What have you eaten today? (Low carb forum)

Your mince dish sounds great. Do you add any herbs or spices?
Also how have you managed to have half a rasher of bacon leftover? I think that’d be impossible in this house!
Yes - I used sumac when frying the beef mince, then added turmeric and ginger. The half rasher of bacon was a miracle, as was the whole sausage!! I am trying very hard to listen to my body when it says "yep - that'll do" after a childhood of being forced to eat everything on my plate. It's a lifetime later and I still feel as if I ought to.
 
Odd start here today. Late-ish finish last night - BG 12.1. 7.4 at 3.20 when I got up again. Pain killers, tea and doze in the chair. Nearly 9.30 now and I'm on my third cup (mug) of tea and wondering how to go about making food today. Our big, old, circular to oval, Danish teak table is extended across the kitchen for its occasional teak oiling. We got it out last night and it is still here, in the way of everything. Very much restricting my movements around the kitchen. I can get to the kettle and the fridge, but not to the cookers. I guess breakfast is going to have to be cold ham and maybe a cashew cracker.

Hoping to use some beef ragout which I took out of the freezer yesterday as the basis of a 2nd meal - maybe with some courgette.

Amazed to discover (at the Counterweight class yesterday afternoon) that I have lost the extra weight that I put on in the previous fortnight plus another kilo. I was pretty sure, with all the baking and tasting, and with the much higher BG, that I had put weight on from 2 weeks ago but I have actually lost 11/2 kilos in the last 4 weeks. Not a great amount, but it is in the right direction.

The mince sounds even more delicious now. I love anything with ginger.
I think many of us will relate to your feeling of needing to finish everything on our plate ( otherwise it’ll be a ‘wicked waste’!). I can certainly relate.

We didn't get wicked waste. We got "think of all those starving children in Africa".
 
Water and black coffee this morning. The best mug was after a swim at our favourite beach which was deserted so it was a really relaxing break.
L- mince, broken into rough lumps and fried so it was crispy outside and rare inside. An egg broken into it, then topped with cheese.

Tuesday 26 September - bed 6.3 FBG 6.2. I'm trying to be good today since I have a blood draw in the morning. I finally had to relate the story about what happened to Papa to son, DIL, and grandsons as his bruises are difficult to miss. I was told off for not phoning, but, as I explained, there was nothing they could do, and it was a long haul through the elimination of various "possibilities." In the end, it's a case of follow up with the GP, so there was no reason to worry everyone. Boys are going to bus to school some days, so that gives me a bit more time to myself.

B. TAG with sugar-free coconut milk. No food in the house!

L. Early after a quick trip to the shops. Slice of continental cheese, and 2 each of salami & chorizo. Benecol dairy free and a cheese triangle.

D. Air fried chicken drumsticks, lettuce, tomatoes, a bit of avocado, sour cream dip. CC little chocolate pot and raspberries.

When we were small, we ate all we were given. At home, that was. I had learned to dislike Spam, tomato, beetroot and lettuce during the one day I had to have lunch at school and we were given Spam* salad and I was forced to sit at the table until I had finished it by the Dinner Lady. It was the one and only day I had a meal at school because my mother was visiting my brother in hospital. Another day Mum bought me a strawberry yoghurt as a treat which I hated and another day, an ice cream which I also hated (it was in 1948 and foods were full of artificial flavourings which tasted awful). I guess I was fussy, but at home, both my brother and myself scoffed everything. Mum was a great cook. There was one time, though, when Dad tried to give us a treat by making porridge with raspberry flavoured blancmange powder, served with syrup on top. No way could I eat that! I always preferred my porridge with just a little salt and milk.

* Actually, I don't think it was Spam. It was really "luncheon meat" which was a poor copy and tasted like sawdust.

My sister-in-law once told her daughter to eat her food because there were starving children in Africa, whereupon the child pushed her plate away and told her mother to give it to the starving children then. Mandy was about 4 at the time.

The ragout from the freezer was really good served with the courgette slices. Must do that again.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa.
Dinner: cheese and mushroom omelette.

Me, too. If I left anything, I was treated to tales of the starving children in India. (Following the 1939-1945 war, the British Red Cross sent my mother to India to nurse POWs who were too ill to travel home to the UK, so I had no reason to doubt what I was told. It's deeply ingrained in my psyche).
 
Evening all

An early morning fasting blood test meant breakfast was an hour later than usual and postprandial BG was raised 2 mmol above the norm. I suppose yesterday's flu vaccination may have contributed, although there were no discernible effects following previous flu vaccinations.

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado, seasoned with black pepper and a wedge of Teifi.
Water to swallow tablets
Espresso.

L: Salad using salmon fillets poached with black peppercorns, salad onions and lemon juice.
Combined with lettuce, avocado, vine tomatoes, celery and sweet cicely, dressed with olive oil plus a touch of lemon juice, lemon verbena and garlic, topped with toasted almond flakes.
Water to drink.
Skipped pud.

D Seafood salad using king prawns, mussels, lettuce, baby plum tomatoes, flat leaf parsley, Romano peppers, Kalamata olives and Welsh onions, dressed with an olive oil, balsamic and garlic vinaigrette, topped with toasted pine nuts.
Water to swallow tablets.
 
Busy day today, hubby had two appointments at the hospital. Seeing that the first appointment was at 9.20am thought I'd use the time away from the kitchen to prolong my fast, we got back home around 2pm, with me only having a Costa Latte since 6.30 last evening. What a shame Costa Coffee in the hospital don't sell Carb Killas or something similar, I'd have bought one if they did, they had nothing low carb (no surprise there).

Had yesterday's left over homemade veg soup, a few slices of chicken and a noggin of cheddar for lunch or was it dinner?

2 squares of 90% chocolate.

D: not very hungry but had a 300g steak on its last date so made it do all 3 of us. Boys had theirs in baguette, mine was on salad. Finished last of the mango and Coconut lc ice cream.

Breakfast: sausage casserole (out of the freezer yesterday).

2nd meal will be smoked mackerel. Will make a kind of hash with it, some swede, some celeriac and some onion.

Alistair has been making deep fried carrot strips. They are strips cut from carrots with a veg peeler and, when fried in hot oil become narrow shreds. He brought some up for me to try. I had a few strands and they were very tasty but I knocked the remaining little bowlful onto the floor! I shall try to make some for myself.

Having spent a fair bit of time with Hubby in York Hospital last week, I agree. We have all these "eateries" in hospitals now, but absolutely nothing we can eat.
I have to say the staff were good coming around with food menus due to the time we were going to be there, but again, nothing suitable for low carbers.
Edinburgh Royal Infirmary is not bad as they have a M&S food outlet.

Had to spend 10 days in hospital last April suspected of sepsis. I was doing so well watching my carbs previously, though it seemed to cause quite a bit of confusion when I was first admitted because of ketones in my urine, I was eating keto level carbs. There must have been about 10 patients coming and going in my 3-bed ward while I was there, of those there was literally just one patient that wasn't labelled diabetic. How I knew the others were diabetic was because staff were taking finger prick blood glucose tests several times a day. I can't remember one meal that would have been suitable for a T2 diabetic. Had to eat something even though my BG readings were going up and up. I'd have loved an egg mayo salad, cauliflower cheese, chicken salad, Greek yoghurt etc. I don't think it would have costs more, except perhaps using someone's creative imagination. It didn't kill me though, but an opportunity was missed to demonstrate the importance for diabetics to eat suitable meals.
 
Hi all I'm now back from my lovely short break catching up with friends. Just a quick summary of main meals while away we stayed self catering so planned and took low carb ingredients
Sunday curries and coriander
Monday steak and roasted veggies
Tuesday pork loin and mushrooms
Today
Breakfast two boiled eggs and keto roll
Lunch a few bits of cheese including an unpasteurized local blue cheese ( Wrekin blue cheese) I bought while away, with kimchi and a few pieces of a very wonderful sharp local green cox Apple shared with hubby. Also a few squares of 90% chocolate
Dinner Bolognese cooked in slow cooker and glass of red wine followed by LC brownie and decaffeinated coffee.
 
Today:

Water to swallow tablets.
Espresso.

L: Baked halloumi and sweet red peppers,
Hummus with Kalamata olives.
Salad using cucumber, salad burnet, rocket, salad onions, raspberries, strawberry halves and mint, dressed with olive oil, garlic, a touch of lemon juice and topped with toasted sesame seeds.
Water to drink.
Skipped pud.

D Seafood salad made with crab and brown shrimps, lettuce, baby plum tomatoes, celery, Welsh onions and mustard cress, with a dollop of aioli for dipping, topped with parsley and toasted pistachios.
Water to swallow tablets.
