What have you eaten today? (Low carb forum)

Coffee and cream x 2
Coffee and unsweetened almond milk
Beef and chicken Tomatoes
Smoked salmon
 
@AndBreathe thanks for info re kefir grains I had read they can be eaten and I've had some but like you the texture is what puts me off enjoying them although they are not unpleasant.
10ish -decided on breakfast despite not having one for quite a while and then was reminded why I don't. I find it left me a bit nauseous -maybe because I'm not used to rushing around or exercising directly after eating and I never have time to relax after breakfast! Only minor and temporary but discourages me from going back to regular breakfasts. Ate one slice of bacon one fried egg and one slice of buttered low carb toast
1ish kimchi with some cheese then frozen berries stirred into some kefir and yoghurt followed by two squares of 100% chocolate
5ish hm chicken curry with LC wrap and small glass of red wine followed by LC brownie.
 
Early last summer I gave my neighbour-in-the-garden and his 17 year old son a couple of ducks each for their birthday (the black ones for dad, the white ones for the son).
Looks like the ducks have decided it's spring and they have started laying beautiful eggs, some green and some white. :)

That calls for an egg party so I had them boiled, deviled and fried. :joyful:
Just look at the size of that yolk, it's amazing!

Fantastic. I love the sound of an Egg Party. It should be a regular thing.
 
Breakfast at 10am was 2 chipolatas, 2 fried eggs and avocado. Breakfast often makes me hungrier during the day so …
at various point in the day I then had some nuts, 100% chocolate, slice of protein bread with cream cheese , half a Yummzy lc cake.
Dinner was 24hr slow cooked oxtail with steamed cabbage. Red wine. IMG_1916.jpg
 
B: pear with chopped walnuts and extra thick cream
L: 4 slices garlic sausage, tablespoon coleslaw. Ff greek yoghurt, milled linseeds, 2 walnuts sprinkle cinnamon
D: yesterday's chicken and chorizo stew, hazelnuts and milk chocolate (naughty me)

I've found one of the best ways to eat the kefir grains is in some yoghurt at breakfast time. Yes, they add some texture, but not akin to eating rubber pellets as the can be sometimes if they've gone a bit rogue!

Coming away this time, I didn't freeze any grains, so I will have to buy a new batch, but that's fine.

Yesterday: brunch of seafood stir-fry, delicious but for some reason doesn't fill me up, so a piece of cheese was necessary a couple of hours later. Dinner was roast lamb with cabbage, sprouts and cauliflower. 2!!! glasses of Retsina. Not strictly allowed (normally I drink red wine and only 1 glass) but I do love retsina, and Lidl was having a Greek week.

The duck eggs sound wonderful. I used to moonlight on an old-fashioned free-range poultry farm, and the duck eggs were divine. Turkey eggs are very good too, but not as rich.
 
Didn't have the steak yesterday - just not hungry enough to bother cooking it. Just had tea to keep me going. BG stayed high though. Still high this morning - over 12. Still, I had a thin slice of wholemeal bread and butter with some smoked mackerel for breakfast. We'll see what that does - it was over 10 before insulin and breakfast.

I hope to have a 2nd meal today. If I can be bothered, it will be the steak with mushroom and onions. The French style peas didn't cause any problems, so that's an advance.
 
Friday 17 February - bed 8.1 FBG 7.6. BGs lower than I expected with this bug. I'd already decanted myself to another bedroom to try to stop Hubby getting this. So far, so good. I didn't budge from the house today.

B. TAG and 2 slices of SRSLY toast with pate.

L. Nothing

D. A scallop & prawn mix with a white wine/ creamy sauce (Hubby followed my directions). CC little chocolate pot.

Lots of water, hot showers and paracetamol. Not forgetting Vicks!

Saturday 18 February - bed 7.8 FBG 7.2. If anything, I felt worse today than yesterday, but I knew I'd have to drag myself out to get something for dinner. Son came too (which I was happy about as I really was not great).

B. TAG and 2 slices of SRSLY toast with ox tongue and cream cheese.

L. CC Little chocolate pot and 2 slices of SRSLY Fruit loaf when I got back from shops.

D. Usual cold cuts. Ham, roast beef, chicken, ox tongue, pork & egg, mini German sausage and coleslaw. Yoghurt & raspberries.

An occasional treat is fine (he does get his Magnums), but he has a bad habit of going in a huff if he doesn't get continuous "treats" to the exclusion of everything else. We all ration his consumption, but we do get "huffs" in return.

My sister was a big fan of oxtail. A really tasty thing when cooked. Looks really good.
 
10ish kefir with my supplements
1ish fried a few mushrooms and two eggs in butter and served on low carb toast followed by some frozen berries mixed in with yoghurt and two squares of 100% chocolate
3ish gave in to a low carb cake treat - as I was having a very busy day balancing on ladders and using loppers to cut back in height and generally tame a large tall Berberis hedge ! Suffice it to say despite a jumper and thick gloves the Berberis took it's revenge - my arms and hands this evening look like I have a bad tempered cat! And yes I have had a bad tempered but much adored cat in previous times! Said cat had double red dots on his veterinary records to warn the vet. That particular cat ,- Apollo - attacked a gas central heating engineer once who had the audacity to try and remove his favourite radiator from the wall as it needed replacing. The image of the swearing engineer stuck holding a heavy radiator and a fat angry cat hanging off his arm stays with me!
5ish slow cooked beef with sweetheart cabbage and one hm small roast potato followed by another low carb cake - supplies running low must put another order in for more low carb goodies.

Same today as yesterday - left it at breakfast. Did make some mackerel pate with the last mackerel fillet, early on but after that, started feeling off. Too late to bother cooking by the time a felt reasonable, so I just had a RyVita with the little bit of pate that wouldn't go into the tub. It's sufficient for tonight. No promises to myself or anyone else about tomorrow.
 
@AndBreathe and @maglil55 the long cooking was probably the main thing resulting in the super succulent oxtail but the gravy was fab - h/m stock with soy sauce and a dash of fish sauce for added umami. I was hesitant about the last ingredient but it worked brilliantly. Hope you feel better soon Maglil.

Today we took grandchildren out for breakfast. They had waffles. I had the veggie option with added bacon ( Halloumi, eggs, tomato and garlic mushrooms) having turned down the hash brown the chef must have felt I was missing out on potato and added extra fried spuds to the mushrooms. Didn’t realise until I’d eaten half of it.
Late afternoon roast dinner at home - chicken, cauli cheese, puréed swede, and roast broccoli. Few glasses of wine then a lc cake with tea later on.
 
B: ff greek with milled linseeds
Morning baking a lc coffee and walnut cake. 13 squares now safely in the freezer. 1 sq in me, one in husband, one in son. Must nip this idea of them eating my lc goodies in the bud, ASAP.
L: a bit of cheese, 1 hard boiled egg
Afternoon in the garden cutting back shrubs. Bit of a moment when hubby bought a big branch down on my head, but I survived!
D: roast chicken, buttered leeks and broccoli. 2 glasses white wine with soda. 1 small lc chocolate mousse with extra thick cream
