It's lovely spring weather, so tonight I'll make up for all those carbs by having a mainly carnivore barbecue with my neighbour. :joyful:
Turned out the 'lovely' spring weather was of the rather chilly and windy type, which in no way is a reason to not have a barbecue. :)

For starters we had Greek style spiced goat, from the goats of neighbours some 200 meters down the road.

Mains was spareribs. The marinade needed a little insulin, but that was all the carbs in the meal.

And 'dessert' was pork belly with salt, pepper, and smoked paprika. Neighbour also threw a small potato in aluminium foil in the coals for himself, of which I had a small bite for taste.

Will do vitamins again tomorrow, for today this was perfect after yesterdays unplanned noodles with veggies, shrimp, and a sweet sauce.
Also sleeping in my own bed again tonight, curious to see if my basal dose seems to be correct again.
Those lows when sharing my neighbour's bed are one of the most puzzling things I've experienced with my diabetes. I've contemplated starting a T1 labelled thread on it, but how would I even explain without sounding very weird?

I have been there. When I look at the photos of the meals consumed posted here, I get hungry. Seriously. I went on low carb diets now and then, including the Atkins diet, which worked extremely well for weight loss.

But then, I became vegan, partially because I was no longer able to eat diary products. So a diet like Atkins would mean consuming loads of nuts and oils, which is not a bad thing, but not as tasty as what other members here consume.

When I was on an Atkins diet, I would eat hard cheese in the morning, hard cheese and chicken or eggs at lunch, and then dive deep into a high carb pasta dish in the evening, followed by some carb-high desert, all consumed within the required 60 minutes. I lost weight like mad. But this diet was excellent because of all the types of cheese I could enjoy back then. The same diet is no longer available to me.

It so happened that I got pushed into a very healthy niche of food intake: vegan, legume-based.

Breakfast: 50g of lentils
Lunch: 50g of lentils plus vegetables and bits of fruit
Dinner: cheese omelet made of legume flour and vegan cheese

Every day the same, but no problem here, except I am not losing weight.

That has my mouth watering! I would love to source some goat, I know there will be butchers who do it so must have a hunt. I had some delicious goat meals mostly slow cooked in Greece way back when. That's fascinating about the sharing-the-bed effect, definitely requires some further investigation!

From your profile I take it you don't have diabetes, is this correct?
The people on this thread don't eat low carb to lose weight, we do so to help with our diabetes.
But then, I became vegan, partially because I was no longer able to eat diary products.
If you're not able to have dairy you can still have meat unless you choose to not eat it for moral reasons, which is fine of course.

I tried a carnivore diet - intended to try for a month but only lasted a few days because my blood pressure was rocketing. In terms of weight loss and controlling BG levels it was extremely effective though. Many of the non animal product foods are a bit high on carbs for me. Maybe others find it acceptable for themselves though. Depends how many carbs you can take in your diet - in my case, pretty well none at all if I want to keep withing a reasonable BG range but, assuming you are also low-carbing for control over your blood glucose, it seems your pulse based meals are likely to be an issue.

You've been missed and sorry to hear that you've been dealing with a family issue. Well done you though on staying with eating well despite the challenges. It's all much harder when you can't plan and also away from your own kitchen. Hope the situation settles soon thinking of you.

Thank you - being thrown unexpectedly out of one’s routine isn’t great, but I know now I can survive without the high carb treats I would have resorted to once upon a time. I’ve not been testing BG as, like you, I know stress impacts heavily on it so I don’t think there’s anything to gain from it.

@Antje77 that barbecue looks fantastic, I’ve never thought to put pork belly strips in the BBQ.

Todays food: breakfast was yoghurt with seeds and a tasteless strawberry
L- cheese and cold supermarket meat. DGF cake
D- 3 egg cheese & mushroom omelette with a small salad. Last of my birthday bag of Montezuma’s buttons.
Loads of tea with milk throughout the day. Tea is a universal comforter and hits a spot that coffee misses. I still have my 2 early morning black coffees but join in the copious tea drinking the rest of the day. Too much milk I expect but never mind for now.

Lovely sunny morning and met a few friends for coffee outdoors - cafe is an enclosed South facing walled herb garden - so uplifting and much better than the non stop rain of yesterday.

I know what you mean @shelley262. Convivial conversation with friends is always a pleasure, but sunshine is a welcome addition. We're volunteers at our local nature reserve. I find focusing on plants and birdsong can alleviate tension and stress. Exercise can also do this, but it's even more effective when you're outside, particularly when the sun is shining. The next best thing is a south-facing wall or window lit by a sun beam

It's all tied up with neurotransmitters like serotonin and dopamine. Exposure to sunlight raises the levels of these mood enhancers and regular access to green, sheltered spaces, especially when bathed in sunshine, has been linked to lower risks of depression and improved concentration.

Brunch -cold chicken mayonnaise (Hellmann's of course).
Pre-dinner - small container of nuts - almonds, walnuts, hazelnuts, brazil nuts.
Dinner imminent - steak and salad. WHAT a salad! Lots of different green leafy things, cucumber, spring onion leaves (husband has other bits) green pepper, several different herbs from garden, olive oil & cider vinegar dressing.

Not sure whether we ever sampled Hellmann's mayonnaise. All the commercial brands we did try contained too much salt and sugar, so I started making it myself years ago using just 4 ingredients: eggs. avocado or olive oil, white wine vinegar or lemon juice and mustard, Sometimes I add a herb from the garden.

My husband is now a dab hand at mayonnaise. He quite enjoys making it and can usually be persuaded to do the honours, while I get on with other food preparation.

Trying to get jobs done today before head off to Wales for a few days. Will post a food summary when back beginning of next week.
Afraid I fell behind this week and have only just caught up with the many interesting posts on this busy thread.

A belated bon voyage @shelley262. Hope the weather is as good in Wales as here in London.

Evening all

Today:

B: Two poached eggs and scallops, asparagus spears smothered with butter, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Tuna steaks rolled in finely chopped celery and oregano, baked with sweet red peppers and mushrooms, moistened with double cream and topped with extra mature Cheddar cheese.
Steamed French beans and mangetout with a knob of butter..
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Seafood salad made with king prawns and brown shrimps, avocado, baby plum tomatoes, salad onions and Kalamata olives with home-made aioli for dipping and topped with roasted macadamia nuts.
Water to wash down tablets.

Morning all. Beautiful sunny day. Yesterday was fine, sunny and warmish so hopefully today will be the same. Taking my grandson and granddaughter out for lunch today. Carvery of course, they help me stay on track. Went to see/hear the Military Wives Choir last night and it was absolutely great. We thoroughly enjoyed it. There are about 70 such choirs and they are all given the same songs so that when a wife has to move with her husband, she immediately fits in in the choir because she will know all the songs. Hope everyone enjoys the good weather today. :happy:

@Annb well done on adapting to a difficult situation. It's laudable that you are adapting and staying low carb despite challenges.
@RosemaryJackson well done you too for keeping as low carb as you can. It's hard when not feeling well but you keep getting back to it.
Today's food
Before going out for coffee with friends a small kefir.
Lunch same as yesterday a slice of ham, sauerkraut and avocado salad with a few nuts then three organic strawberries with hm yoghurt
Dinner salmon with English asparagus and a couple of hm previously cooked and frozen new potato chips. Glass of dry white wine. Just had 100% chocolate and decaffeinated coffee.
Trying to get jobs done today before head off to Wales for a few days. Will post a food summary when back beginning of next week.

Breakfast was some refried pork belly slices and fried eggs.

2nd meal will be various bits and pieces of fish poached in milk and cream with a bit of onion and a few peas.

I also find that I have some beef mince a day past its use-by date so will make some plain mince and onion and use it for other dishes later in the week. Very versatile is beef mince.

Home made mayo is the BEST! I'm too idle and would have to do it all by hand, so for me Hellman's is next best. But it's a long way from the real thing.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and an Aldi protein bar.
Dinner: at my ILs which we do most Sundays, I don’t usually post on a Sunday cos I think my MIL would think I was mad taking pictures of the meat, cheese and salad buffet! I did however take a quick shot of my weekly Jaffa cake which doesn’t budge my blood sugar by much :)
