What have you eaten today? (Low carb forum)

Only tea then cwc, Skipped breakfast and off to exercise class followed by tea with friends
Had blood test at 12:10. At least they didn't cancel this one. (4th try)
Phlebotomist said their system showed I hadn't had a blood test since March 2022 which is strange as I know I had one in January 2023 and my results are in the system.
She also said I was down for only hba1c, but she had the time so did I want a full set, to which the answer was yes. She's even included b12 and vitamin D. Fingers crossed lab actually processes them all.
She even gave me a pneumonia inoculation

At 2pm I got a text saying I need my annual hba1c!!!
The system is definitely put of step.

L: 2 egg omelette with half an avocado and a bit of cheese. Coleslaw and hm quick picked red onions on the side. A dgf brownie (the last of my birthday stash)

Mid afternoon 2 sqs 85% chocolate.

6pm sort of a chicken fricassee, leftover roast chicken with mushrooms and green beans in condensed mushroom soup as a sauce. Boys had their over grains, mine was over cauliflower. A water kefir to drink.
 
I survived the Glasgow trip with stable BG. Stuck as close to woe as possible but did have a blueberry muffin when BG started to drop too far. Actually don't like blueberries, but it was the least sugary thing available in the Starbuck's at Glasgow airport. Despite getting soaked being wheeled around the airport to get to an accessible entrance (about half to three quarters of a mile outside the building in a rain storm). Felt sorry for the woman given the job of pushing the wheelchair but she was pretty fit and almost ran all the way. DIL was struggling a bit to keep up - also getting very wet. MRI experience not as bad as I thought it would be except for a moment just before the scan. I had prepared myself for the claustrophobic experience and knew I could cope with that. I had prepared myself for the noise and knew I could cope with that but, as they got me settled onto the "bed" with my head held still in a "headrest", they put a plastic mask over my face! That nearly threw me, since it was less that an inch from my face, but I held the panic back and it was OK. Actually it was a help because it contained a mirror which gave me a view of the room and didn't let me see the interior of the machine. Anlther bad moment was getting back up after the half hour scan - my back just wouldn't let me move so I had to be slowly raised to a sitting position by the radiologists and allowed to recover some movement before getting back to the wheelchair. Don't want to have to do that again.

It was a good day though. DIL is a very pleasant companion and we had a good time, despite the business at the hospital.

Breakfast was very early and was a cheesey slice of "pain perdu" baked the night before with a half slice of wholemeal bread, cream, egg and some ff milk and cheese. It was OK cold and there is still some in the fridge for this morning's breakfast.

I wasn't too bad in Glasgow. Lunch at the hospital canteen was 2 slices of thick bacon and a big spoonful of baked beans with a cup of tea. Then, of course, that muffin at Glasgow Airport with a latte.

Finally, at home, the last slice of wholemeal bread with copious butter and slices of cold steak. I'd cooked a second steak the previous evening and had half of that.

Today's second meal will be bacon and egg with some tomato dish, or maybe just sliced tomatoes.
 
Well done @Annb on getting through your trip to Glasgow with so much courage and cheerfulness. Hope you can get a good rest now you’re home.
So back to yesterday.
Brekkie usual slice LC toast, butter, copious tea.
Lunch was two slices ham and spoon cheesey coleslaw. Tea.
Supper was chicken breast roasted with local asparagus. Sadly last week of it.
Today same brekkie.
Lunch small bit quiche, small bit cheese and chopped salad. Tea
Supper will be cheese & tomato omelette.
 
Hi there. I had a great light breakfast this morning. 1/2 an Avocado, a sliced hard boiled egg, on a couple of slices of protein bread. I used some Hellmanns Mayonaise to spread on the bread. 8 Carbs. Tasty.

I get night syndrome. I spiked mornings and afternoons on a normal relatively low carb meal. Then in the evening my blood sugar would drop after a high carb meal. So I take Cider Vinegar and a spoonful of honey to try and counteract the low bedtime blood sugar and night syndrome. Now I am trying Keto in the daytime and more carbs at night. Unfortunately I fight 2 battles. I'm also Kidney transplanted, so too much protein is also a problem.

I roast Garlic and make a paste. I stink, but my sugar spikes in the daytime are now better after lunch ir in the evening. Makes for great Tapas using Almond flour Tortillas.

@Annb glad you are safely home again, the plastic mask sounds really unnerving, you did well not to panic.
I haven’t felt very hungry today - unusual for me. Made some tuna melt muffins for granddaughters’ packed lunches and ate one at about 11:00.
By about 4:30 I was ravenous so started to cook an early dinner: pork chop, steamed broccoli and sautéed mushrooms, peppers and onions. The photo doesn’t show the chipolata I also pinched from Paul’s plate ( he originally had 2) I don’t normally eat these butchers ones as they do contain cereal, but they are delicious so I couldn’t resist. @Annb well done on your Glasgow trek and coping with what sounds like a very claustrophobic and difficult to deal with scanner experience. When I took part in a medical research study a year ago the scanner bit of the test was the most scary but they added a mirror for me and it made the whole experience much more bearable.
@Mallyman welcome to the thread garlic paste sounds interesting I use a lot of garlic including marinating olives in olive oil and lots of garlic I also make my own hummus with lots of garlic.I also take Apple Cider vinegar like you but I don't add honey as it causes my bgs to rise whereas the ACV definitely lowers my bgs.

Dinner ACV in water then cold roast chicken and salads then a LC cake and decaffeinated coffee
Today
Usual breakfast of kefir with hemp seeds and a few garden berries
Lunch a Swedish rye crispbread (5g carb per crispbread) topped with ham and tomato then a few squares of 100% chocolate
Dinner ACV in water then rest of cold chicken and salads and glass of red wine pudding LC cake and decaffeinated coffee
 
Evening all

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and Caerphilly, seasoned with one or two grindings of black pepper.
Water to swallow tablets
Espresso.

L: Salmon fillets baked with broccoli, mushrooms, cream and capers. Steamed asparagus spears garnished with a generous knob of butter. Mixed green salad made with sweet cicely, chicory, celery, fennel bulb and fronds, green peppers, salad onions and flat leaf parsley, dressed with olive oil, garlic and a touch of lemon juice, topped with toasted almonds.
Skipped pud.
Water to drink.

D Seafood salad using king prawns, mussels, lettuce, cherry tomatoes, celery, Romano peppers, chervil, black olives and salad onions, dressed with an olive oil, balsamic and garlic vinaigrette, topped with toasted pistachios.
Water to swallow tablets.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a Food dr bar.
Dinner: LC fish pie with roasted Mediterranean veggies.

Friday 30 June - bed 7.6 FBG 7.3. @Annb - I hope all goes well on the trip to Glasgow. Interestingly, I, too, have been "amusing" myself clearing clothing. 2 visits to charity/recycling so far. @shelley262 The time to your cruise will fly by. A few days of no early rises have revived me again.

B. TAG and 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. A bit of crustless quiche

D. I enjoyed the squid so much that I had it again, and this time, I remembered a photo! I added in a boiled egg, beetroot, and alioil to have with the squid. CC little chocolate pot with raspberries. Moretti Zero, too.

Saturday 1 July bed and FBG both 7.9. I was out for a while shopping with my son (who couldn't go yesterday). It was a bit of a wild day, too!

B. TAG and 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. The other half of that fulfil bar I had earlier in the week.

That chop looks lovely! Did you cook it in the airfryer and how long for?

How much ACV do you add to water and how much have you seen your bgs reduce by?
 
Only tea and 1 cwc before dance class.
L: 2 slices cheese on toast on hilo bread, dressed with hm pickled red onions

Mid afternoon 1 scone with jam and 6 strawberries at neighbours 96th birthday. Everyone else also had chocolate cake and coffee and walnut cake too. 1 glass fizzy wine. I didn't need anything but it feels so rude to refuse when someone has gone to so much trouble.

D: vegetable frittata with hm pickled onions and green beans. 1 small ice ceam

Brunch - 2 scrambled cheesey eggs. 1 Low carb Food Co. buttered roll. Mug of earl grey tea. half of a bar of moser roth 85% - does anyones Aldi have the 90% one? - so far my local one hasn't - I keep looking for it but so far no luck

Dinner - 5 strips of chargrilled chicken with a little lemon and herb sauce with large side salad. White chocolate cookie dough carb killa bar with mug of earl grey tea

Does anyone know if slc still do next day delivery? I placed an order yesterday and that option wasn't available and so far I have heard nothing from them
 
I was very happy to find out that the mozzarelly I opened a few days ago was still fine. Didn't feel like cooking so my main meal was to be a large plate of tasty tomatoes with mozzarella, salt, pepper, olive oil and balsamic vinegar, and a slice of low carb bread with black pudding and bacon.

So I cut the tomatoes and mozzarella while frying the black pudding and bacon, only to find out the vinegar had gone off when pouring it over the tomatoes and mozzarella. :meh:

Which left me with this meal, and still hungry.

Thanks Shelley262. I'm relatively new to this. Transplant induced diabetes or as they like to refer to it here in Germany....Type 3. I take no meds just diet and exercise. The roasted Garlic is amazing fresh out of the oven, with the chicken I roasted it with. Peel off some meat, some garlic and some salt. Lovely. My BGL goes into what for me is low. But I feel no effects. My dietician said I should try the honey to try and stave off the night syndrome. But I fought 11.5 years dialysis so I can fight this too. I'm actually very active and fit.
