What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a food dr bar
Skipped lunch.
Mid afternoon: black coffee and a Aldi protein bar.
Dinner: chicken with pork and apple stuffing, broccoli and runner beans.

ust caught the end of a programme on the Food Channel where they were demonstrating brocolli rice using just the brocolli stems. Interesting. Also demonstrating brocolli stem baked chips. Also interesting. Not that I'm very keen on brocolli but it's worth trying.
I always save the stems. When I have 3 or 4 (they keep for ages in the fridge) I either use them in soups, chopped in fritatta or for rice or part of fridge gravel (which is basically multi veg rice).
I always remember being I the supermarket once when a lady was moaning to her husband how big the stems were. When I suggest she save them (or freeze) and use them for soup she looked at me as though I was mad. So few people these days make the most of what they buy.

I shall have to try them as baked chips. I do use swede and celeriac that way so can see it would work, I'm just wondering if the colour would be unappealing.
 
B: half a crisp pear with yoghurt and seeds.
An hour later still hungry so 2 , yes 2 nut bars.

L: a bit of cold pork and a bit of ham.

D: filo pastry meat pie, not at all low carb but had had a busy day and fridge was bare as away again tomorrow. Did at least have green beans

I'm another who uses as much of each vegetable as I can. Everything can go in lumpy soup. I was astonished to find a friend throwing away the green parts of spring onions! Apparently she didn't know you could eat them........

I have a heavy cold at the moment so my normal eating regime is in abeyance. Still keto, but not IF for quite as long as usual. Today will start with either lumpy soup or avocado, depending if the latter is ripe yet. Dinner will be egg, bacon & sausage, but that's a LONG way off.

MIA again, can’t believe its Thursday.
All brekkies slice of LC toast and lots of tea.
All lunches small plate of variously ham, finger Shropshire Blue, two small toms and 2 inches cucumber chopped up and spoon of coleslaw until it ran out.
Supper Tuesday was roasted chicken with Med veg.
Wednesday 2 plant burgers topped with Portobello mushrooms.
Tonight will mushroom omelette and Friday will be chunky cod fingers with green veg. Then off to Espana and some great fish in our favourite restaurants.
 
Breakfast: bits and pieces of ham, smoked salmon and h/b egg with tea.

2nd meal will be some more of the chicken curry from last night. Plenty left.

Done a lot of the baking - well all of the actual baking, it just has to be finished off. Not quite shattered yet - my legs are still dodgy, but a bit better than yesterday so I have some mileage left in them for the rest of what has to be done today. Sandwich fillings mostly, to be put onto dainty little sandwiches tomorrow. Another Move More class this afternoon and hope it doesn't make things worse - beginning to wonder about that.

Big gardening day today we've had so many wet days I was determined to get out there while sun out especially as rain predicted again over next few days.
First thing kefir before got out there
About 2pm a small cheese salad with range of salad including kimchi and olives followed by home cooked rhubarb with yoghurt

Dinner slow cooked chicken on bed of cabbage and glass of red wine followed by a few squares of 100% chocolate Montezuma with orange oil.

Dinner: crispy cheese, tomato and mushroom omelette followed by SF cherry jelly and cream.

(New HbA1c result today 39, just squeaked into the 30s! :))

Morning all. Son is on his way back to USA and I'm bereft. He's been with me a month and it's been wonderful. Diabetes was ignored but am now back on Keto. Forgot to take my level this morning but was 6.6 last night. I have some bone broth and am going to make lumpy soup for the day to get back into some sort of discipline. Have a nice day all.

Oh goodness Rosemary that month went quickly, it must have been wonderful. That reading last night was good. Good luck with the broth and soup, still the weather for it!

Where did that month go? Seems like just a few days ago you were eagerly looking forward to his visit. Hug for having to part again.
 
Trying to get this place into some sort of order before I eat anything. It's a bit of a disaster because I ran out of steam in the afternoon. However, I did get all my baking done and finished off, plus made some dainty little sandwiches. A few bits and pieces left to do, but not a great deal (have to make something for vegetarians/vegans). Last lot of dishes cleared away and am about to empty the dishwasher which I loaded and put on at 3.30 this morning.

Then I will have my breakfast. It will be a small amount of egg mayonnaise, left over from sandwiches and some salady bits and pieces.

2nd meal today will be beef mince with peas and cauliflower rice. I asked Neil to get brocolli but he came back with sprouting brocolli. I daresay it would work with the cauliflower rice, but I think I'll just use it separately another time.

I remember when on honeymoon in Poland, (many, many years ago) it was an education how food was reused the next day as something that looked, and tasted totally different. We were staying with various friends of my mother. I remember when they taught me how to make Borscht, I always thought the green bits were cabbage. It wasn't! It was the beetroot leaves. It was the most delicious soup, but an expensive stock to make nowadays, as they used veal.

Congratulations on the HbA1c! Your omelette has reminded me of an omelette version I haven't made in years - a souffle omelette. I must store that thought as they were quite delicious.

That was a very quick month! Having said that, DIL's parents are also here from the USA for a month, and they only have 1 week to go now. Seems like no time since they arrived.
