Congratulations with your dad!
(I'm Dutch, and we tend to congratulate all family members, friends, and neighbours with the birtday of the person celebrating, so nothing odd about this for me. I still get congratulated with the birthdays of my parents, doesn't matter that they passed away years ago.)
I'm all for toasting our loved and missed ones to remember them!

Your parmesan mushrooms look amazing, how do you make them? I just bought a new piece of parmesan yesterday and the mushrooms are on offer this week so...

Todays evening meal will be the same as yesterday: shawarma meat, onion, bell pepper and mushrooms (told you they were on offer) with a generous portion of extra garlicky zaziki. :hungry:

That’s a lovely custom and he would have appreciated your congratulations, thank you!
I saw the recipe for the parmesan mushrooms online yesterday but I can’t remember where, and didn’t save it so this is how I think it went-
Fry mushrooms in olive oil&butter
Stir in a dollop of cream cheese until melted.
Add cream and grated parmesan and stir a bit more.
It tasted great so whether or not this was the original recipe, I’m happy with it. I doubt exact quantities matter. ( my mushrooms were on special offer too)

After yesterday's severe deviation (2 large cookies and cake) I had the best fasting bg in weeks , 5.2 and the best ketones 0.7. Go figure!

Back on track today
Ff greek with rhubarb and seeds
Tea
Cwc
L: Five guys bacon and cheese burger in lettuce wrap. They gave me plastic cutlery, because the lettuce didn't actually hold in all in. It was lettuce top and bottom but nothing at the sides so it was very slippery. I gave up on the plastic cutlery and got gloriously messy. 7 serviettes messy! Yummy.

D: 2 90% sausages with cabbage. A small ice cream, the 14g per 100 one so about 10g of carbs

S: A mini pepperami dipped in some cream cheese. Pistachios.

Much better day than yesterday, carb-wise.

Breakfast: Bubble and squeak made with the defrosted potato and leeks I put into the freezer a few days ago with 2 fried eggs. BG seems fairly stable.

If I have a 2nd meal it will be some of the lamb hotpot that I made yesterday. I tasted it and it was a bit sweet and lacked something - maybe salt. That would be the swede that I put into it. A bit of tweaking will make it fine though.

Just had my grocery order delivered from Tesco. I had included in the order Tesco Gouda and Edam Crispies. Bad mistake. They are so moreish. They are tiny and each one has 2.1 g carbs. Had 4 before I stopped myself. Must really ration myself and must buy no more! Oh, but they are good. I'm getting away with it because my BG was alfready running low but can't make assumptions about that continuing if I eat more.

Oh my.
I'm very impressed you managed to stop at 4, they're just too good!
Can you give them away before the rest of the pack gets eaten? Having them in the house sounds like serious torture.

I'm unwilling to give them away, although Em had one and liked it. No, I will be firm and ration myself. The first step was to put them away in a box that is difficult to access. Did that. Next step is to be sure to say no to myself when I think of them and I hope that will be enough.

Looks great. Is the crumb just parmesan and garlic powder, fried?
No, is it ever with me . Parmesan, some almond flour (more Parmesan than almond flour), Sprinkle of Italian herbs, and garlic powder. The chicken was beaten very flat as I needed it cooking quickly as the heavier load of Parmesan would burn if the frying was too long.

Thanks, should have guessed there’d be a tweak! It looked wonderful!

B: 3 hard boiled eggs, tea and cwc

L: out with girlfriends at tapas . Did have 1 slice bread to start dipped in garlic mayo. Then prawns, squid, beef and lamb in various ways. Aubergine parmigana, tortilla. There were some carbs but tried to keep it to a minimum. No alcohol! Sparkling water only.
Small ice cream when home.

Skipping dinner, but have nibbled 2 squares of 85% dark chocolate and drank 125ml of a lidl kombucha which tasted jut like ginger beer at a cost of about 6 carbs

B- 2 small boiled eggs and a spoonful of sauerkraut
L- kale crisps and asparagus spears wrapped in bacon with h/ garlic mayo. Rhubarb, h/m yoghurt and seeds. That should have been it but I found a portion of choc chia pud left in the fridge so ate that, then a square of Lindt 90%. What started off as a decent l/c lunch ended up costing me around 20g carbs. I couldn’t believe it when I added it up. Unsurprisingly BG rose more than is good for me.
Did a few squats and lunges to try and bring it down a bit.
D- very late. Went to beach but the sea was still too ‘lumpy’ for swimming so just sat. Back at home I had slow cooker shin of beef with grated cheese on top and a glass of red.
