What have you eaten today? (Low carb forum)

Yesterdays evening meal was a generous portion of spareribs shared with a blind date of sorts, and somewhat blindly cooked as well in the dark.
Usually I'm the one who only eats what someone else prepared on the barbecue so I'm pretty proud to say I can do the trick as well, dark or not.
I also made a salad, but first the cat stole the eggs and then a turkey dug into the rest, good thing we were more interested in the meat anyway.

I also made four skewers with onion, bell pepper and salami, my date ate two, I had the other two for breakfast today, they taste pretty good cold as well.

Today was 'andijviestamppot', cauliflower purée mixed with raw endive and melted cheese cubes, with thin rashers of bacon on top. :hungry:

Breakfast today was the DD keto coconut porridge with blackberries.
Most of the day spent shopping for a dress to wear at youngest daughter’s wedding next year. Found one and as an added bonus it was in the sale. Celebratory lunch of Greek mezze which included chicken gyros, halloumi with aubergine hummus and a Greek salad.
Dinner just cheese and low carb crackers preceded by a couple of handfuls of blackberries while walking Dennis. IMG_1724870025.245341.jpg
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: coffee shop cappuccino and another carb killa bar.
Dinner: cheese and mushroom omelette.

Yes, I completely agree @DJC3. Until recently most asparagus available here in London was grown in Italy @DJC3 but this week's bundle was imported from Peru; a pleasant treat, but it can't match the flavour of English asparagus.
A pity the English asparagus season is so short @DJC3.
 
For dinner tonight I defrosted the home-made beef Madras, and served it with a small portion of Basmati rice (<30g carbs). It perked up my taste buds which had been dulled by Covid.

I always reckon a Madras type sauce improves having stood overnight (or longer) for all the spices to mingle and develop.

If that didn't stimulate your taste buds @IanBish, nothing would!

You're quite right, @LivingLightly - it certainly did. I'm making a chicken Vindaloo tomorrow, so wish me luck!
 
I don’t normally post my food on a Sunday as we regularly eat at my ILs for Sunday tea. We always have a cold meat, cheese and salad buffet, I have just one Jaffa cake! (8g carbs) while everyone else tucked into cake and ice cream. This week I took a pic of said Jaffa cake! :joyful:

@Rachox, I don't know how you can keep to one Jaffa cake!!! I couldn't, that's why I don't buy them. I would make an absolute pig of myself!!!
 
Evening all

Wednesday:

B: Two poached eggs topped with a knob of butter, avocado and three crevettes, seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Roasted cauliflower 'tabbouleh' using goat's cheese, salad onions, garden tomatoes, flaked almonds, flat-leaf parsley, mint, olive oil, lemon zest and seasonings, topped with toasted pistachios.
Salad made with cucumber, salad burnet, rocket, salad onions, raspberries, strawberry halves and mint, dressed with olive oil, garlic, a squeeze of lemon juice and topped with toasted sesame seeds.

D: Seafood salad made with crab and king prawns, lamb's lettuce, Romano peppers, celery, mung bean sprouts and salad onions, with a dollop of home-made aioli for dipping, topped with toasted sunflower and pumpkin seeds.
Water to wash down tablets.
 
I eat one then leave the table!
Not to mention years of practice, those Jaffa cakes have featured your posts for as long as I've been a member!

Today should have been another day of 'andijviestamppot', but I got a message from neighbour Astrid to say she got the job she and about 500 other people applied for, so I walked 15 minutes to congratulate her in person.
Right in time to join in with their barbecue so I had spareribs, a small steak, lots of olives and some cheese stuffed peppers.

Borrowed a bike to get back home, no idea why my BG is at 8 right now, it doesn't make sense. The extra exercise should have been enough to keep me well below 6.
