What have you eaten today? (Low carb forum)

I liked these too but after reading the book Ultra Processed People from Dr. Chris van Tulleken, I stopped having it as these are definitely in the category of ultra processed foods and after reading that book I don't think there is any chance one would be able to continue eating UPF.... it is one book I whole heartedly recommend as a good read.
It’s personal choice I suppose.

Sounds like an interesting book recommendation…I am now 27th in wait line for my library!
 
Contemplating going to the pool tomorrow for my class of doing funny stuff in the water on music with mainly older people. Pretty sure it will end in lots of coughing and not being able to even remotely keeping up, but I'm also getting pretty bored at home and I like being in the water. So I might just go and see if I can actually do something.
It sounds as though you are on the up but that cold is still not gone. Don't try to push yourself too hard while you can't get your breath properly, even if you do feel like doing some exercise. Hoping it all clears up soon.

Breakfast today was bacon and eggs and an end slice of wholemeal bread, toasted. The toast is still stuck in my throat so I'll have to have a drink of some sort soon.

2nd meal will be smoked mackerel with a tomato and cucumber salad and maybe some coleslaw.

Managed to fill a large suitcase with clothes emptied from one of my wardrobes - sad to see some of them go, many are just so nice that I want to hang on to them, but there's no point. Alistair took it to DIL to see if there's anything there she can use before they go to the charity shop. Almost emptied the trouser cupboard, leaving myself with about half a dozen pairs and the same with the cardy/tops one. So that's another suitcase full for him to take for me. The wardrobes are just rails with an army of coathangers on them. Still have another rail with scarves, headscarves, shawls and pashminas to sort out. Most of them have been gifts from people thinking I needed to keep warm - correctly; I am a cold morsel (bit more than a morsel, of course).
 
First of all I have discovered a new site for simple keto recipes called maebells.com - oc it may not be new to all of you. Its American measures but quick and simple with short list of ingredients which is right up my street!
@Antje77 sorry this “cold” is still carrying on, sounds really horrible. Sometimes inhaling steam from a bowl of hot water with some eucalyptus oil (put a towel over your head to lock the steam in) can help clear the tubes!
Back to business. Today usual brekkie of slice LC toast, butter, copious tea.
Lunch was three thin slices of Dr Almond country bread spread with Dairylea and small pieces of my h/g cherry toms on top.
Supper will be smoked haddock cooked in a small carton of double cream with cooked finely chopped shallot, and a big handful of chopped parsley and tarragon. Served with rice, cauli rice for me!

Drizzly rain today welcomed us back to reality. Holiday well and truly over.
B- eggs and Edam cheese crisp bread. ( I tried making this while we were away, no baking parchment so put it directly in a plate which then exploded in the microwave! Very embarrassing as we were staying with friends)
L- lettuce boats filled with cream cheese and a deli paprika cauli salad. Few squares Lindt 99% Dark Absolute.
D- pasture fed fillet steak from the local farm. Topped with sautéed garlic scrapes ( these are the stalks which grow out of the centre of elephant garlic flowers) spinach and mixed tomato salad with ACV/EVOO dressing, Halloumi and fried mushrooms& onions. Red wine. IMG_2953.jpg
 
@PenguinMum thank you for the new, to me, recipe website - it's always good to check out something new - although I don't do new stuff as much these days, it would be good to try different stuff as get stuck into a set meals pattern like today - always have salmon on a Friday. I'm also popping into Sainsbury's next week so will look out for the wraps you recommended.
@Antje77 sounds like your current lurgy is improving - hope this continues.
@DJC3 and @MrsA2 your hols looked amazing I can't wait for mine in 2 weeks time.
@maglil55 pleased you enjoyed your meal out and hope that school hols will bring you some restful times and a break from those viruses!
@Annb well done on your clothes declutter I love a good sort out and cleared our shed out yesterday ready for a refelt of the roof which is currently leaking and growing a good crop of moss!

Breakfast kefir with hemp seeds and a few raspberries from garden
Lunchtime one egg on slice of LC toast then a couple of squares of 100% chocolate
Mid pm last slice of toasted LC fruit loaf
Dinner ACV in water water then salmon in Lemon butter with peas and glass of red wine then LC crumble and yoghurt.

Evening all

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado, seasoned with black pepper and a wedge of Berkswell ewe's milk cheese.
Water to swallow tablets
Espresso.

L: Packed lunch made with leftover cauliflower 'tabbouleh', lettuce, Romano peppers, celery and cherry tomatoes with a dollop of homemade mayonnaise.
Almonds and hazelnuts.
Strawberries to round off lunch.
Water to drink.

D: Smoked salmon and cream cheese salad using lettuce, fennel fronds, celery, vine tomatoes and mustard cress, dressed with olive oil and a touch of lemon juice, topped with toasted pine nuts.
Water to swallow tablets.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and an Aldi protein bar.
Dinner: LC bread with cream cheese, salmon and cucumber.

Dentist first thing so mid morning:
Ff greek with 2 strawberries and 2 apricots. 2 scrambled eggs with a bit of camembert.
Mid afternoon a nut bar.
D: 2 90% sausages, mushrooms and half a tomato. 2 apricots (knew I shouldn't have bought them. They are in the fruit bowl on the side and I keep having one or 2 everytime I go past.) 1 small ice cream.

My weight gain means I'm concentrated more on food. Think perhaps I've been eating between meals too much.
Contrary, because I know I have to stop eating so much, all I can think about is food :banghead:

There are some really interesting recipes on that site. I'll definitely be using them.

Well - it wasn't. When I took the packet of mackerel out of the fridge I discovered it was 10 days beyond its use by date. Had it only been a couple of days, I would have used it, but 10 days is a bit much, so it went in the bin. Decided on cheese with the salads, but then ended up just having slices of brie and gouda and forgot about the salad.

I heated some milk for a milky coffee in the microwave but it was arcing. Neil knew what the problem was - it had done the same thing before - so he took the casing off and fixed it. It was pretty grubby on the inside of the casing, so I had a go at cleaning that up - not very well because my arms weren't up to putting enough pressure on but it's cleaner than it was.

We have 3 microwave ovens. All are fairly elderly now and all have broken down and been repaired by Neil in the past. 2 are currently stored away somewhere. I was trying to remember how old the current one is and it must be the first one we bought. That was around 1990 so it must be 30 years old anyway. It is sturdier than many because it is also a convection oven and a grill. The other 2 are younger. Maybe one of these days I'll have to get a new one.
 
Bacon and eggs again for breakfast today.

There is a possibility of sausages and green vegetables later but I make no promises to myself going by my normal apathy later in the day.

SIL has been constantly tired for a while and asked her doctor about her throxine levels, which she knows have been low in the past - that's why she is on Levothyroxine tablets. Doctor checked her records and said that her levels were just within the desired levels - on the low end of the spectrum, so no action was required. She asked him to up the level of medication though and, surprise, surprise, she now feels fine. Sometimes, doctors have to acknowledge that people are different and require a different treatment.

The nurse was asked to take blood from me when I went to get my legs rebandaged but she gave up. One of the tests wanted was for thyroxine. The opthalmologist thought that could be the problem with my eyes so maybe that was what the test was for. Maybe that is also why I am always tired.

Dinner lamb curry and LC roti with glass of red wine then a few garden berries and yoghurt.
@RosemaryJackson never tried rye bread but suppose your gut bacteria are not used to dealing with high fibre Rye. Whenever I reintroduce high fibre stuff, which I'm working at to improve my gut health, as when went keto 6 years ago I cut out a lot of stuff i had been eating because of carb count e.g. Now eating pulses but I had reaction when reintroduced didn't remember one when ate high carb low fat - but thankfully I've also noticed that if stick with it my gut settles down. Hope yours does too
 
Evening all

The brief English asparagus season was slow to get going this year and will soon come to an end, so making the most of it while it lasts.

Today:

B: Two poached eggs and scallops topped with chopped, flat-leaf parsley and asparagus spears with a generous knob of butter, all seasoned with one or two grindings of black pepper.
Water to swallow tablets.
Espresso.

L: Tuna steaks rolled in chopped celery and oregano, baked with red peppers and aubergines, moistened with cream and topped with grated Cheddar cheese. Salad using watercress, chicory, avocado, radishes, salad onions and black olives, dressed with an olive oil, garlic, oregano and balsamic vinaigrette and topped with macaadamia nuts roasted in butter.
Skipped pudding,
Water to drink.

D Seafood salad made with tiger prawns and mussels, lettuce, fennel, Romano peppers, celery, cherry tomatoes, salad onions with aioli for dipping and topped with toasted pumpkin seeds.
Water to swallow tablets.
