What have you eaten today? (Low carb forum)

Breakfast: mushroom omelette.

2nd meal was to have been a lamb tagine but I've just noticed that the chicken Neil bought for me on Thursday had a use-by date of 28th (Saturday). It looks and smells OK so I'l have to think of something original to do with chicken thighs. Spicy chicken is getting to be too uninteresting. Could stick with the tagine idea, I suppose.

Not feeling very enthusiastic about that. I do have some spinach and some cream, as well as some mushrooms. Maybe make some kind of creamy sauce to go with the chicken instead.

So back to Saturday. Supper was a plant burger with two Portobello mushrooms.
Sunday my body clock got me up an hour earlier so no lie in. Usual brekkie of slice of LC toast and copious tea. Lunch was chunk of Red Leicester and sliced ham, more tea. Supper was roast chicken, cauli cheese and tenderstem broccoli.
Today usual brekkie.
Lunch was Dr Almond bread topped with salmon pate.
Supper will be leftover roast chicken and veg.
@DJC3 that was a very funny grinning roast!

Just chucked the chicken thighs in a pot with some onion, mushrooms and a lot of garlic with a tub of chicken stock out of the freezer. I'll add the spinach later - straight out of the packet, and then some cream. Easy to do, I only have to find the energy to eat it.
 
Didn't feel like eating till 2.30pm when I made hubby some cheese on toast, couldn't resist the cheese so I cut myself a 30g chunk of cheddar.

Dinner had been cooking all day in the slow cooker, brisket of beef with onion, carrot, swede and celery. Failed with making LC dumplings, they disintegrated in the gravy, still got a taste though, must try better next time.

2 squares of 90% Lindt chocolate for later.
 
B - Left over chicken breast, an avocado, and a teaspoon of peanut butter
L - 2 rashers of smoked bacon and some garlic buttered mushroons
D - Chicken curry with a dash of cream with cauliflower rice
Just done 10 mins on the spin bike like I did yesterday after my dinner. Feel less stuffed now lol
 
Collected Cooper dog this morning so did long forest hike this afternoon and more planned over next few days
Breakfast kefir then fried a few mushrooms and one slice of bacon and egg
Lunch kimchi small portion and some yoghurt plus two squares of 90% chocolate
Dinner slow cooked beef brisket with cauliflower cheese followed by LC Blondie
 
@Annb your ad hoc chicken recipe sounds delicious. I hope you enjoyed it.
@shelley262 have fun with Cooper the next few days.
No breakfast for me today as I had hygienist and dentist appt this morning. The dentist is gentle but the hygienist is a sadist!
Lunch - turned to DietDoctor for inspiration: roast beef ( prepacked from Coop) and No-Tato salad. It’s lovely but a really huge portion. Had half the amount.
D- chicken breast stuffed with a skinned Heck 97% sausage and dipped in egg and pork panko to give a lovely crispy crumb. The other half of the No- tato salad, cherry toms and a small pot of my latest fermented beetroot and leek.

Evening all

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and tiger prawns, seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Courgetti alla Carbonara made with chestnut mushrooms, eggs, double cream, Parmesan, nutmeg, butter and spiralised courgettes, topped with extra Parmesan and parsley.
Steamed French beans and mangetout smothered with butter.
Water to drink.
Skipped pud.

D: Seafood salad made with brown shrimps, mussels, lettuce, finely shredded red cabbage, apple peel, celery, baby plum tomatoes, salad onions, kalamata olives and mint, with a dollop of aioli for dipping, topped with toasted pistachios.
Water to swallow tablets.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and an Aldi protein bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: meatballs in tomato and mascarpone sauce with cauliflower, Brussels and carrot.

I just went and looked at our jar, which has been open for longer than a year. Nothing untoward there - no mould, no vile smells.

The cheese monster (MrB) always has several chutneys and pickles open at any given time. I can't recall when we last had to ditch any.
Bit of a bitty day today - my husband appears to have lost his appetite and it's throwing me way out of kilter. It didn't help that Tesco didn't deliver during the 9.10am slot, by the time it got to 11.30am I'm furious! Felt so stupid when I realised I'd booked an 9-10pm slot :oops: Still Tesco weren't completely blameless, they hadn't delivered my Gordons Gin tipple (it's on offer) and sent a bottle of caramel liqueur which of course I hadn't ordered, plus a bottle Famous Grouse (also on offer) still has it's security tag on :eek:

Anyway, made a batch of 4 sweet chaffles, it's a new recipe for me using mayo instead of cheese, also using lupin flour instead of almond flour. They worked out 2.4g carbs for the 4. Ate the 4 over the morning with some keto maple syrup and butter. They were very close to real waffles.

Lunch; homemade chicken and veg soup which I made a couple of days ago, adding a nice drop of double cream into the mixture.

Dinner: strawberries and cream

4 squares of 90% Lindt chocolate

Carbs for the day 20.6g.

chaffles look delicious. Where do you buy the lupin flour and keto maple syrup?
 
Morning all. Haven't posted meals on here for a few days. On Saturday I made a minced turkey sort of stew and had that 2 days running with green veg. Fell off the wagon with a few too many of those cheddar crackers. Yesterday was Pensioners lunch and we had soup to start then cottage pie. No pudding, I took 2 cheddar cracker with cheese with me. Didn't count the carbs! Have a great day folks. :)
 
Breakfast: bacon and eggs

2nd meal will be some more of the delicious thrown together chicken from yesterday. I actually had 2 pieces of the chicken, it was so good. It was the amount of garlic that made it so tasty - that and the defrosted chicken stock. There are 3 pieces left plus the basis of a very nice soup for some other time.
 
Haven't brunched yet but it will be avocado and possibly a little cheese or a yoghurt if that isn't enough. But tonight, husband is making his signature stew (it has a name too rude to put on the Board!) and I thought some of you might like to hear how it's made. All quantities "some".

Beef skirt
Butter
Olive oil
Bovril
Lemon
Chilli powder
Tabasco
Sweet chestnuts
Vegetable stock cube
Spring onions
Garlic
Lardons
Mushrooms

Cook very slowly for some time in lidded casserole dish.


He will have some pearl barley, and some carrots and parsnips, but he isn't diabetic!
 
Just put a couple of lamb shanks with some veg and (again) lots of garlic in the oven. They had to be done and it will have another 2 meals ready. I used the rest of the passata to make a sauce for a couple of the bits of chicken, so that's in the oven as well. Also made a cople of jars of fruit coulis (raspberry and blackberry but no sugar). I have to do this as soon as the fruit comes in the door, otherwise I would forget and the berries would just go mouldy in the back porch fridge. This way, they last a bit longer and can be used a spoonful at a time on yoghurt.

Have some baking to do for the weekend but may not be what I was intending to make since I have to use store cupboard/fridge ingredients. Don't suppose it will be very low carb but it will as low as I can make it.

I'm surprised at how much energy I seem to have these last few days. No idea where it's coming from. Not exactly feeling like a spring chicken but something has gone right because I can keep going with just a few breaks for my legs.
 
Breakfast small kefir then two boiled eggs and keto buttered roll
Lunch small portion of kimchi and sauerkraut with some cheese and low carb seeded crackers then local Apple - skin only and three squares of 90% chocolate
dinner chicken and bacon with cauliflower mash and braised leek and mushrooms - too much so didn't manage it all!
