That’s the sort of airfryer I have these days too, I was wondering if it’d work as well in that so it’s good to know.
 
I’ve been busy today which is good as it saves me wandering absent-mindedly into the kitchen and grabbing a handful of nuts or slice of cheese.
B- just black coffee
L- Bacon roll ( SRSLY roll)
D- DD keto garlic mushroom chicken thighs, another of their super simple tasty dishes. Served with wilted spinach and 2 glasses red. IMG_3022.jpg
 
B kefir with hemp seeds and a few garden berries (my raspberries are so productive at the moment will miss when away next week. My neighbour has kindly offered to water my tomatoes and I said to help herself to raspberries while I'm away and she said she may make jam I'd normally freeze when too many but hope she will have fun jam making in return for watering although with forecast may not need much! Norwegian predicted temps are 16 with rain and wind in the mix so our packing pile is growing with thicker layers than planned. OH was worrying too much about if he'd fit everything in his case as Cunard do some formal suit evenings so we did a rehearsal of his case packing today and then rehung it all until we do proper packing on Sunday. Hopefully his anxiety better now!)
L fried some mushrooms and two eggs - still tackling our short date egg stocks! Then some 100% chocolate
D first my usual ACV in water then confit duck leg with salads and LC roti and glass of red wine followed by LC cake and decaffeinated coffee.
 
Evening all

One of my go-to recipes, when family and friends with different food preferences are joining us for lunch, is walnut and mushroom nut roast. It can be prepared and cooked in advance and it's equally nice hot with gravy and a selection of veggies in season or cold with salad. Best of all, it's enjoyed by vegetarians and meat-eaters alike.

Once the ingredients are combined, I use extra eggs and flax 'egg' to bind the mixture, so the customary method using high-carb breadcrumbs and a roux made with wheat flour are not needed.

Today:

B: Two poached eggs topped with a knob of butter, avocado and crevettes seasoned with black pepper.
Water to swallow tablets.
Espresso.

L: Walnut and mushroom nut roast made with onions, eggs and flax 'egg', garlic, stock and rosemary ie. no breadcrumbs or roux. Vegetable tray bake with broccoli, cauliflower, red peppers, courgettes and onions.
Raspberries and Greek full-fat yoghurt.
Water to drink.

D: Seafood salad using king prawns and mussels, lettuce, fennel, Romano peppers, celery, cherry tomatoes, chervil and salad onions, with a dollop of homemade mayonnaise for dipping, topped with toasted pistachios.
Water to swallow tablets.
 
B: ff greek with seeds and 2 strawberries

Mid morning made some cheese seedy crackers and a new recipe lc caramel biscuits! Recipe to follow in next post so those who don't use sweeteners can look away now.

L: crackers, biscuits and leftover frittata

D: stir fry cabbage and bacon, same as last night except son cooked and he added chilli, oil mustard and a few other scret things, and very nice it was too.
A small ice cream.

Beware, these are addictive!
I made half the mixture using my mini chopper. Made 6.
I rolled them a little too thin after the cooling period so they ended up like brandy snaps!
I didn't bother with the chocolate
I don't think they'd freeze well as the fun is in the crunch
Beware, non diabetic hubby devoured 2. Keep them hidden!

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a Carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a phd bar.
Dinner: cheddar and mushroom omelette.

Have to use up the fruit salad I made on Wednesday - it's getting a bit tatty looking in the plastic tub I stored it in, sop will whip some cream and stir it all together. that will be breakfast.

Sausage and green veg for 2nd meal, because I didn't bother with a 2nd meal yesterday. I will do the prep for that this morning and then won't be too lazy to do it later.

First I have to complete my prep for this afternoon's visitors. I have soaked some raspberries in a bottle of sparkling water to see if that will make an acceptable drink for the children who are not allowed sweet drinks. Making some oat and banana muffins at present - they look like a disaster at present - the recipe produced a very thin batter - but they are in the oven anyway and we'll see the result.
 
Oddly, I was explaining that my banana muffins were not a success to my guests and they insisted on trying them. Two of the guests were boys - a 12 and a 14 year old and they both loved them! They didn't hang around because there is a music festival in Stornoway right now and they were anxious to get to it. The 14 year old left with a box of watermelon pieces and his mouth crammed full of 3 banana muffins!
 
Evening all

Today:

L: Packed lunch made with leftover walnut and mushroom nut roast, lettuce, Romano peppers, celery sticks and cherry tomatoes with a dollop of homemade mayonnaise.
Almonds, hazelnuts and brasils.
Strawberries to round off lunch.
Water to drink.

D: Smoked salmon and cream cheese salad made with lettuce, fennel fronds, celery, vine tomatoes, sweet cicely and mustard cress, dressed with olive oil and a touch of lemon juice, topped with toasted sunflower and pumpkin seeds.
Water to swallow tablets.
 
Mrs M reluctantly allowed me to start her on a low carb diet instead "healthy diet" her doctor suggested.
For dinner we had a two egg omelette with mushroom, tomato and spinach, topped with brie and finished off under the grill. Followed by Greek yoghurt and berries. She complained that this was a full weeks worth of eggs and more cheese than she is allowed in a week. I reminded her that I was now going to run her diet and get her sugars down. She looked crestfallen for a while and ate up. Then she suddenly smiled and said, "does this mean I can have cauliflower cheese on Sunday?" "Yes, indeed it does my love!" :)
 
@Martin_ welcome to this thread hopefully Mrs M will love having all the stuff official advice told us was naughty and way too high fat - so much that she'll not miss the carby and processed food. I know for me it was a revelation and nearly six years on I'm still managing my health by eating low carb. Think biggest challenge is often texture so crisping the cheese under the grill and cauliflower cheese in oven will help. @DJC3 often makes pretend crisps from slices of edam in microwave and this produces a really crispy cheese like a biscuit. I recently made them with thin slices of comte and they were delicious.

It's rained non stop here today so got ahead with lots of indoor jobs needed before our hols. Packing tomorrow .

Wow! Thanks for the compliment.

I'm always on the lookout for mouthwatering low-carb recipes and this thread provides lots of inspiration. It's important to enjoy our low-carb lifestyle, otherwise we'd never stick to it, would we?

I really enjoy my food, it must be said, and don't feel deprived with a LCHF lifestyle. It helps to focus on the many delicious foods we can safely eat, and not dwell too much on those that we really shouldn't have!
 
Todays evening meal was the 4th day of the same meal: mashed cauliflower with lots of onions, spring onions, grated cheese and a jalapeno burger.
Tasty, and nice to not have to cook or think of a meal, but 4th day is too boring for almost any meal.

Had my first appointment with the rheumatologist today, she was nice and thorough, and sent me for x-rays and blood tests right away. :)
Results in two weeks, very curious if there's anything to find.

Last week at least it was something with fries, giving me the chance to steal a couple between sending them a message about their delivery and them coming up to get it. I've yet to find a way to steal a bite of pizza.

Think I can add a line to their renting contract about pizza taxes for accepting their packages? I'm not thinking heavy taxes, just a single bite whenever I have to take their pizza at the front door...

From now on any pizza delivered to my neighbours-in-the-garden will look like this!

So very satisfying to steal that bite, so from now on accepting my neighbours' pizza at the door will be a pleasant surprise instead of a frustration. :happy:
