What have you eaten today? (Low carb forum)

Evening all

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and crevettes, seasoned with a grinding or two of black pepper.
Water to swallow tablets.
Espresso.

L: Baked halloumi and sweet peppers, a small portion of hummus and salad made with cucumber, salad burnet, black olives, rocket, salad onions, raspberries, strawberry halves and mint, dressed with olive oil, garlic, a squeeze of lemon juice and topped with walnut halves and toasted sesame seeds.
Skipped pud.
Water to drink.

D: Planning to have seafood salad using king prawns, mussels, lettuce, fennel fronds, cherry tomatoes, celery, salad onions and mustard cress, with a dollop of aioli for dipping, topped with chervil and toasted pistachios.
Water to swallow tablets.
 
@filly it’s so easily done with strawberries, there are a lot worse things to overindulge in though.
Todays food-
B- 2 egg omelette with spinach and feta.
L- a small portion of leftover shawarma from yesterday, with sour cream and black garlic kimchi. Frozen DGF brownie with a cup of tea.
D- went to the Cornish Fishmonger and picked up a mixed box of fish landed this morning at Newlyn, plus 2 dressed crabs which we had as a starter. Main was megrim with lemon butter and salad. The skin was crisper than I’ve previously managed but still not perfect. I feel I’ve missed one of your important points yet again @maglil55 IMG_2990.jpg

Heard some sad news today about a favourite uncle- mums younger brother - who died after a heart attack. He's requested no formal funeral as my aunt is housebound and his son and his sons family live in Australia. Some quiet reflection by me today though.
Breakfast kefir with hemp seeds and a few garden berries @filly like @DJC3 I totally agree berries are tempting but one of least naughty indulgences.
Late lunch one crispbread with hummus and one crispbread with pate followed by 100%chocolate
Dinner confit duck leg with salad and LC roti with glass of red wine then one slice of LC cake with decaffeinated coffee.
 
B: ff greek with half a pear and seeds

L: one protein cracker with butter, half an avocado and a little lc pickled onion. Not enough as I had carb binge in lidl. Originally I blamed them for giving me a free bakery item, but I didn't have to accept it, nor eat it. I have to take responsibility.

But, as expected my blood test results are in. A mixed bag which I need to analyse further in a separate post. Hba1c is up to 42. My weigh is up half a stone as well.
Must double-down on the carbs... forever, without exception.

D: cajun chicken with salad. Turmeric tea.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a phd bar.
Dinner out at the pub, ‘mini’ mixed grill. Not so mini, hubby had to finish mine off!

Just had a plate of baked beans out of the freezer. I like my home made one but the ones from the hospital canteen have rather spoiled me because they taste like my memory says baked beans should taste like.

That may be all for today. Not sure. I didn't have a 2nd meal yesterday and, at present, don't feel anymore hungry than I did then.
 
Our Island Tescos doesn't sell it, sadly. I'm still intending to make some sort of version of it, but haven't had the energy so far.
They are part of the Tesco summer Finest range. Why not try asking the store. It may not make a blind bit of difference, but it's worth a try.
 
@DJC3 - Hubby was happy to exit Lakeland with my bags with me having spent less than £100! He did agree that I needed "most" of my purchases. Fish crispy skin - pat the bit fish with a bit kitchen towel (or a new Jay cloth) to dry it a little. Score the skin with diagonal cuts. Not so deep it goes into the flesh, though. Next, oil the fish with olive oil, then season the skin with ground salt and pepper. Put a good glug (good cooking term that) into a non-stick pan. You need the pan medium hottish. I just judge this. If it's too hot, the skin catches and burns, but too cool it won't crisp. Put the fish skin side down into the pan, then don't touch it. If it's a thicker fish where you can see the flesh, watch for the fish looking cooked about 2/3rd up. That's the point you turn it and give it a short burst on the flesh side. Don't turn it back to the skin side in the pan. That softens it.
Even I can get it wrong sometimes, although mostly it works!
 
Tuesday 4 July - bed 8.2 FBG 7.2. I have no idea why the higher reading last night. Went with DIL to the Fort this morning. I needed to stock up on watermelon shampoo that only the big boots seemed to stock. I had collected a lot of Boots points, so since my stock was diminishing, I treated myself to Clinique skin creams. I haven't been able to use product of any description for the 6 months during eye surgery. My poor skin badly needs it!

B. TAG and 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. A bit crustless quiche

D. Chinese pork loin chop with salad, mayo and tandoori halloumi bites. Moretti Zero, CC little chocolate pot with raspberries.

Wednesday 5 July - bed & FBG both 6.6.

B. TAG and 2 slices of SRSLY toast with cheese triangles. Benecol dairy free.

L. A bit of crustless quiche.

D. Cajun chicken with tandoori halloumi bites and veggie kebab. CC little chocolate pot with raspberries.
Gin & diet lemonade with a strawberry! I'd been sorting more clothes for charity/recycling!

I have halibut and plaice in the freezer now so will have another go soon. ( my fish box also contained monkfish tails and skate wings but I’ll cook them differently)
I consider leaving Lakeland with change from £100 a great success!

Water to swallow tablets
Espresso.

L: Packed lunch made with leftover mushroom and spinach frittata, lettuce, Romano peppers, celery sticks and cherry tomatoes with a dollop of homemade mayonnaise.
Almonds and hazelnuts.
Strawberries to round off lunch.
Water to drink.

D: Smoked salmon and cream cheese salad made with lettuce, fennel fronds, celery, vine tomatoes, sweet cicely and mustard cress, dressed with olive oil and a touch of lemon juice, topped with toasted pine nuts.
Water to swallow tablets.

I hm hummus with celery and one crispbread with pate then one square of 100% chocolate
d salmon in lemon butter and peas plus a couple of glasses of chilled dry white wine then LC cake with decaffeinated coffee (I'm running low on my LC cakes from DGF so planning an order on restock this evening planning also to order some more LC rotis and keto rolls although I'm going away in a week's time I'll run out before I go and will be good to come back to some in the freezer)

A wander round a NT garden followed by an explore of a new garden centre -which was huge and sold so much more than garden stuff. Was too hot to buy anything though.
L: chicken shwarma, served on flatbread with chickpea salad both of which I left
Evening: a walk to out local microbrewery. Have learned I can't drink on empy stomach so took loads of olives, cheese, sausage and strawberries. Drank 2 white wines with 3x the amount of soda. Boys had 2 and a half beers, was so hot.

That's enough for me, but the boys are having chicken, followed by ice cream
 
Thursday 6 July - bed 6.8 FBG 7.2. Usual Aqua instructor is on holiday, so we ended up with a very energetic instructor who really put us through our paces. Good fun though.

L. 2 slices of SRSLY toast and a scrambled egg.

I feel you.
We had a different aqua instructor as well this morning, who made us do a very serious work out on our arms. All good of course, except I had my first kickbox lesson yesterday, and my arms were already hurting a lot from that! :hilarious:

Had a delicious evening meal of mixed veggies and mushrooms with some marinated pork belly and a fried duck egg, spiced up by watching the Dutch 8 o clock news. During the live broadcast our government fell. I take my hat off for the news people who seamlessly changed their whole broadcast live!

Will have the same meal tomorrow with added peanut sauce. :hungry:

I'm usually completely happy eating low carb, and I usually don't feel deprived at all.
I'm also very happy with my neighbour and his 18 year old son living in a trailer in my garden.
But this does mean that anything they order gets delivered at my front door, and pizza just smells so, so good! :arghh:
Last week at least it was something with fries, giving me the chance to steal a couple between sending them a message about their delivery and them coming up to get it. I've yet to find a way to steal a bite of pizza.

Think I can add a line to their renting contract about pizza taxes for accepting their packages? I'm not thinking heavy taxes, just a single bite whenever I have to take their pizza at the front door...
