What have you eaten today? (Low carb forum)

Morning all. Very happy with readings, getting down to the fantastic fives so today I'm going to have the last of my tuna melt 'cakes' with salad and a couple of new potatoes (see if they spike me) and some cheese and a couple of crackers for tea. I'm going away for a few days on Sunday so won't be posting. Have a great week everyone, ttfn. (That dates me lol!)
 
So back to yesterday.
Usual brekkie of slice LC toast, good butter, copious tea.
Lunch was slices ham, mortadella, one tomato, cucumber, spoon cheesey coleslaw preceded by AVC.
Supper was delayed (from Fish Finger Firsday!) chunky cod fingers preceded by roasted asparagus with OO. Cheeky two gin & soda and small pack of peanuts beforehand which did my BG no favours this morning!
I am wondering if I had the AVC in the evening would work better for FBG but I often have a gin & soda while I prepare the meal and I wonder how that mix would work. Only one way to find out I guess. I have no problem drinking it in a little soda water so could try some with lunch and supper.
Today same brekkie.
Lunch will be cold plate of leftover mortadella with chopped salad, spoon of coleslaw.
Supper will be cauli bhajee and Tandoori King Prawns. Will swerve the popadoms, got into trouble with peanuts last night.
 
Yesterday:
Breakfast: 2 cold, leftover pork sausages with a little that was left of the stuffing mixture (tomato, onion, garlic and peanuts).
2nd meal: salmon baked in yoghurt and lemon juice, cold, with 2 RyVita crispbreads.

Today:
Breakfast: will be Spanish style tortilla with ham, courgette and sweet pepper.
2nd meal: will be chicken with lots of garlic and lemon and a baked potato skin from the freezer. First time I've tried this, so will see what effect it has on BG.

2nd and last day of PHC conference today - enjoyed it but spent most of it listening on my ear buds while gardening - it's been such a lovely day here with lots of sun.
First thing kefir
Pre lunch ACV in water then for lunch fried some mushrooms and two eggs in olive oil followed by some 100% chocolate
Pre dinner ACV in water then starter of hummus and vegetable crudites main of LC hm chicken curry with LC roti and glass of red wine followed by LC cake and decaffeinated coffee.

I hour and 15 minutes ago I took a dose of insulin which I thought would cover me. BG was 7.6. After chicken with garlic and lemon and 2 half potato skins (the potato was the size of a small egg) from the freezer. It was 7.9. I always have to take insulin but the amount was only 2/3 of what I have taken in the past. Reasonably successful, I think.
 
Saturday 20 May - bed 7.9 FBG 7.8 Got a lot of maths revision done while youngest was at jujitsu. My head was buzzing with straight line symmetry, corresponding angles, and lots of other things buried in my brain! At least I know what to revise with him next week.

B. TAG and the last bit of crustless quiche

L. Nothing. I was still out and about.

D. Cold cuts. Slice each of ham, roast beef, corned beef, pork & egg, ox tongue, and coleslaw. CC little chocolate pot and raspberries.

Ah, well, back to producing revision quickies for grandson.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and an Aldi protein bar.
Skipped lunch.
Mid afternoon: black coffee and a phd bar.
Dinner: egg mayo on a LC roll with coleslaw followed by DGF coronation cake.

Someone on a keto Facebook page said that The Low Carb Food Co is going into administration. I get my bread from them. If they do fold what are the breads from other companies like? Keto Chefs or Seriously LC for example?

Cwc and early yoga followed by lidl shop led to
Cold chicken with mayo, and 30 minutes later 2 drumsticks about 11:30.
Tablespoon rhubarb with tablespoon cream

A lovely walk to and around a local big house's open garden. Was great seeing behind the walls I've walked past for over 30 years and always wondered what was behind them. Now I know and it was very nice indeed.
Son had cake with his tea so I had 2 tiny bites, orange and poppy seed, very nice. Just tea for me.

D: was taken out as birthday eves surprise. Turned out to be a branch of an Argentinian steak chain a couple of towns away. 3 of us shared a taster plate of 4 types of steak. Very tasty indeed. I had salad, boys also had chips and starters and puds and coffee...so just who was this really a treat for??

Was very pleased with the steak but the prices on the rest was really not worth it. For example a banofee pie dessert was served in a cocktail size glass so had 3 slices banana, a bit of cream and caramel sauce, not a lot for £7.50.
They even charged £2.95 for each sauce to go with the steak. We chose chimichuri which turned out to be dried herbs in oil, perhaps 50p max for the ingredients.

Finished the evening at home with 3 squares espresso chocolate and a brandy with soda (the restaurant wanted £8.50 for the latter)

I'm a SRSLY person. I believe their sliced bread is the best on the market. I love their seeded rolls and their artisan seeded loaf as well.

BG bottomed out at 4.9 after 3 hours and then rose again. Now 7.5. The skins, of course, were mostly fibre so they shouldn't have had a severe effect on BG. I'll try again in a few days. I've mashed the insides of the potatoes and mixed them with some cooked leeks so have the basis for some leek and potato cakes when they come out of the freezer. They might be a bit more of a challenge.

Meantime I have made some curried lamb and some traybaked lamb and courgette and still have quite a lot of the chicken, lemon and garlic left to use up. A major shop once a week means that I have to cook things before they go off or out of date. But that is what it is going to have to be for the next week or so while the car is sick (it's more me that's sick at the projected bill for repairs when it eventually is done). At least I have managed to bag a couple of Tesco delivery slots for the next 2 weeks.
 
My birthday today! Happy birthday for tomorrow, @MrsA2. May birthdays are lovely when the weather is nice.

B: Sausage patties with chaffles and courgette.

L: Chicken satay sticks, protein pudding, both grabbed from Lidl and eaten in the car. Made myself a spoon for the pudding out of the foil lid and felt like a genius.

D: After a long trample through the woods, we found a pub. It was the first time I've had to ask for changes as nothing on the menu was quite right. They happily swapped chips for broccoli and so I had steak, broccoli and pea shoots with peppercorn sauce.

Called in to Sainsbury's on the way home and spotted Truvia was half-price, so I loaded up on that as it's my favourite sweetener for drinks and sprinkling on things.

Dessert was also from Sainsbury's and I tried a Coconut Collaborawotsit chocolate pot for the first time (they were reduced) with some raspberries and a dollop of clotted cream, also reduced.

I'm going to have a crack at making low carb ice-cream tomorrow with the rest of the clotted cream.

Morning all. Happy Birthday @MrsA2. Hope it's a beautiful day where you are too. I'm going out with some friends for a carvery today so sticking to the rules will be easy! Slice of cheese for tea. Tomorrow its pensioners lunch and after that I will be going away for the week to stay with my granddaughter. So see you next weekend. Have a lovely week everyone. :joyful:

If this is the case (never used any of those companies, so hopeless there), the Administrators are obliged to save the company of possible. Fingers crossed.

If it comes to the worst, depending on how they are set up now, they may do a phoenix job.

Have to think about breakfast soon. I really rather like the idea of egg mayo having seen the pic that Rachox posted. So, I'll have to wait until I have boiled the eggs and cooled them. Maybe I'll just have boiled eggs and boil some extras for tomorrow. Probably a RyVita with it.

2nd meal will be the remainder of the chicken with lemon and garlic.
 
Another lovely sunny day here again.
I'm sticking with my daily ACV in water plus I ate:
Breakfast two boiled eggs and half a LC roll buttered
Lunch my quick semi frozen yoghurt - just mix a few frozen berries with yoghurt and it produces lovely cool dessert - followed by a couple of squares of 100% chocolate
Dinner starter of small salad with dressing of ACV and OO , main steak with mushrooms and a few hm new potatoe chips and roast asparagus with a shallot plus glass of red wine. Pudding of LC brownie with decaffeinated coffee.

Sunday 21 May bed 7.9 FBG 7.8. Happy birthday, @Stardew & @MrsA2. Swimming lesson day and another Monday holiday tomorrow! I have to fit in Hubby getting to football and picking him up again later.

B. TAG and 2 slices of SRSLY toast with ox tongue and coleslaw.

L. Nothing - out and about.

D. Campari and soda. Roast lamb and lots of veggies. Seared it first, then into the IP with stock, rosemary, and thyme. 30 mins on high, 30 mins slow release. Transferred to my lidded casserole, with loads of veggies, lamb, and veggie stock. 160°fan for 2.5 hrs. Lovely and tender.

CC little chocolate pot with blackberries today.

@Stardew - keto ice cream tends to go rock solid, BTW. There's also a few off the shelf ice creams that are kind of doable so long as you don't go over the top - Oppo, Halo Top, and some of the Jude's ice cream. They all go rock hard, too, but a quick microwave blast sorts it. 20230521_183417.jpg
 
Breakfast: 50g Eat Natural low sugar granola with home-made plain yoghurt
Lunch: portion of home-made low carb fish pie ( no sauce, that was replaced by leeks / grated courgettes, a little sour cream and spoon of wine!) with a little sweet potato topping and some french beans
Snack: 2 slices gouda cheese
Evening: big mixed salad, pot of guacamole, one Cauldron veggie sausage; a few berries with a little plain yoghurt
