What have you eaten today? (Low carb forum)

Had a busy day just messing, and getting to know the new AF. So for breakfast had 2 Heck sausages, 2 poached eggs, and 2 rashers of back bacon. Think I'll need to do more research on the eggs, they did look and taste a bit pitiful.

Though, as for the rotisserie, I was really impressed. I didn't have any butcher's string so had to make do with some cord from my sewing stash, it wasn't a runaway success, despite that the chicken worked out very well. This will be a gamechanger.

For a late lunch, or was it an early dinner, we had some of the chicken, hm coleslaw, cherry plum tomatoes and swede chips.

Later had 2 squares of 90% Lindt chocolate and 25g pecans.

Throughout the day had 2 creamy cocoas (cos it's turned cold) and 3 G&Ts which were obviously for medicinal purposes :cool: .

Total net carbs for the day 13g.

Saturday 25 November - bed 6.3 FBG 6.7 so my "not quite my birthday" meal worked out well BG wise. Hubby is mostly recovered, so we are out on our own tonight. Taxi tonight, since I will have a drink.

B. TAG and 2 slices of SRSLY toast with ham and cream cheese. Benecol dairy free.

L. Nothing.

D. Out again (sister restaurant of the one we were in last night). Campari and soda. Large glass of sauvigon blanc. Calamari to start (I was going to have parmigiana, but I spotted another fish dish on the specials). Main, a fish dish of monkfish, scallop, tuna, langoustine, cooked in a fish consommé. There was a piece of garlic bread, which went to Hubby. We did share a side portion of peas and pancetta. We've been there a few times, and before I knew it, my small affogato appeared! We both had an Irish coffee (they know mine is absolutely no sugar). That led to a conversation with the nice couple beside us, and me telling them how to make low carb "Baileys" which was quickly stored on their mobile to be tried in the next day or so. I have no idea if this is common knowledge in the UK, but just in case, I was delighted by both the history of this nettle wrapped cheese and the origin of its name. I also want to eat it.
" "Yarg" is simply "Gray" spelt backwards. It is named after Alan and Jenny Gray, enterprising farmers who found a 1615 recipe by Gervase Markham[3] for a nettle-wrapped semi-hard cheese in their attic. The original recipe is thought to date back to the 13th century.[3]" (Wikipedia)
I had a chaotic day, made worse by the storm creating more chaos in my head, and my anxiety disorder taking full advantage of that, and of the fact I'll have a family thing tomorrow.

I love my family (aunt, uncle, cousins from different branches of the family, their children), and I love the yearly tradition of eating mussels to celebrate my granfather's birthday (and never mind that he passed away some 30 years ago, dying is no reason to stop celebrating your birthday, right?).
What I love less is the long drive to get there, deciding if I'll spend the night there or drive back to spend the night in my own bed, and the more chaotic things are in my head, the more such questions become impossible to answer.

This morning, things were mostly back to normal with the chaos in my head.
So I still didn't look forward to the long drive, but I simply put some essentials in my bag in case I decided to stay overnight, no need to decide beforehand.

The day started with the yearly spelling thing on the radio. It's an old family tradition (other side of the family) to write along, and although there aren't many family members left who do this, it's still on my list as something belonging to the end of the year.
Didn't do too well though. :bag: Still, a great way to empty your mind, being fully concentrated on how to spell ridiculous words! :joyful:

The drive to my family was horrible, but the drive back was a breeze, and the food and company were wonderful!

There are always more mussels than we can eat, the bowls are being refilled throughout the meal.
Side dishes were fishy salads, one with mackerel and one with salmon with a potato salad in the middle, easy to eat around the potato.

There were two different puddings and two different types of icecream for dessert, so I had about a teaspoon of each type of dessert.

Just a little tip for those with an oven style air fryer. They can be a faff to clean, so I have various sized recycled foil dishes I use under spit roasting meat & roasting duck etc., on the racks. I foil line them & put water in. The water stops the foil taking off around the AF, but, you also capture the meat juices for gravy. I also line the same foil dishes to cook chops, bangers, veg etc. I'm not a lazy mare, but, my back & bod aren't so good for standing for long, so it's a pain & time saver. Keeps the AF cleaner too!

So, yesterday I went a little awry on the LCing as it was my BD, spent with family. Erm...I had some naughty savoury nibbles, my faves that probably caused me to be diabetic. :rolleyes: Then ribs & broccoli salad, a tiny & I mean tiny sliver of BD cake to be polite, then some cheese. I will add that I had a few dark rum & Free too. :bag:
 
Break fast - 3 egg white omelet with fenugreek leaves, boiled beans&carrot, chia seed pudding. Washed down with almond milk coffee.
Snack - 55 grams of salted peanuts and walnuts. Almond milk coffee.

Lunch - Raw papaya salad, grilled tofu, beans fry, cauliflower fry, raw red cabbage, pickle. 30g peanuts and walnuts. Washed down with almond milk coffee.

Glad the family get-together went well. Yours sounds like a really fun family. Food looks pretty good as well.

So yesterday was the actual day? Belated birthday wishes. Hope it is the start of a great year.
 
Morning all. Forgot to post yesterday, well actually slept on and off all day so it was more never even thought about it! Was a bit naughty as well, my friend brought me a piece of fish from the fish shop because she knew how tired I was. Naughty but ohhhhh-so-nice. And of course I paid the price. Today I'm having hm fish pie with cauli and broccoli. Perhaps a couple of boiled eggs for tea. Have a peaceful Sunday folks. :)
 
Breakfast: Ham and 2 RyVita. Took what I thought was gthe right amount of insulin to deal with the carbs in the RyVita (about 15g) but BG dropped too low so I had to have a h/m gingernut.

2nd meal: I have thrown come salmon, onion, tomatoes, courgette, aubergine, garlic (of course), ginger shreds, chicken stock and some tomato puree, into a pot, brought it to the boil and put it in the "Wonderbag" to test it. We shall see if it turns out well cooked veg by this evening. If it works, it's a good system because I can do it in the morning while I have the energy.

Belated Happy Birthday It was mine too yesterday, following my "not quite my birthday" meal the day before. At least I managed two days of meals out.

I do a similar thing with the airfryer as they are indeed a swine to clean.
 
I found a bag of frozen onions in the freezer so thought I would make onion soup but b eing frozen the onions were a bit soggy so they wouldn't do for French onion soup so decided to make onion chowder (without any thickening of course). But then I realised that \I had quite a lot of mushrooms to use up as well so made mushroom and onion chowder. I was going to put it all in the fridge for tomorrow, but it looked so good, and my 2 RyVita plus one gingernut hadn't lasted long. Of course, I had a bowlful. So that's going to be 3 meals today.

Sorry MIA again since mid week. Busy week getting Christmas present shopping done, if not wrapped, as first grandchild due first week Dec and I want to be available to help out where needed. Its an hour’s drive but doable.
We went to Bluewater on Friday picking up friend in Kent enroute not my first venture to BW but first for Mr P and he vows his last. He went beserk about the bumper to bumper for the last couple of miles and difficulty parking when we made it. He is just not cut out for queueing or shoppping lol.
So yesterday:
Brekkie usual slice LC toast, butter, copious tea.
Lunch out was out and by default small slice sourdough toast, pea puree and poached egg.
Supper Tandoori King Prawns and cauli bhajee takeaway.
Today same brekkie.
Lunch was two smidgens of cheese from farm shop with two small Carrs water biscuits. Tea. Was in a hurry to get out in garden to help Mr P with leaves and wasn’t hungry.
Supper will be Thai chicken stirfry with red and yellow pepper strips.

Sorry to hear so many of you unwell and hope you will soon turn the corner.

While I fully agree with the sentiment, this did make me jump, and then giggle.
I never heard it ('turn the corner') used this way in English, but the literal translation to Dutch ('het hoekje omgaan') means 'to kick the bucket'! :wideyed:

Thank you! Not only a fellow Sagi, but we're twins! ;) Your birthday meals looked delightful, a shame lurgs disrupted it a bit, but smashing you had decent celebrations.

Yep, AFs can be a pain to clean, otherwise they're fantastic.
 
Thank you @jessj for your AF tips! Always listening to advice on how to make life easier.

Had 2 rashers of back bacon and two eggs for breakfast, the eggs were another failed experiment in new AF, not giving up yet, Amazon is delivering some egg moulds which I hope will do the job.

Had a G&T mid afternoon.

Dinner was shoulder pork slowly cooked in the AFs rotisserie, along with French beans, and creamed swede. Glass of Merlot.

My brother showed me a recipe to make faux mashed potatoes. Basically it's cooked swede, mashed with warmed cream. I think this worked quite well. There's half left over so I'll be using it as a topping for tomorrow's cottage pie, might add an egg to it before cooking, and/or grated cheddar.

Net carbs coming in under 13g so far today, enough scope for some 90% Lindt chocolate later.

Not sure where you saw the expression "kick the bucket" but it is a common term in English. It has been around since the 1700's apparently and may come from the idea that a person wanting to end their own life would stand on a bucket, place a noose around their neck and kick the bucket away. There are other explanations, but I don't know them. Certainly it has been in use for about 250 or 300 years.
