Brunch: a wrap topped with the last of some tinned salmon that was left in the fridge, some edam and some slices of tomato, all melted down in the microwave to look a bit like a pizza. Wraps have 21g of carbs but some of that is fibre - not sure how much though, so I'll count it as 21. No more carbs today then. Don't really like tinned salmon but it came into the house way back, around the time food parcels were being delivered to vulnerable folk - not much use to Neil since he doesn't eat anything but the occasional brined mackerel to settle his Crohn's down when it gets bad. Anyway, I opened it yesterday evening because I felt hungry after all and had some of it mixed with mayo and a Jacob's cream cracker. Didn't really like it but had to use it up today.
2nd meal will be chicken and leek soup - yet to be made but I'm hoping to get it done.
I've become pretty dependent on the dishwasher to do the dishes once a day - in the early hours when I'm first up and about, but it broke down yesterday morning. Neil tried to fix it and it worked for about half an hour and then gave up again. So it's back to washing dishes in the sink. That was this morning's task - emptying the drying racks, getting dishes out of the machine, rinsing them and stacking them on the drying racks, then washing the dishes that should have been the next dishwasher load. Insufficient space on the drying racks for all of it to drip so I had to use the dishwasher as a drying rack as well. Gave up at that, but now, after a rest, I shall get on to drying and putting away everything. From now on, dishes and utensils will be washed immediately, dried and put away.
I might not get around to making soup after all.
Neil did the shopping this morning but most of the meat and fish I asked him to get just weren't there. I asked for a belly pork roast and he came back with a pork leg joint. No gammon or bacon joints available. He did get some Cumberland sausages and some salmon but no smoked mackerel - only smoked haddock (not what I was planning for but beggars can't be choosers, I suppose). No dried cranberries or Bramley apples either - he bought fresh cranberries and Pink Lady apples. I can probably still make my planned mincemeat with those. No limes either but I do have some lemons and some bottled lime juice, so I can probably manage something with what I have in the house already. I did make mincemeat a few days ago and used a little of it on top of a cake, just using the little that wouldn't fit into the big jar, then I gave the full jar to Alistair to make his own mince pies. I also gave him the cake minus 2 slices that I'd had with my visitor yesterday. But I want to make more to have in hand, in case I hear of anyone coming in time to rustle up some mince pies.
