Evening all.

B: 2 coffees with cream

L: mushrooms and halloumi fried, wilted spinach and a poached egg. Couple of Hotel Chocolate 100% buttons

Snack: handful of walnuts

D: tried to do a low carb chicken kiev with parmesan and almond flour ‘breadcrumbs’. All the garlic butter came out but it was ok - just poured it over the top. With broccolli and cheesy celeriac mash. The last slice of choc olive oil cake with clotted cream to finish.

@Goonergal was it you asking a while back if celeriac had a very strong celery taste? Don’t know if you’ve tried it yet, but my daughter had a taste of my mash, and even with all the cheesy loveliness she still didn’t like it because of the celery taste. Be warned.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream (carefully measured 2 tsp) washed down with a white coffee (still using almond milk to save calories and carbs)
Lunch: cold chicken with raw cauli and broccoli, Caesar dressing and Parmesan cheese, followed by Greek yoghurt and blueberries.
Mid afternoon Hartley’s 10cal jelly and black coffee.
Dinner: chicken chasseur, mixed veggies and swede and carrot mash, followed by strawberries, chocolate and hazelnut Oppo and one square of 85% chocolate and a Carblife black currant and liquorice sweet.
(I bought a jar of assorted Carb Life sweets from Amazon this week and am trying one per evening!)

I love the Explore Cuisine fettuccini, very very filling and tasty :hungry:

That sounds good. I’m planning on coating some chicken wings in Parmesan before cooking tonight.

Yes, it was me. I’d already come to the conclusion that it was best avoided as one person who said it didn’t taste like celery said it was like parsnips and I don’t like those either!

A good "breadcrumb" I use is ground pork scratchings and parmesan. Sometimes I add chopped fresh parsley to it as well (veal, chicken or pork escalopes). Fish as well. Doesn't need seasoned the pork scratching takes care of that.

Breakfast - Frosties - 13 units NovoRapid BS before was 6 2 hours after 5.9 :D
Dinner - Chips and gravy - 12 units NovoRapid BS before 5.8...... awaiting the 2 hours after

Edit.....After dinner 6.6 :D

Bed 7.9 FBG 6.8. Physio this morning so didn t have time for breakfast.
B. Tassimo Americano grande with a dash of cream.
L. Remains of yesterday's Thai red curry and another Tassimo Americano grande with a dash of cream.
D. Spiced ribs and coleslaw.

Picked up ox cheeks in Morrison's when I nipped in to get boiling beef and bones for soup. No 1 grandson wants Papa to make broth and I got everything yesterday for it apart from the beef for the stock! Great way to get lots of veggies into youngsters and they love Papa's broth.

Hello all,

Being out and about the last two days might not have been a grand idea. Having a bit of relapse today. Considered buying some Nyquil in spite of all the sugar it contains as I am really sick of feeling sick. In the end, I googled the medications in Nyquil and got them separately. Feeling very virtuous and looking forward to a full night of sleep for once.

@SueJB -- I have also tried the Explore Cuisine Mung Bean and Edamame Fettucine and they are really good, a bit more rubbery than regular pasta, but still quite acceptable. Prepared a 50g portion with pesto Genovese and it hardly affected my blood sugar levels (a 0.3 rise after 1 hour, back to the same level as before after 2 hours).

Breakfast: Two double decaffeinated espressos with cream and erythritol. Half a DD keto roll with mayonnaise and smoked salmon.

Snack: Overdid the chocolate (85%) a bit with six squares.

Lunch: A DD keto roll with mayonnaise, cheese and avocado.

Dinner: Butter-seared white asparagus, sauce Bearnaise, some fried lamb. A glass of red wine.

@ziggy_w sorry to hear you’ve had a relapse. Hope the medications do the trick.

Having a few zero carb days. Wondering whether any of you more experienced cooks - @Rachox @maglil55 @shelley262 @Brunneria know whether fathead pizza would work without any almond flour, so a base made just of mozzarella and cream cheese? And if so, how long to cook it for?

Today’s menu was:

Breakfast - none

Lunch - 2 boiled eggs, small piece of double Gloucester cheese and a peperami

Dinner - small brined chicken leg and 4 chicken wings coated in Parmesan: just dipped the wings in egg and rolled in the cheese. Didn’t quite get enough cheese on them, but worth repeating. Editing to add 3 Hotel Chocolat 100% buttons.

It is super easy and soooooo filling.

Yesterday
1pm gouda and chorizo slices. Yum.
5pm beef mince with cheese
I had run out of choc mousse. Pathetic sniff

Today
12pm beef mince and cheese leftovers.
4pm chorizo crisps with goatsmilk cream cheese
7pm more beef mince and cheese, with a splash of chilli oil.
Seems to be An Eating Day (got cold this afternoon, because I didn’t take the usual dog walk to keep the blood circulating), so I may have some goatsmilk yog later too. I like it much more than cowsmilk yog.

@ziggy_w hope you have good sleep and wake up feeling better in the morning......spring is on the way!
@Goonergal not tried the dd recipe with no almond flour that @Brunneria recommended would be interesting to see how it turns out and good luck on your zero carb experiment.
Ive done second training day but will be pleased when third one done tomorrow I find full days with travel stressful especially as I’m a carer too but income helps!
Breakfast one sausage, rasher of bacon and egg
Lunch non not hungry today bigger breakfast kept me going
Dinner chilli with black olives and one slice of low carb bread with garlic butter followed by lemon and lime mousse.
Will be celebrating tomorrow evening!

L: took packed lunch to Desmond course - cheddar cheese, olives, nuts and a low carb mug cake. Enjoyed lunch more than the course, especially as the only toilet in the building broke at lunchtime so we all had to sit with crossed legs and pained expressions all afternoon. No biscuits were offered I’m happy to report.

D: slow cooked shoulder of lamb with spicy crust. Spicy roast cauliflower and a spoonful of dahl. Not sure yet how this is going to affect bg. Fingers crossed.

Enjoyed lunch more than the course, especially as the only toilet in the building broke at lunchtime so we all had to sit with crossed legs and pained expressions all afternoon. Poor you and the broken loo! Since eating lCHF I need to nip to loo really frequently not sure I’d have survived. How was the course otherwise? Do they cover lCHF? I’ve not been to a course hope it was of use.

Hi @shelley262 to be honest I’ve learnt so much more on this forum than the course offered.

They didn’t mention lchf and on the couple of occasions I tried to bring it up they sort of politely ignored me. I didn’t want to hijack the day so tried not to be too vocal.

It was a bit like a weight watchers meeting - all good carbs and low fat! One lady did approach me afterwards though and I recommended this forum and DietDoctor recipes so hope she takes a look.
The presenters were friendly but not sure they actually understood what they were telling us, especially the section about fats (they were probably desperate for the loo as well by this point though and probably finding it as hard as the rest of us to concentrate).
