What have you eaten today? (Low carb forum)

Had my (hopefully) one meal of the beef, onion, bean sprouts and ginger stew I made a few days ago. It wasn't a huge portion so it might not last me through the day. I think I need to reduce calories as well as carbs to try to have some effect and I might be able to do that having only one meal a day, but not sure I can manage it. A few days ago I thought my stomach might have shrunk because I didn't seem to be able to put so much in it. It was kidding me on.

Just been told that a friend is bringing another friend I haven't seen in ages at lunchtime on Wednesday. I'm trying to think what I can make to satisfy them, but not tempt me too much. Have to get my thinking cap on.
 
Thinking cap produced thoughts about a soup made of butternut squash and grapefruit with some onion and garlic in it - a Nadiya Hussein recipe Shouldn't be too high carb but if it's warm weather on Wednesday it might not be suitable.
Alternatively thinking of a kind of buffet with salady things and let them help themselves to whatever they want. Possibly that would be easiest - if Neil can get all the bits I need.
Stomach insisted on something else to supplement the stew, so I made up some guacamole. For once the avocado was a really good one and just ready to eat. It's still complaining but not as bad as before.
 
Tuesday 6 September - bed 8.2 FBG 7.3. No idea what caused the 8 2.

B. TAG and a bit crustless quiche.

L. A sandwich with SLC bread , smashed avocado and wafer thin chicken.

D. Pork, onion and cheese sausage with stir fried cauliflower/parmesan.
Then I went off the rails and had a Grenade Ice cream bar and later, one of these small dark raspberry chocolate bars that Lidl get in every so often.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and an Aldi protein bar.
Skipped lunch.
Mid afternoon: black coffee and a food dr bar.
Dinner: two low carb bread rolls spread with marmite with scrambled eggs followed by SF strawberry jelly and cream.

Where do you get those sausages? They look and sound very good. Don't really expect to be able to get them here but if not, I could try to make something along the same lines.
 
Wednesday 7 September bed 7.2 FBG 7 6
Was supposed to get my new specs yesterday. Drove up to get them but not ready so new date if Friday (I'll phone this time!).

B. TAG and a bit crustless quiche.

L. Nothing

D. A SLC pizza with tomato, salami, and cheese. DGF vegan brownie, 4 strawberries and cream.

I made pasta fagioli* for the boys/hubby that went down really well. I loved it pre diabetes but too many carbs now. *also known as pasta fazool (that's amore!)

Thursday 8 September - bed 8.1 FBG 7.8

Sad day as it turned out. RIP Queen Elizabeth. I spent time on and off being quizzed by the boys about what would happen.

B. TAG and 2 slices of SLC toast with smashed avocado and wafer thin chicken and off to an Aqua class.

L. Nothing

D. Burger, shredded lettuce , bit GF haggis, cheese slice. Simple & straightforward.


Friday 9 September - bed 8.2 FBG 7.8

A day of being bombarded with questions from the boys - what's a State funeral? How do they pick a new Queen? How do they become Queen? Youngest was telling me their morning Assembly was all about the Queen.

B. TAG and 2 slices of SLC toast with salmon pate.

L. Nothing - but I did get my new specs.

D. Chicken breast curry with stir fried cauliflower rice with peas, spring onion and turmeric.

I though the address from King Charles was really touching. My eldest grandson made a good comment "Isn't is sad they can't just be sad alone for a little while". Very true. 20220909_183733.jpg
 
B- 1 h/b egg
L- SLC roll filled with cream cheese, smoked salmon and watercress. Then a DGF cookie straight out of the freezer.
Busy afternoon, I try not to snack but succumbed to a Fatt bar
D-DD meatloaf and broccoli. I’ll probably have a glass or 2 of red to wash it down
I now know ALL the DGF cookies can be eaten straight from the freezer.

Me too! I think I actually prefer the cookies to the cakes, I always have them frozen since you first mentioned it, I think freezing makes them taste less sweet. The cakes are really way too sweet for me now
 
Cheese on SLC toast for breakfast.
Lunch was Turkey breast slices, chilli sauerkraut, h/b egg and salad. DGF brownie (found 2 boxes in the freezer).
D- out after watching the musical Six. Great show. Started with 2 minutes silence, then we were asked to stand for the national anthem. The whole audience then started singing God save our King. It was so moving, most people were in tears by the end.
Food in our favourite seafood restaurant afterwards, a shared seafood platter. King prawn skewers, crevettes, squid, scallops, mussels, cockles, samphire, white wine and cream sauce. Photo taken after we’d eaten half of itIMG_0904.jpg

Marks & Spencer. They are in a ring in a foil tray. They come with a BBQ sauce which I don't use. I use the Skinny Co. Chilli sauce to rub them with. That's half on my photo. Hubby gets the other half!

Just answered @Annb - M&S. They're really tasty but the sauce that comes with it is ditched in favour of a Skinny Co sauce. Hubby likes them too.
 
B: blackberries, seeds,yoghurt
Yoga
L: a cold sausage and a slice of gouda made into crisps in the microwave. 1 hm lc choc and raspberry ice cream
D: pizza made with lc fathead dough, topping of sausage, tiny bit of chorizo, cheese. 1 small coffee ice cream
