What have you eaten today? (Low carb forum)

Evening all. Black coffee all morning and tea with almond milk all afternoon.
12:00ish had bacon eggs and a slice of Gouda.
Dinner a bit later than I’d like was smoked haddock and a sauce to fit in with everyone’s eating requirements made from sautéed pepper and courgette, and lactofree cream cheese mixed in then poured on top of fish and cheddar grated on top. It was v nice. Served with broccoli.
Pud was amazing - a dollop of the h/m Yoghurt with a dollop of h/m lemon curd stirred through and topped with strawberries.
I used Delias recipe for lemon curd in the end as it’s the one I’ve always used, and it panders to my lazy gene by using whole eggs.
Sorry to hear about your ups and downs with health and BGs @maglil55 I’m not surprised you’re fed up with it all.

I like the sound of that haddock. And, I like the thought of your lemon curd. I make an added sugar-free berry coulis, and have that as a change from my rhubarb, but that addiction is strong!

Glad you're enjoying the HM yoghurt. Whilst I know you strain it to reduce the whey content, if you want it thicker to begin with, you could add a spoonful (or however much you fancy) powdered milk. Until recently I was adding coconut milk powder, but I've run out of that and our local Morrisons no longer stock it.

I'm sure I'll be able to get it online though.
 
Evening all.

Second 12+ hour working day of the week today - hopefully shorter tomorrow and then it’s the much needed weekend.

Hungry day - likely caused by stress and adrenaline as much as anything.

Breakfast was salami and chorizo and the remains of some whipped cream (not together @maglil55 )
Snack of bag of Awfully Posh pork crackling.
Dinner was very late, but equally welcome - beef short rib followed by some Lindt 90% and cream. That was after spitting out some raw 90% chocolate I’d bought to try. Yuk! Luckily a small bar - now all in the bin.

Bed 6.1 FBG 6.2 but that doesn't tell the whole story. BGs have been all over the place today. Didn't feel that brilliant. Checked and they'd shot up to 8.9 on only a coffee. I hour later they'd crashed to 5.1, then back to 8.2 then next time I checked 4.6. No idea what was going on. Legs are not as bad as yesterday but still having major sinus issues. I wish all the symptoms would just go away and stay away.
@Chook I remember you and I agreeing that male physios were good looking sadists! Must admit I'll be glad to get an appointment with mine again. I'm doing my exercises and stretches but it's no substitute for the gym/aqua and the sadistic physio stretches. @SlimLizzy - good looking meal that. @Brunneria - I thought you had the Bovril and the Hot Choc in tge same mug! Hence my puzzlement.

L. With my BGs all over the place nursery food was called for. 2 boiled egg mashed with butter - both were double yolks.
D. Had to have the last 2 GF sausages from yesterday, remains of the halloumi wrapped in bacon, tomato - all air fried on the shelves, and a fried egg (another double yolk).

Hubby is driving me nuts wanting to get new garden furniture. Yes we need it but, as I pointed out, until such time as we can dismantle the existing broken table AND trust my car to make it to recycling AND be sure I'm not going to spend hours in a queue to get in ...I'm not interested. I like what he's set his mind on but I wish he'd just forget it for now.
Please what is TAG?
 
Been trying to make Zoom work on this tablet thingy but it's not playing. I got the image, but not the sound. Wasted so much time on it but ended up using the landline instead. That, as I've found, is a very costly way to do it (last month's bill was 5 times the normal). That's why I was given the tablet. Have to look on the internet to see if I can find out how to turn the sound on. I should be at another Zoom meeting tomorrow, but I'm beginning to have my doubts.

With all this, I didn't get around to making anything to eat so I'll just have to throw together some salad with a few slices of gammon. Might add in a couple of Atkins crispbread.

Ann - I assume you checked you had the volume on? I Know I have been caught out in the past, with having the sound off or turned down too low to hear.

If I recall when a Zoom call connected, three options appear for how the call will be handled. I'm so used to just selecting the one I need, I can't actually recall what they are!

doubling down on the carni today. Multiple reasons, including Lockdown Sedentariness (yes, that is a new Thing I just made up ;) ), hoping to reduce inflammation, and maybe taking off a little weight.

B: sirloin steak in airfryer
L: pork ribs
D: another steak in airfryer

S: 2 squares 70%

I'll try that tomorrow. I just couldn't see anywhere to turn sound on or off. Thanks for the advice.

This should have been the first day of a two week holiday away instead Mr C is having a week off and we are trying to think of places to visit that are open and not too busy.

Asda delivery due today! They've got a message on their home page that they are now accepting returns so no more having to munch our way through £5 of revolting subbed cheese which was nothing like what I'd ordered. I'm looking forward to seeing how it works because, for the last few weeks, the driver has just dumped my shopping half way down the garden path with no opportunity to check it at all before he drives off. :banghead:

@LaoDan - You might be better asking your question as a thread on its own - you'd probably get more answers.

Today's food

Breakfast: plain omelette with kimchi on the side (okay but much nicer with scrambled eggs)
Lunch: usual Actimel drink and a bit of cheese
Dinner: Quorn Savoury Eggs (nice - like mini scotch eggs with egg mayo inside) and salads and coleslaw

Lucky? Seriously, it seems odd to have no movement. Was it Milk or a high cocoa content dark?
 
Busy day again including shifting 850kgs of gravel from drive at front where delivered to and into back garden. It was for a large area around raised beds - used to have bark there but over five years it’s deteriorated and weeds galore were coming through so have cleared large area put new weed suppressant fabric down and then gravel. Satisfying job in terms of results but I’m aching! Did half of it a few weeks ago with our first 850kg gravel bag but needed another to finish it! Gravel delivery isn’t quick! Gather there has been huge demand for it with lots of people trying to do lockdown projects.
Breakfast one chipolata Waitrose 1 sausage, one slice of bacon, half a slice toasted lc bread and -yay- another double yoker egg - @maglil55 funny that we are both getting lots of double yokers - maybe lockdown effect!! I’ll now feel let down though if I get a single yoker!

Dinner - small pack of cheesies whilst cooking then celeriac chips, salmon with lemon butter and green beans with glass of dry white wine followed by lc raspberry mousse and spoon of yoghurt. Planning some 100% montezumas choc with orange oil with coffee in a bit.
 
OK very odd. After yesterday with BGs going all over the place, they are still going all over the place but staying lower. Bed was 5.9 FBG 4.4. They've been going up to the low 6's today but mostly sitting in low 4's. I can't account for this.
Spoke to brother today. He's doing fine and has had a virtual consult with his consultant as he still can't get his 6 month scan to make sure there is still no sign of the cancer. @Annb - I told the boys today about Em's version of Happy Birthday and they said to tell her they love it as it is so funny. They're now really looking forward to their online Assembly on Thursday as they want to teach it to their classes. @DJC3 - I'm feeling a lot better again today. Pleaseeee! Just let it last.
B. TAG and a couple of GF super seeded crackers with pate.
L. Dairylea triangle - 2 Lotus biscuits as BGs were down at 3.2.
D. Mixed up the DD seafood salad of chopped up avocado, tomato, cucumber, lettuce, spring onion, salmon. Skipped the prawns but added walnuts. Dressing is mayo, sour cream, lemon juice, garlic.
Decided to have a prosecco since I felt better. It's really dry but I can't remember where I bought them as I prefer dry.

@DJC3 - weighed myself for the first time in weeks this morning. Still the same weight as I was at the end of the 10 week challenge which I was highly delighted about. Time I think to plan out more very low carb DD meal plans and see if I can shift some more weight. It certainly made me feel better.

Agree about the eggs. The entire box was double yolk and I still have another dozen so I'm wondering if they're the same. I just have Morrisons free range extra large. Double yolks are also common in Tescos Scottish free range extra large but only in summer weirdly.
 
So for the last week I have stayed with my Mum after my fathers death last weekend :( This has made for some interesting choices, cooking in an unfamiliar kitchen, initially with not necessarily good choices for me. However yesterday I shopped and sorted out some foods to suit us both.
I won’t list all week as I can’t remember everything, but thought I’d try to start again today:
Breakfast: no coconut ‘porridge’ at the moment as I don’t have all the ingredients here, so I have been having just strawberries and cream with black coffee.
Lunch: 1/2 avocado with prawns and mayo followed by Greek yoghurt and chocolate chia pudding.
Afternoon: coffee with cream and a white chocolate phd bar.
Dinner: lamb chops marinated in olive oil, lemon juice, mixed herbs, salt and pepper with mixed veg followed by chocolate Oppo ice-cream and raspberries.

Not a low carb day for me, looks like my basal insulin dose is a bit too high at the moment, and combined with working on the new goat fence from 9 to 5 today (am usually much more sedentiary than I should be) that meant lots of funny food choices during work and without insulin to prevent and treat hypo's: Crackers, apple, prawn chips, winegums, kiwi (don't even know how many carbs in a kiwi but it didn't matter as all bets were off on insulin dosing anyway and I used it to treat a hypo).

Evening meal was leftovers. Mixed veggies and marinated oven baked pork belly pieces. Very yummy!

But, fence is finished, bar some details, and the goats can now safely walk in the garden!

Double yolk eggs are normally produced by very young girls just coming in to lay or ladies coming to the end of their laying career. Because of the way commercial farmers manage their flocks its almost certain that supermarket double yolk eggs are from very young girls.
