9 FBG 7.6. BGs & BPs going up at the antics on News - advised husband to turn off Sky news unless he wants no TV (even more so now they are moving Kay Burley to the morning slot!).

D. After feeding boys and finally getting them home - gammon steak with a fried egg. Raspberries, last bit of DGF strawberry blondie with cream. (All other DGF items are in the freezer now and will appear one at a time).
