What have you eaten today? (Low carb forum)

Boy's birthday today so shared a late breakfast of bacon and scrambled eggs. He crammed his into one enormous bagel
Then got on with preparation so somehow a mince pie with cream and 2 biscuits and 3 chocolate mints disappeared along with tastings of a redcurrant sauce i was making

Tonight we are having posh takeaway from the French restaurant, garlic prawns, guinea fowl and cheese for dessert for me, choc and cherry sweet something for the boys.

Usually Xmas eve is busy for us, boy's is just the first of 3 major birthdays this week, but this year only the 3 of us and 2 neighbours we will be delivering lunch to tomorrow. Feels so calm I'm afraid I've forgotten something important
 
Bitterly cold here today, but sunny too, so enjoyed a walk and a jaunt across the Thames on the cable car.

Two meals and a lot of prep for tomorrow. More than enough food to feed an army, but it’s all for me!

Lunch was air fried pork belly pieces coated in chilli oil. Followed by a small lemon cake from the same supplier as yesterday’s pistachio cake. No frosting on this one, and it was demolished before a picture could be taken.

Dinner was some Nando’s chicken - a bit more than a quarter. The rest is being stored for lunches in the rest of the week. Followed up with a couple of pieces of a chocolate/nut thing I made. Ostensibly for tomorrow, but already proving to be moreish.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee
Late morning: black coffee and caramel carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a few mixed nuts.
Dinner: ribs and roasted Mediterranean veggies followed by SF jelly, cream and LC raspberry and chocolate granola.
 
Well,the posh takeaway came with a really creamy potato dauphinoise. I kept a large spoonful for myself and gave the rest to the boys. It was still too much really. The guinea fowl was as big a large chicken breat and oh so tasty. My cheeses (4) came with 8 crackers, 8 grapes 2 celery sticks, 3 walnuts and a large juicy date. I have eaten the date and 2 of the cheeses.
Today is officially a bad day for carbs.
Only Xmas Day, Boxing day and 2 birthdays to go... oh and New Years eve too
Why does it all have to come together?
 
Eating close to what is “normal” but remaining low carb and feeling celebratory is "interesting" for me at this point in my journey. My first Christmas with Libre so I’m hoping to learn a few things. Enjoying my food as well as being Swipey compliant would be an unexpected bonus. Day 1 attempt: Tea: CWC+ SF syrup prawn cocktail, mixed leaves and Tea. Smoked salmon, avocado and king prawn bowl, salad leaves SLC gammon roll (my mum’s favourite part of Christmas was gammon on Christmas Eve.), vits. Day 1 over - score draw. I’ll take dull if it gets results - very Jose.

I have always batch grated, for that very reason. I lot of clearing up, a few cheapo sarnie bags, sealed and lobbed in the freezer, with strict instructions to let me know when there 2 left. I also batch grate and store parmesan in the same way.

Having rummaged in the freezer this morning for something else, I "added value" by finding a half tenderloin that's been in there a while, already in the vacc bag, with these aromatic/seasonings: https://www.copymethat.com/r/rIYvRo1/maes-slow-roasted-pork-lechon/ Of course, there's no crackling, which the original recipe delivers well, but all the taste will be there.

They're such lovely flavours, but a bit of a faff to do for one dish, so, in my role as sous chef, I tend do way more and either freeze on their own, or frozen with what they'll cooked with.

What a brilliant find! My freezer tends to turn up half used packets of peas. I would very much like a sous chef so please let me know if you see any on sale anywhere

Me too! What do you think, can I just leave it on the countertop to let it do it's work or does it need some special treatment?
 
I have a sous chef :happy:- otherwise known as adult son who lives at home on the condition he helps/does whenever asked, without complaint. After a few years of heavy training he's now a very good cook. He can do the shopping too, without spending a fortune. He could be available , at the right rate .... or free to anyone who can provide me with a nice daughter-in-law :):):)

LOL. Main food event is almost 2 hours away and I’ve just had some plain, salted, macadamias and almonds as it seemed too decadent to start with chocolate. You may have changed my mind!
