What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: Skinny Café pancake (but they’ve changed the recipe, slightly higher carb and stuck to the pan, bland and tasteless :() with bacon and SF maple syrup followed by Greek yoghurt and raspberries.
Mid afternoon: raspberry chia pudding and black coffee.
Dinner: cold Tesco chinese style pork with cauliflower, broccoli, pork scratchings and coleslaw followed by SF jelly, cream and LC chocolate granola.
 
Breakfast - coffee with almond milk &Truvia

Lunch - an old favourite since pre-diabetes times: feta cheese with black olives in a little olive oil with Piccolo cherry tomatoes and thai basil; sliced nectarine with ground almonds, Sukrin Gold and a slab of melted butter; cinnamon l tea

Dinner - Heck 97% sausages with fresh sage leaves wrapped in streaky bacon, with a bought cabbage mix stir fried with a few cranberries and a couple of teaspoons of husband's orange juice; half a tiny pot of Greek style yoghurt with a few frozen berries; lemongrass & ginger tea;

Supper - herb & garlic Boursin LIvlife buttie with mixed seeds; cocoa with almond milk & truvia

Water & couple of pieces of my usual Lindt choccie during the day
 
Breakfast - Avocado with pastrami and poached egg, topped with a teaspoon of The Curious Cheese Company's Welsh rarebit spread.
Lunch - Prawns with spinach and halloumi.
Dinner - Home made low-carb bolognese (my hubby cooked! Third time in 10 years!!). No pasta, and lots of cheese.

Snack - Pork crunch with Holy Moly Guacomole to dip.

Levels were 5.7 to 6.4 throughout the day, so zero fast-acting was required... which is kinda my plan!

Hi luceeloo, your menu looks lovely. I hadn’t heard of the Curious Cheese Co so had a quick search. The Sassy Feta one is pretty low carb and I love a bit of a chilli kick so might look it out.
 
Hi all, just a quick check in, I have had a couple of oopage moments but not done any major damage.
I have decided to enjoy my holiday and try to relax my strict control re food choices will I’m away, I very rarely give in to temptation and will often go without while others tuck in, (sometimes this is done with a bit of a sulk) but in fairness to my partner and to fully enjoy everything this holiday has to offer I am going to release the reins a little bit. I anticipate there may be days when I let them go completely! Breakfast however are easy here as lots of low carb choices and things I enjoy so I won’t be in a state of complete abandonment lol. Lunch and dinner will be more relaxed as I will indulge in some treats. I had 2 very small slices of a lovely dark bread last night, it had seeds in and little bits of raisin, it was amazing, I did trowel on grass fed butter to lessen the guilty feeling, I shall indulge in this delight as I won’t be able to repeat it at home so will enjoy and savour it for the next 6 days. I discovered yesterday that there is a complimentary hot dog station near the carrousel on one of the decks so I can treat myself there minus the bun of course and this will be better than the complimentary pizza I will try to stay away from!

The first I'd heard of it myself was when I picked a pot up in Sainsbury's on Friday. The Rarebit one is strong so I only need a little bit to flavour something up. I did see the Feta one - I think I'll try that one next too.
I'm experimenting with my menu at the moment. I'm trying to buy little indulgent, tasty things to keep my interest - and so if a hunger pang strikes, I can just pick at something.

Sounds like you’re having a marvellous time Jayney and you definitely have the right attitude. As the saying goes - a little of what you fancy!
 
B. Scrambled eggs with smoked salmon
L. Leftover Sicilian cauliflower rice pilaf, grilled artichokes, a few cubes of baked sweet potato and feta. Delicious! Half pink grapefruit (10-12g carb)
Snack. Mixed nuts
D. Vodka, fresh lime and diet ginger beer.
Spanish style quorn sausage casserole followed by some Greek yoghurt and damson puree.
Off for my first ever trip to Scotland this week. Beware those tattie scones (deep fried Mars Bars?).
 
I shall have to remind myself to buy some paté :hungry:- I get Brussels liver stuff regularly for my dogs (to wrap up their pills) but haven't thought for years to buy me anything other than the rare special offers on the salmon ones.

I love pate but am now having to spread it on cucumber instead of toast! Not the same at all. I've started buying Sainsburys chicken liver pate which gets good reviews, and I portion it up and freeze some of it. Yum!

Tea - Chicken drumsticks, rollitos and salad, one piece of left over serrano ham. Strawberries, blueberries and cream.

Terrible lapse this weekend due to being out and about a lot, and poor availability of non carb foods! Roll call of naughtiness includes M & S sandwich, packet of handcooked crisps. Plus a packet of Maltesers at cinema whilst watching First Man (I recommend the film). Managed to not eat pizza later and had a chicken salad at Pizza Express (and some shared bruschetta). This is still way below the amount of carbs I used to eat, but still......:bigtears:

Oh and see above flapjack and milky mocha!!!!!
 
Hi all so relieved today that celebratory day for youngest son went well - oldest autistic son has been not so good last two weeks but to our relief he managed to be there eventually and got through the rest of the day ok when eventually got him here!
Breakfast scrambled eggs and wild chanterelle mushrooms
Celebratory late lunch 4 min IP beef ( @DJC3 it was excellent - very tender and tasty but a bit too pink for eldest!) cauliflower cheese, cabbage, braised celery (plus for non low carbers York’s puddings, carrots, roasties and gravy ) with glass red wine followed by lc trifle plus berries and cream so choices on offer
Teatime, cheeses with bread/ biscuits for others plus birthday carrot cake for most Not me! Carrot cake remainder taken home by birthday chap to enjoy at leisure!
Also rain cleared up at teatime and managed a walk with youngest sons dog!

I agree @DJC3 -- it is hard to beat the crispyness of sweet potato fries. I absolutely enjoyed them last night and was elated that blood sugars were fine (don't know what would have happened without the red wine to slow things down though).

Not had much sleep last night (three and half hours) and think that this may have contributed a bit to a slightly prolonged high in sugar levels after my first meal today. Kind of interesting though to see insulin resistance in action.

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: Fried duck breast with low-carb honey (no sugars, just xylitol), about 1/6 of a pear, half an avocado. A small bowl of leftover soup (oxtail, red curry paste, beef broth, bellpepper, mushrooms, and a bit of pumpkin). Blood sugars went up to 6.6 mmol after forty minutes and had started dropping after an hour (though had a bit of scare with a reading of 9.7 mmol due to pear juice on my finger -- after washing hands only 6.1 mmol, but wasted 7 strips due to repeated test). One glass of red wine.

Dinner: A small piece of calf liver with a homemade sauce of cream, onions, mustard, pastis, estragon and beef broth. Lamb's lettuce, fried onions and beef salami with a dressing of buttermilk, mayonnaise and chipotle sauce. Another glass of red wine. Blood sugars only went up by 0.6 mmol.

LOVE your expression roll call of naughtiness! One to be used in Future by us all I’m sure! As you say compared to what you used to eat carb wise! A good way of looking at things I think - I was a very, very high carb eater. It is hard when you are out and about re options - good to draw a line and move on. Hope you have a good week.

Ive had 2 days following the DD menu plan and surprise surprise! My bgs have stayed in the 5s since pre breakfast reading of 6. This is a vast improvement on recent weeks but I’m finding the amount of fat I’m eating a bit intimidating. Not sure I could manage full blown keto long term. Nevertheless I will crack on for a couple of weeks and see how it pans out.
B: DD keto pancakes with extra thick cream and 3 raspberries. Probably wouldn’t bother with these again, a bit boring and too much effort and washing up for breakfast.
L: smoked salmon and avocado with olive oil - couldn’t face the suggested mayo.
Mid aft snack: CCB not part of the plan and I’m annoyed with myself for giving in to it - I wasn’t even hungry, just a bit bored.

D: Pork chop and green beans with garlic butter.

A couple of glasses of red with Mr C who has spent all day travelling back from Cornwall on the train - don’t know if you’ve seen it on the news but rail travel from the west country has been pretty chaotic today, poor bloke has been travelling for 8and a half hours, including a 1 hr wait in the pouring rain for a rail replacement bus at Exeter.

Poor Mr C pleased you’ve kept him company with the red wine! Interesting about DD - so you feel it may be the percentage of fat that makes the difference? It’s a hard one as we’ve had so many years of the low fat mantra it’s difficult to go hard core on the fat! This is recipe I used for the beef and I cooked a piece of rib roast that I marinated from yesterday
