What have you eaten today? (Low carb forum)

And, worryingly, I'd prepared food for "fussy" children who only eat white carbs, so they had white bread sandwiches, pizza, cake, biscuits and chocolate, drinking coke and fruit juice. I feel so bad for the next generations...
(I did provide cheese, cucumber, tomatoes and salad as alternatives but none of it was touched :()
I felt the same way last time I made food for visiting children but I didn't think it would be right to try to make them eat food that was better for them than the white carby stuff they usually have. The one occasion that I was feeding them wouldn't influence their lifestyle.
 
@shelley262 What a good idea to put olives instead of beans in chilli, will be stealing that idea! Yesterday family round Chilli con carne and all the sides, no one wanted to try my cauli rice Made a lemon meringue roulade for dessert but really wasn’t tempted to try it at all, hurray!
B Scrambled egg and mushroom on a slice of livlife toast
L Chilli, cauli rice,guac and sour cream, 1 dark choc truffle
D Seed crackers, cheese, salami, small salad
 
@filly You can freeze milk (leave a 1-2 inch space for expansion), I often do as I sometimes buy It if I know I have friends calling round for tea and coffee I then freeze what’s left.

yesterday‘s food

Breakfast: coffee with unsweetened almond milk and a big splosh (that’s an undisclosed measure in my house :happy: ) of cream.
Lunch: Roast pork sandwich (butter on 2 slices of Hovis50 bread). Crackling on the side. Another coffee with cream.
Dinner: 3 thick slices of roast pork with crackling. I have to eat it up as there’s only me and it’s a large joint! A few blueberries and a tablespoon of clotted cream.
I think I’m going to have to reduce my cream consumption in the new year! :rolleyes:
 
@MissMuffett my cream consumption has been rising too recently I had been almost to black coffee and then it crept back up again my small drop of cream now a big splodge! So back to it in New year trying to make myself into a full time black coffee drinker. I've drink black tea for most of my life so only need to work on the coffee.
Just dropped in early to wish everyone one a Happy New year and hope we all have a healthy low carb 2024. Food to date kefir and supplements and scrambled eggs - having cheese and wine evening with friends to see in 2024. Will try to take photo later of cheese board.

I can only drink Chinese style teas or fruit teas without milk. Indian teas I can only drink with milk (and usually more than a tiny splash) unless it is iced tea in the hot weather. Coffee, I can only drink comfortably, black and very strong. I do find tea refreshing though, but I don't find coffee in the least refreshing or invigorating. Just as well we're not all the same - that would be so boring.

Evening all, on this the last day of 2023.

Today:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and baby plum tomatoes, all seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine
Baked mirror carp, belly stuffed with prawns, sage, thyme, onion, celery and garlic, drizzled with olive oil.
Steamed asparagus spears smothered with butter.
A medley of baked broccoli, cauliflower, onions, and sweet red peppers.
Water to drink.
Skipped pud.
Two Booja-Booja chocolate truffles.

D: Salad made with anchovy fillets, eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with pecan halves.
 
B: ff greek with seeds and hazelnuts
Walk with a friend - except it tipped down and we diverted to the nearest coffee place . 2 hours catch up chat.

L: a fried egg on a thick slice of gammon. Some camzola cheese. Few sqs 85% chocolate.

D: sirloin steak with swede chips and butter sauted courgette. A sugar free jelly pudding. 3 glasses white with much soda. Probably less than a glass in total

Yesterday and today have been completely chaotic, food- and otherwise. Lots of fun has been had, little sleep has been had, high and low BG have been had, and today there was a new years dip in the cold water at the end of the road where I live with lots of neighbours I never met before, followed by drinks at a thus far unknown to me neighbour's place.
The glühwein was horribly sweet but I got to pet their lovely goats and bought some goat meat from them :)

Sharing what I ate and when is really too complicated for this thread, and lots of it would be off topic in the low carb section of the forum. Partly because of treating/preventing hypos, partly because I got offered food and accepted.
Dosing insulin for higher carb stuff is still a complete mystery to me, so back to normal tomorrow. :)

@shelley262 and @MissMuffett I’m the opposite: I managed black coffee and now I much prefer it but after 5 years I’m still no closer to drinking black tea. I’ll have another go this year.
Also re cream - I bought a huge tub of clotted cream for Christmas and it’s nearly gone but I don’t think anyone else has had any! I also found Rodda’s Brandy Clotted cream this year. It’s heavenly! It does contain 1% sugar but still 4.6g carb/100g so next Christmas I’m just going to buy this and eat it on its own as a pudding without bothering with lc Christmas pud or mince pies.

Food today - black coffee and a long dog walk first thing. A Lovely crisp clear morning changed into biblical rainfall within 10 mins of me arriving home so I felt very lucky.
More coffee, vitamins then bacon sandwiches all round ( mine in a seedy SRSLY roll)
Parma ham and handful of nuts for lunch.
Dinner was ribeye steak topped with Stilton with garlicky sauteed Brussels tops. Then 1/4 bar Montezuma’s absolute black with almonds. IMG_1704133871.343445.jpg
 
Lovely cheese and wine evening to see New Year in yesterday. I stuck to a few bits of celery, olives and peppers with lots of cheese had Comte, blue st Agur, stilton, smoked German cheese, vintage cheddar and vintage red fox - all delicious. As well as a couple of glasses of red wine I toasted New year with a glass of Hotel chocolat liquer.

My late eating and drinking yesterday meant higher than normal blood sugar first thing so decided, as busy, to keep food light most of day. Late morning had small kefir and my supplements then next meal about 5pm. Had cold roast chicken with simple green salad and a taste of all the cheeses and a few low carb seeded biscuits with small glass of red wine followed by LC crumble with cream. Well - back to normal tomorrow hopefully - I've still got treats to finish including Hotel Chocolat 70% truffles and several pots of cream so some transition will be needed. At least I managed to get rid of the nuts yesterday and no plans to buy more.
 
Started the day thinking normality was back

Headachy afternoon with several naps
D: omelette with ham and cheese
Then a phone call saying our second bereavement in 8 days had happened. Thought we'd had weeks, but no, suddenly this afternoon .
Hit the expensive chocolates. 3 so far but have now given the box to hubby to ration me.

Hubby's birthday tomorrow. Think I might find it hard to put ona brave face, again. It's getting draining all this :(
