What have you eaten today? (Low carb forum)

Wet and windy day here so using opportunity to do some baking and cooking. I made a low carb lemon and lime drizzle cake. Bit of a cheat as used a low carb cake mix from The Panda Pantry but added extra lime and lemon zest to the mix and mixed some lemon and lime juice with more zest and some sweetener - which I used as a drizzle once cake out of the oven.just had a piece while it's still warm and will be getting the cake mix again! Will need to freeze portions asap so that don't overdo the sweetener consumption though. My blood sugars like it too.

Breakfast kefir then bacon and egg
Lunch picked up short date bargain smoked salmon so had some for my lunch. I served it on top of a low carb slice of bread which I spread with some horseradish sauce and full fat soft cheese and served with a few olives. @MrsA2 reporting back on horseradish with salmon - tastes amazing would definitely recommend!

Currently have roast chicken in oven which will be dinner later probably with cauliflower and broccoli and a glass of dry white wine.
 
Brunch of plain Greek yoghurt. I really do like this stuff!

Dinner - preceded by the usual small bowl of nuts - will be a sort of Chicken Thing (I can't repeat what we call it as nowadays it would be politically incorrect) comprising leftover chicken, mushrooms, a pepper, some green frozen tomatoes from the year's crop, 2 sliced leeks, butter, a vegetable stock cube, cider vinegar, slug of olive oil, garlic, a very few coriander seeds, generous slosh of Lee & Perrins and I think that's all. Followed by a glass of red wine and oh joy, 2 squares of high-octane dark chocolate.

No cooking skills needed, and only one cooking pot. Bliss.
 
Brunch was egg &mayo low carb roll.
Lunch mid afternoon was slow roast brisket,

cabbage sauteed in butter and cauli cheese using @shelley262 ‘s method of chucking it in the oven without cooking the cauli first. A great time saver and just as delicious. 2 glasses wine.
I may have a little cheese and few nuts for supper if I’m peckish but will try not to.
 
Coffee and cream x 2

Gouda Cheese and tomatoes
 
Breakfast - I'd bought some more of the M and S no grains granola which I had with Kefir and a few wild frozen blackberries. I liked the granola when tried it first a few months ago and also did test my sugars two hours after first bite with my meter to make sure ok for me and all seemed good. However today although my bgs were ok and quite low two hours after - I did have quite a steep rise not long after eating which stayed high until it fell low just about two hours later. As I'm trialling a sensor I was able to see this sustained rise which wasn't picked up by my traditional testing. I don't have any real rise at all when I eat my usual eggs and low carb toast so I'm going back to my usual tried and trusted breakfast! One thing I did notice a few months ago when eating the granola was that I felt hungrier by late morning which should have made me think that I may have had a sharp rise and fall as don't usually get that hungry after a high protein egg breakfast.
No lunch as out and busy - but felt hungry and had lowish blood sugars
Early dinner left over roast chicken and large salad then ginger tea and a portion of my hm LC lemon and lime cake.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: chicken and peanut stirfry with satay sauce.

Yesterday's Monday lunch was chicken soup, 2 sausages, 1 scoop mashed potatoes, (they give us 2 scoops but I give 1 scoop to the gent I take to club), cabbage, carrots and some gravy and I took some cut-up watermelon for pudding. As always, today will be a careful day. More careful than usual because somehow I've put a pound and a half on! Have a good day all :)
 
Breakfast kefir then two poached eggs on one slice of low carb toast
Lunch smoked salmon salad followed by one square of 90% chocolate
Dinner low carb pasta ( 25g of keto pasta at 1.8 g carbs per 100g pasta) in hm Bolognese cooked in slow cooler and served with grated cheese.

Just had a small amount of red wine diluted with well brewed ginger and turmeric infusion - enjoyed but maybe not quite right for a sunny day tasted almost festive!
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: bacon and feta fritatta with cauliflower, broccoli and carrots.

Out early this morning so started meals with brunch
Brunch kefir then two eggs mushroom omelette served with leaves and coleslaw

Dinner Sea bream and peas also glass of fizzy mineral water with splash of dry white wine. Followed by a home made low carb brownie - I made a batch this afternoon using a Panda Pantry low carb cake mix I also added some chocolate bits from a few squares of 100% chocolate.. Photo below is of cake cut up - got 18 portions most I have now frozen.
