Not sure what I'll get to eat today. Boiler replacement underway - kitchen completely commandeered by the engineer; bed covered in stuff from the kitchen cupboards and living area full of stuff from the cupboard that houses the water, which is switched off! Didn't get a chance for breakfast, so there might be takeaway involved if I can't wait until dinner.

Just teaolat with cream and water so far.

I could have done that, but I didn't. Was just looking for an excuse for a taste really, I suppose. It's ages since I made cake of any sort. I'll be firmer with myself in future.

Em has written up a list of all the 12 things she wants to make over the next few weeks: Skons, tarts, lemonade, kake, lam rolls (she still, at eight, mixes up her "l" and "j"),bread and butter poding but cup kaces (I made small cupcake sized b & b puddings for her family a few weeks ago), soseg rolls, pasta + kechup, smoked salmon and crem cheas sandwiches, rise pudding, apple pie, apple strudel, mackerony cheas. I think we'll have to do some work on her spelling as well.

I had some more of the chicken wings for breakfast and have taken out of the freezer some steak and kidney ready for a topping of butternut squash and spinach mash for later in the day.

The carbs I am missing are the flour/grain/root veg type. I was using celeriac as a potato substitute, but have gone off that veg now. I do use butternut squash for that though. Trouble is, I'm really not a veggie kind of person never have been, even as a child, so the options are limited. I did try flax seed, but didn't enjoy the experience, so much so that the packet I bought long ago, finally went in the bin this week. I have coconut flour, water chestnut flour, chestnut flour, chickpea flour - all of them at risk of being dumped, but the jury is out at present. Psyllium husk seems to upset my decidedly odd stomach, as does anything with almond in it. The drawer full of nuts and seeds languishing in my larder seem to cause issues as well. None of my recent efforts have proved very satisfying.

I do eat avocado when I can get a half decent one here (rare) but just on its own, it isn't very satisfying either. I'm just a miserable old codger and should just get on with it. I did enjoy the chicken wings on their own that I cooked yesterday, but don't want to see another one for long enough now. Also don't really want to see another bit of lamb or beef for a while either. I asked Neil to try to get me some kind of fish when he went shopping today, but there was none available in town. I do have some tinned sardines in the larder, saved for a rainy day. Maybe all this is why I gave in to the temptation of half a cupcake with Em.

In fact, although enjoyable food is an issue, the major one I have is the insulin I have to take to get BG under control and sometimes I just throw up my hands and ignore it all.

BTW, DIL is T2 often does the same, but it affects her differently to me. She, however, has an infected toe and has been prescribed one of the only 2 antibiotics she can take (allergy issues) without being seen by anyone. That treatment hasn't worked and it looks really bad, but can only get a telephone consultation, so doctors are relying on her description of it without seeing it at all. It hasn't gone black, but is very painful. It brings back memories of my mother-in-law (was told she was not diabetic although she did have acute pancreatitis) who couldn't feel her feet and didn't realise she had damaged her toe until it turned black. She rapidly lost both legs. I fear for my DIL.

L. Pack of Emmental Cheesies. Rather like these things.
D. Tex Mex chicken breast which has all sorts of beans in it with a cheesy cauliflower rice which I made like risotto with onion, mushroom, chicken stock, parsley and finished with a mix of parmesan and mozzarella. 2 squares of Godiva.

@shelley262 - I envy you your swimming. We're no further forward. The Club I go to isn't large and they are having major issues with the (quite frankly) ridiculous requirements being imposed here. I'm not hopeful at the moment as economically I can't see them being able to overcome this.

Thankfully I don't live in the Glasgow area as their latest restrictions are madness - you cannot visit family/people in their homes but you can meet them in a pub/restaurant?? Lunatics have taken over the asylum.

I ordered the bread in the end rather than rolls. I’m hoping it toasts well. Like yours my freezer fills as fast as I empty it so I’m not sure where I’m going to put it - it comes in packs of 3 loaves which will take me a month of Sundays to use. I wonder how big the loaves are? Happy to post you a few slices when my Zip Lok bags arrive if you want to try it? ( @DCUKMod I have bought an orange too in readiness for a weekend of gin experimentation yay!))
That risotto sounds wonderful, I will attempt something similar.
Btw what is that spicy prawn thing you get from Iceland? I’ve bought it once and liked it but couldn’t find it in there this week and I couldn’t remember what it was called to ask.

I was just talking to No 2 son about all the daft restrictions. Our local sports centre (Stornoway) is open, but restricted access. The swimming pool is closed "for maintenance". One might have thought they would have taken some time in the last 6 months to do that! And when they do open, apparently the changing rooms will be out of use. Swimmers will have to go to the pool wearing swimming gear under their normal clothes but what afterwards? Go home dripping wet in swimwear? Probably some sort of decency law against that.

Em and Braidie's schools are not providing school meals. Kids have to take packed lunches and bottles of water from home and eat wherever they can. And I notice that there is one school in England where meals are being provided but kids can't eat in the dining room. So there will be young kids wandering around the school with food open to the elements, looking for somewhere to eat it! And yet, pubs and restaurants are open. They tell us that kids are not as vulnerable to the virus but they are more restricted than adults, who presumably are more vulnerable. All seems very silly to me.

Can't see that happening in Stornoway. Normal conditions here are cold, wet and windy outside. Besides, council workers in the overlooking offices would be offended.

Ah, this was an outdoors swimming pool. As for the council workers, shouldn't they be working instead of spying on naked swimmers outside the window?
 
Swimming session for breakfast and luckily our pool changing rooms are open - just restricted to five of us and no shower. At least can get dry before get in car! Getting dry in the hotels car park wouldn’t be easy! Planning another swim tomorrow too - all booked- as away at mums Sunday to Wednesday next so will miss it! Planning on taking exercise mat with me to hopefully keep my new routines going - although will probably be eating three small meals while there to fit in as mum likes breakfast, lunch and dinner but small amounts. I find it harder to dodge a meal if I’m cooking it for someone else it’s the smell that really wakes up my appetite! OH does his own breakfast and I stay away from temptation here at home!
Lunch toasted chaffle with scrambled eggs followed by coffee and two montezumas 100% mini eggs
Dinner pork chop with roasted garden tomatoes, stuffed mushrooms and spoon of coleslaw with glass of dry white wine mixed with soda water followed by DGF lemon and blueberry cake with a few garden berries and spoon of yoghurt.
Strange today with schools back generally busier out and about but got around and a fair few tasks done.
 
Evening all. @Annb I hope the loos are open or that pool will be rank! Mine hasn’t opened yet but I do tend to put clothes over wet costume and come home to shower as it’s only a 5 minute (if that) walk away.

New boiler was installed in time for a large late lunch of 2 pork belly strips chopped into cubes, coated in salt and chilli oil and air fried followed by lamb ribs salted and air fried. Yum.

Have only just finished putting everything back into the cupboards - had a bit of a clean/clear out while I was at it - and it’s a bit late to eat anything else so it’s an impromptu OMAD day.

Well earned rest now and feet up.

@zauberflote -- I added the lomon oil to the almond brittle, jsut for flavor, it was good, but would definitely be careful not to overdo it.
@maglil55 -- I agree with DJC3, the cauliflower risotto sounds great. I defintely have to give this a try. I wonder whether you could also use konjac or maybe even chia?
@Goonergal -- Hugs. I can imagine how frustrating it must be to have blood sugars rise for no reason at all.

Yesterday (blood sugar a little higher than usual upon getting up, can't really see a reason why, so decided to fast most of the day).

Breakfast: A double decafffeinated espresso with cream and erythritol

Lunch: Nothing (out and about)

Dinner: Lamb's lettuce with h/m Caesar's dressing and parmesan cheese. Half a DD keto roll with butter. 125g of chicken liver pate. 10g of chocolate. Some dry red wine.

Today ...

Breakfast: Double decaffeinated espresso with cream and erythritol. Edited to add: A wiener chicken sausage.

Lunch: Half a DD keto roll with with mayonnaise and cheese. Bought some 77% chocolate with candid orange peel, quite reasonable with 25g of carbs, but seriously addictive. Might be safer to go back to plain dark chocolate. Had almost 50g of this.

Dinner: A smallish serving of ribeye cooked sous vide and then fried. Sauerkraut with cream and caraway seeds. Cauli mash with butter and potato fiber. Dry red wine.

Edited to add: Found myself hungry late in the evening, so had half a DD keto roll with mayonnaise and shrimps.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee
Late morning: black coffee and white chocolate phd bar
Late Lunch: Pork scratchings followed by Greek yoghurt flavoured with coffee and LC chocolate granola.
Dinner: cheddar and tomato omelette followed by SF jelly, cream LC vanilla and raspberry granola.

Worked well, including the bits of grated cheese that fell onto the cast iron pan, and went all crispy golden brown, and were scattered on the top for a crunchy topping.

May never need to eat again.

@Brunneria I think I read somewhere of doing crispy Coated omelette by putting a thin layer of grated cheese in pan first and letting it cook for a minute or 2 then pouring whisked eggs on top. When they are cooked through the omelette folds up and has a crispy outside. I tried it once but am used to tipping runny eggs under so mine went a bit soft but I think with practise it might work
 
Had my steak and kidney this evening. Wish I hadn't bothered. I only had half and had to give up - feeling bloated and sick. Spent until a few minutes ago collapsed and dozing in the kitchen chair and now feeling a bit better, after taking some Andrews salts which I found in the cupboard. A bit damp and solid, but I did scrape a teaspoonful of it out of the tub. I don't know why I had it - I haven't used it for years - it helped when my gall bladder was causing problems and that was years ago.
 
@Annb I'm no doctor, but this doesn't sound at all right to me, and its been going on far too long. It doesn't sound diabetes related. Please try to get another consultation

Not a good day food and emotions wise
Had a small breakfast of ff greek and seeds, not because I was hungry but I needed to eat some seeds
Then mid afternoon got cold and wet in the rain and sad and cross with personal stuff.
Bought a tea to warm up with and couldn't resist the temptation of a cake....why don't cafes offer anything but carbs!!!! Chose a coconut macaroon on the basis its mostly coconut and egg white, ignoring the sugar. Of course when I tested a bit later was up to 11.5, and i havent seen double digits for ages. I knew I was doing wrong but I still did it anyway. So disappointed with myself.

D: cheese and salad. 20g 100% with orange and nibs. Glad I managed to stop at 20g.
