What have you eaten today? (Low carb forum)

Made my low carb quiche this am - see earlier post for method. I had small piece with sauerkraut and a few nuts and 100% chocolate
I love trying out new things and after listening yesterday evening to the latest feel better live more Dr Chatterjee podcast

It's an interview with the Glucose Goddess aka Jessie Inchauspe who gives some hacks she feels research support s stable blood sugar. One of them is drinking one tablespoon of good vinegar 15mins before dinner so decided I'd give it a go.
15mins before dinner had a tablespoon of local fermented Apple cider vinegar with soda water will try for a week or so and see I can get used to it!

Dinner had in the order that should help stabilise sugars more - first salad and sauerkraut next hm Mediterranean chicken and lastly a treat of four small home made pre cooked and frozen new potatoes chips cooked in duck fat. Also small glass of red wine followed by low carb cake and decaffeinated coffee.
Tested blood sugar 2 hours after first bite and slightly lower than usual for this meal so I'm going to experiment for a while. It may be just the meters margin of error but I love trying things and this seems interesting.
 
@DJC3 took on your challenge to try out using a DGF wrap as a low carb base for a quiche and had a real success worked so much better than expected I even rolled it out a bit further to fit my tin better. Here is recipe and a photo of finished productView attachment 60714View attachment 60713

That looks fantastic! I’ve been meaning to try for ages now so thanks for taking the plunge. Did the ‘pastry’ underneath crisp up or stay soft?
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a phd bar.
Dinner: fry up of eggs, bacon, baby tomatoes and mushrooms plus a small blob of low salt, low sugar tomato ketchup.
I have an operation tomorrow so I’ll be NBM for a large portion of the day, I have a few low carb snacks packed for when I’m allowed to eat, as there will only be the usual carb fest available that is hospital food!

It was lovely and crispy when first out of oven However it's softer now has been stored in fridge because of dampness of veggies and I may also have put in fridge too early!
 
B- cheese and ham egg muffin ( basically a microwaved omelette)
L- tin of mackerel, h/b eggs & salad sprinkled with seeds and a dressing of ACV and OO. Toasted SLC then a DGF Notella mini egg.
D- chiploatas, garlicky spring greens, airfried mushrooms and cauli.
@shelley262 you’ve reminded me, I used to drink a spoonful of ACV in water every morning as I’d heard it was good for BG control. I can’t remember when or why I stopped. I got to quite like it.

Good luck tomorrow well done on getting prepared for food for recovery time take it steady and hope operation has excellent results.

Hope all goes well tomorrow, how long are you expecting to stay in?
 
Big breakfast of double usual amount of ff greek yoghurt and 3 times (spoons) usual amount of seeds. 2 reasons, heading home tomorrow and these weren't worth taking home, and have nice meal booked at 6pm so aiming for just 2 meals today.

1:30 failed. Had half a large piece of banana nut bread in a cafe . Hubby had a large cheese scone and the other half the nut bread

6pm 3 oysters baked with garlic and parmesan, potted octopus, seabream in garlic, crayfish and spinach butter sauce.1 glass white wine.
Although the oysters were nice they'd lost their fishiness, think I prefer them raw. The potted octopus was a nice texture and low carb, but needed a bit more flavour. The seabream was lovely. Came with new potatoes, I ate 2 very small ones.

Coffee with semi skimmed milk x 2 + 1 during the morning.
Lunch: scraped the tuna filling out of an empanada, ate with lots of salad, coleslaw and two small pieces of traditional baguette ( estimated carbs 22)
Tea. With semi skimmed milk
Dinner: Brocolli, carrots and peas. Very small portion of chips. Fish balls à la créole. Mayonnaise. Water and wine.
Estimated carbs 32.
Bedtime lemon and ginger tea no carbs.
 
B: shake thing (10g steel oats, 8g psyllium powder, 15g faba protein powder, 250mL hazelnut milk, 15g sugar free drinking choc)
L: 3 rye crispbread with ham, lettuce, tomato
D: chicken mince, chilli, garlic, ginger, oyster sauce, soy sauce, pepper. Zuccini ‘noodles’
Snacks: strawberries, pistachio nuts, protein bar, no added sugar icecream
pre-bed drink: same as breakfast without the oats

I’m having the pre-bed drink most nights now for 2 reasons: 1) my DE wants me above 7.0 prior to sleep; 2) the dietician said I should have a snack before bed (not knowing I have 4 or 5 snacks after dinner anyway hahaha)
 
Good luck with your operation Annb! If you're getting a general anaesthetic, I'm slightly jealous. I love the floaty feeling it gives you as you drift under.

B: Shake thing with ½ avocado, half measure vanilla whey protein, bit of psyllium husk, cocoa, chia seeds. Was hoping for very thick and delicious chocolate milkshake vibes. Instead got overpowering vanilla and freshly-cut grass. Added some salted caramel skinny syrup and that sorted it right out. Still not the decadent chocolate milkshake of my dreams but I'll take what I can get.

L: Haven't decided yet. I need to do some batch cooking today so it might be mushroom soup.

D: It's my husband's birthday and he wants to go to our local pub for a meal, so I need to get looking at the menu. If all else fails, they do a carvery so I'll go for the non-carby options.
 
Maglil, what does the Ploughman's pate consist of? Is it meat pate or cheese? I love pate but have to make it myself because there's always something in the commercial ones that I can't have. I ratherf fancy the idea of a cheese and pickle pate.
It's an aspic jelly on top, a sharp cheese centre, and a pate on the bottom. It's really nice tasted. First time I've seen it in Tesco, so I don't know if it is special for the Coronation or a new summer item. I'll look to see if there is any clarity on it next time I'm in (which is frequent thanks to son!)
 
Wednesday 3 May bed 6.7 FBG 6.6. I now collect eldest a bit earlier on Wednesdays pre lunch. I also make their dinner on a Wednesday, so it's a busy morning.

B. TAG and 2 slices of SRSLY toast with Tesco's Ploughman's Pate. Benecol dairy free.

L. 8 almonds

D. A bit of an invention test! Everyone else was having pasta. I used a chicken breast, butterflied it, seasoned with paprika and garlic, then pan-fried. Additions were broccoli, spinach, exotic mushrooms, yellow santini tomatoes, chicken stock, parmesan, and a touch of cream.

Can't believe you have written about the Glucose Goddess!!! My son just sent me her book and I have just had a small plate of broccoli before my lunch!I am so happy someone else has found it.
