A feast!

Yesterday I was in Amsterdam to visit a dying friend (very good visit) and Amsterdam of course has all kinds of food not available in my rural village. Would have been a shame to not make use of that!

I chose an Indonesian takeaway, where you choose the foods you want and they fill little containers with the cold dishes to heat up at home.
No idea of the carb content so dosing my insulin on luck but from the taste it was pretty low. If I go high it's the stuff at the top of the picture, it's a delicious crunchy spicy tempeh which definitely involves ginger syrup.

Clockwise from there, it's baby squid, taugé with tofu and something green, another very tasty tempeh, green beans, rendang (deef stew) and a hard boiled egg in the middle. Everything differently and well flavoured.

You're supposed to eat it with rice or noodles but it went very well without. I thought about making cauliflower rice with it but I didn't have a cauliflower and they are expensive too at the moment.

Same again tomorrow, I used half of each little container. :hungry:

For the rendang spices, you can get away with swapping quite a few for Tom Yum paste. The toasted coconut is an astonishingly effective thickener, and works if you don't toast it too, but the toasting does add an additional flavour.

Today, here we have curry for our main meal - a fairly standard Saturday evening, then a lovely piece of beef for tomorrow.

Ist meal: sausage and h/m baked beans. I was saying to Neil that I can never get any beans to soften as well as the commercially prepared ones. He suggested making my baked beans and putting them in the freezer for a month or so to let the beans soften that way. I wonder if they would be better with some bicarb in the water. I'll try that next time.

2nd meal: beef mince with tomatoes. Ready to go but it's a bit early yet. I'll just contain my soul in patience.

Just put together the lucky dip for the family - quite a lot of sweet stuff; some more healthy than others, and I was good and didn't have any of them. Think I'll award myself a trophy for my forbearance. BG was around 5 earlier in the afternoon but has risen slightly to 6.4.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: coffee shop cappuccino and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: LC roll spread with a tiny amount of cranberry and cream cheese with coleslaw followed by SF raspberry jelly and cream.

Suddenly got a migraine about 10:00 am. Took medication and salt and about an hour later had 2 scrambled eggs and a nut bar. It cleared, thankfully
L: just a tiny bit of cheese and one slice gammon.
Hours walk
3:30 sons birthday homemade full sugar carrot cake
7pm sausages with hm lc coleslaw in lettuce wraps. Another small slice cake. 1 glass white wine with soda.
10ish a small spiced rum

It's been difficult all day not to pick at the chocolate, crisps and cake our hosts have left out all day.

Ive also heard not to salt beans until they are almost cooked to help with softening. Or maybe try pressure cooking? Have a happy Christmas with your family.

Merry Christmas everyone Got a lot of cooking to do. Starting with a pea puree! Starter today is scallops on black pudding sitting in a base of pea puree and topped with pea shoots. Stuffing is made, all veg is prepped, low carb creme burlees made, pigs wrapped and about to make a LC chocolate pear cake. Thankfully, I've pretty much recovered from my bug.

Happy Christmas Day everyone. I hope you are all coping well with what can, for some, be a stressful day.

Leg of pork in the oven to slow cook. No idea when it will be ready so I'll play that by ear. Gravy should be good - it's on a trivet of vegetables and apple. Haven't decided yet what veg to go with it. I could try red cabbage and see how I get on, or I could chicken out and make it squash or pumpkin.

Sometime soon I will make a frittata with the salmon that I cooked yesterday and that will be the first meal today.

I was given a gift of After Eight mints yesterday. I shouldn't eat them, but I did, a bit earlier today. Possibly not a good idea on an empty stomach. For me, never a good idea, but I find them hard to resist. I shall resist the rest of the box though (had 4, I think) because I ended up with a serious pain in my stomach - 3 Rennies fixed that eventually but I shan't be risking it again.

Good luck for the drive, it sounds like the destination will be well worth it with good company and good food. I’ll be interested to hear what your uncle cooks.

I gather Fino sherry from a champagne flute is all the rage these days. Well, it will be in this hacienda today.

The beef looks fabulous. I will almost certainly eat too much. It's my job.

Merry Christmas all.

The day started with a hotel breakfast of smoked salmon and cream cheese with a fried egg, with a side of a small piece of bacon and 1 sausage.

Lunch with family was roast chicken, sprouts, a token piece of broccoli (I don’t really like it unless it’s the sprouting type, but it’d been cooked with me in mind), sausages, bacon, small bit of stuffing and gravy.

Dessert was raspberries and cream and 2 squares Lindt 90%. Left the rest of the chocolate for my Dad.

Totally stuffed so there’s no need for the deli meat selection sitting in my hotel room fridge. That’ll be tomorrow’s dinner.

Hi everyone. I do hope you have all had a great Christmas and I wish you all a Very Happy and Healthy 2023. I've had a chest infection again, got over that and went down with Bronchitis so have had to spend Christmas alone because of being infectious. Hey ho! It can only get better. Have not been testing but will have to get my act together and sort myself out. Take care all
