I have been there. When I look at the photos of the meals consumed posted here, I get hungry. Seriously. I went on low carb diets now and then, including the Atkins diet, which worked extremely well for weight loss.
But then, I became vegan, partially because I was no longer able to eat diary products. So a diet like Atkins would mean consuming loads of nuts and oils, which is not a bad thing, but not as tasty as what other members here consume.
When I was on an Atkins diet, I would eat hard cheese in the morning, hard cheese and chicken or eggs at lunch, and then dive deep into a high carb pasta dish in the evening, followed by some carb-high desert, all consumed within the required 60 minutes. I lost weight like mad. But this diet was excellent because of all the types of cheese I could enjoy back then. The same diet is no longer available to me.
It so happened that I got pushed into a very healthy niche of food intake: vegan, legume-based.
Breakfast: 50g of lentils
Lunch: 50g of lentils plus vegetables and bits of fruit
Dinner: cheese omelet made of legume flour and vegan cheese
Every day the same, but no problem here, except I am not losing weight.
