What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and an Aldi protein bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: egg mayo on a LC roll.

Early yoga and a quick supermarket shop then village coffee morning.
Had 2 cold sausages before the latter so I could ignore the cake.
When home had yoghurt, strawberries and seeds.

Loads of gardening. Only meant to do a bit but kept seeing more jobs!

D: lamb steak with roasted aubergine, courgette and tomato. A small coffee icecream and a dgf cake
 
I'd better catch up before I get too far behind! The things that remind you of Goonergal. It's not that long ago that she asked how I remembered days back what I'd eaten. Of course, it was because I record it. Just ad well!

Tuesday 27 June - bed 7.9 FBG 7.6 Still on the school runs today, but I'm really looking forward to the holidays.

B. TAG and 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. A cheese triangle while getting eldest's lunch.

D. Got a small deli chicken in M&S (the aroma when I passed was too hard to resist), so dinner was chicken salad. CC Little chocolate pot and raspberries. This was anniversary day, but didn't do anything as there was still another day of school to go.

Wednesday 28 June - bed 7 FBG 7.3 - Last day of school!

B. TAG and 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. A SRSLY sandwich with mashed boiled egg.

D. M&S GF sausages, slice of GF Black pudding, fried egg, san marzano tomatoes, peas & pancetta. CC little chocolate pot.

Thursday 29 June - bed 7.7 FBG 7.2 First day of the holidays, and I was confused! It felt like Saturday, and I was almost late for Aqua as a result.

B. TAG and 2 slices of SRSLY toast with cheese triangles. Benecol dairy free.

L. A bit of crustless quiche

D. I'd had a longing for salt & pepper squid, so I dressed some with a mix of milled flax, parmesan, and salt & pepper. Had it with lettuce, tomato, cucumber, mayo. CC little chocolate pot with raspberries. Moretti Zero. I did have 1/2 a fulfil bar at some point.

@Antje77 glad you are showing signs of recovery. @DJC3 - your little red squirrel looks much nicer than the grey that keeps digging up, and stealing my miniature spring bulbs! I need squirrel repellant!

Well it just goes to show how insulin resistant I am. I had a white bread roll with ham and Dijon mustard for my lunch yesterday and 3 hours later my BG was 11.1 :arghh: Well I won’t be eating bread rolls anytime soon.
I’ve only had coffee, kefir and black tea so far today as had back to back visitors (my friends are like London busses, you don’t see them for a while then they all come at once!) and just tested BG 6.1 :p Anyhoo ribeye steak for dinner this evening

So back to yesterday
Brekkie usual slice LC toast, butter, copious tea.
Lunch tin smoked mackerel and small avocado.
Supper t/a Tandoori King Prawns and cauli bhajee.
Today same brekkie.
Lunch wedge of bacon & cheese quiche with leftover Dr Almond bread slice with butter. Tea.
Supper stirfried Thai chicken from the farm shop with mixed pepper matchsticks and spring onions with some noodles mixed in, very little for me!
 
Evening all


I revel in food preparation and cooking with fresh garden herbs. Not that there's anything wrong with dried herbs, but they're not quite the same. As you pick over freshly cut sprigs, their fragrance wafts up from the chopping board. Lift the lid of your food processor and the aromatic scents of herbs fill the kitchen. Then you start to cook and the aromas mature and change again. These pleasant sensations have all but replaced the ritual tasting that I once indulged in while cooking.

In Winter, I rely heavily on rosemary and thyme, but at this time of year we're spoiled for choice. Today we enjoyed our first French tarragon of the year at lunchtime. Tomorrow, weather permitting, I hope to harvest the first chervil for supper.


B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and a tomato, garnished with flat-leaf parsley and seasoned with one or two grindings of black pepper.
Water to swallow tablets
Espresso.

L: Baked whole sea bass, belly stuffed with French tarragon and garlic, drizzled with olive oil, accompanied by asparagus spears with butter and a medley of broccoli, leeks, and red peppers with garlic.
Low carb pudding made with milled flax seeds, homemade granola, unsweetened almond milk and cream.
Water to drink.

D: Berkswell ewe's milk cheese and salad made with lettuce, Romano peppers, celery, salad onions, cherry tomatoes and black olives, a dollop of homemade mayonnaise with garlic and mint for dipping, topped with pecan halves and macadamia nuts roasted in butter
Water to swallow tablets.

Breakfast kefir with hemp seeds
Lunch half a LC roll with ham and two small tomatoes then I opened a large bag of nuts I bought - why? - and had too many plus more during afternoon I often end up hearing how good nuts are for you nutrition wise - lowering cholesterol etc etc - and then forgetting that I'd decided that big bags of nuts are too tempting for me and shouldnt buy as I can't restrict nuts especially good quality mixed ones. Nuts are low carb and good for you but only in small amounts!
Dinner ACV in water then steak and salads with glass of red wine and a few garden berries with yogurt and just now yup you've guessed it a handful of those naughty nuts!
 
Brunch- 3 egg cheese omelette with ginger and turmeric sauerkraut.
Dinner - DD keto chicken and mushrooms with tomato cream sauce. Served with steamed broccoli and a couple of glasses dry white wine. This is a super easy and delicious meal, I highly recommend!

B: ff greek with strawberries
Long walk with a friend
L: 2 slices HiLo bread with camembert and quick pickled red onion. A small ice cream
Mid afternoon, a piece proper cake at a do. omg it was so sweet

D: finished off the camembert, then roast chicken with green beans,cauliflower and roasted veg from yesterday. Pud was strawberries, alpine strawberries and raspberries from the garden with 2 tablespoon double cream.

@shelley262 im with you on the nuts. Too easy to eat when a packets open.

There are more than a few LC bread/roll suppliers out there. I use SRSLY. Not cheap, but satisfying the longing for bread. I had "fun" making my own at first, too. The bread I could do, but my rolls had an annoying habit of coming out hollow!

I remember years ago the best meal I’ve ever tasted was a fresh herb omelett. I’ve never tasted anything quite like it. It must have been over 30 years ago and I still remember how wonderful it was :)
 
Friday 30 June - bed 7.6 FBG 7.3. @Annb - I hope all goes well on the trip to Glasgow. Interestingly, I, too, have been "amusing" myself clearing clothing. 2 visits to charity/recycling so far. @shelley262 The time to your cruise will fly by. A few days of no early rises have revived me again.

D. I enjoyed the squid so much that I had it again, and this time, I remembered a photo! I added in a boiled egg, beetroot, and alioil to have with the squid. CC little chocolate pot with raspberries. Moretti Zero, too.

Saturday 1 July bed and FBG both 7.9. I was out for a while shopping with my son (who couldn't go yesterday). It was a bit of a wild day, too!

B. TAG and 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. The other half of that fulfil bar I had earlier in the week.

My food today:
B - I can’t actually remember, worryingly. I expect it was eggs in some form.
L- Edam cheese crisp bread with sauerkraut and some nuts and 90% choc.
D- Cajun beef brisket. The lovely farmers wife where I get my beef posted this recipe. https://trewayfarm.co.uk/recipe/cajun-spiced-brisket/
They have a big carnivore customer base and she went along to the PHC conference in Sheffield this year ( wish I’d known -I could have cadged a lift) as a result of what she learned there, she and her family are now following a ketogenic diet.
The beef was lovely, served as she suggests with stir fried peppers and sour cream, also roast broccoli and a spinach, feta and pine nut salad. IMG_2969.jpg

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and tiger prawns seasoned with black pepper.
Water to swallow tablets.
Espresso.

L: Courgetti alla puttanesca made with anchovies, black olives, capers, canned tomatoes, garlic, olive oil, butter, parsley and spiralised courgettes. Steamed French beans garnished with a knob of butter.
Raspberries and Greek full-fat yoghurt.
Water to drink.

D: Seafood salad made with brown shrimps and mussels, lettuce, sweet cicely, Romano peppers, celery, cherry tomatoes, chervil and salad onions, with a dollop aioli for dipping, topped with toasted sunflower and pumpkin seeds.
Water to swallow tablets.
 
B- creamy scrambled eggs with garlic scapes. This is my new favourite dish! I’ve looked online to see where I can get more of the scapes but the season is now over so I’ll have to wait until next May. I might try growing my own elephant garlic and see what happens.
L- tin of mackerel in olive oil. Salad of spinach, avocado, mixed tomatoes and ACV dressing. DGF Notella cookie ( frozen) with black coffee.
D- slow roast rolled lamb breast with steamed broccoli and some leftover sautéed peppers from yesterday. Paul and I ate the whole joint between us, it used to feed 4 when my daughter and her partner lived with us. Feeling v full now! Glass of red. IMG_2971.jpg
