What have you eaten today? (Low carb forum)

I tried emailing it to myself but it didn't make it any smaller. I use Android. The size of the jpegs is ridiculous!
I put any pictures I want to post into the app called pic stitch. Then save it to my camera roll then post.
 
0 carb meatballs 100 grams
broccoli 500 grams
butter 4 tbsp
eggs 2
bacon 4 slices
peanut butter 2 tbsp
tea
heavy cream 1 tbsp
sweetener 1 package
 
breakfast: 3 eggs, maybe 3 oz. of scrapple, thinly cut and nuked, a pint of coffee and lots of whole fat milk

lunch - 1/2 cup of combo half steel cut oatmeal and half coconut flakes with an eighth cup of pine nuts plus a cup of herb tea (planinski chai, ie. mountain tea)

dinner - 1/4 of pork ribs cut apart and slow cooked with quarter cup red onion, 2 apples, one yellow green pepper and Yoruk kofte seasoning. Added maybe 20 yellow cherries I had around. Added half cup of apple juice toward the end. Slow cooked this baby all day. Meat fell off the bones. Was luscious, enough for another meal to share. Significant other had his with some left over burmese rice. Knife not needed

Your dinner sound lushious. But what’s scrapple?

Yesterday ...

Breakfast: Two double decaffeinated espressos with cream and erythritol. A home-made low-carb tortilla with steak, mushrooms, creme fraiche and cheddar, a coffee-caramel flan.

Lunch: Shared a serving of döner kebab with cabbage and red cabbage in oil, tzatziki and feta cheese with my hubby.

Snack: An Adonis bar.

Dinner: A very small DD keto roll, half with butter, the other half with liver pate, and another coffee-caramel flan.

Still more food than anticipated, but better than last weekend.

Not me trying to give up coffee @ziggy_w think id be lost! It’s @DJC3 who is having probs with her digestion I believe. I had brief probs with my digestion in early days on lCHF especially when went IF but was taking Metformin at the time and once got off that my digestion was normal again thankfully.
Coffee is an essential for me and I don’t feel I could have got as far as this without it and cream - I switch to decaff after my mid morning one but coffee and I are great pals.
Sounds like you’re really busy but doing well.

Hi @Stronggirlsclub,

It probably depend on the fillers that they put in the döner kebab. If they don't use fillers, they should be close to zero carbs. (You could always ask where you buy them, or if they don't know, experiment by measuring your blood sugars after having some.) The tzatziki will have a few carbs, but not many. Also the white and red cabbage, maybe in the range of 2 to 4g per 100g. Feta should have none. So, all in all quite low carb. When I first ordered them about one and half years ago, I measured my blood sugars and they peaked at 6.7 mmol, which I thought was quite acceptable.
 
Hi @shelley262, sorry for the mix-up. This seems to be quite symptomatic at the moment right now. Forgot an important meeting last week, which was quite embarrasing. Well there's not much, I can do about it retrospectively, though. Ah, well.

How are you today? In terms of managing your diabetes, you're always doing exceptionally well. You have my admiration.

With respect to coffee, I agree with you. Coffee is one of the biggest pleasures in life for me now (apart from red wine). I also switched to decaffeinated as the caffeine seemed to raise my blood sugars a bit. Did quite a lot of experimenting with different combinations back then. So, it seems caffeine raised blood sugars by about 0,6 mmol, the full-fat milk about another 0.6 mmol, and the xylitol by yet another 0.6 mmol, making it about 1.8 mmol altogether -- a bit too much to my liking. After switching to decaf, heavy cream and erythritol, impact on blood sugar levels is now negligible.

@DJC3 -- as I seemed to be a bit muddled recently and still a bit curious, could I ask again.

I’m fine thanks - bit nervous about my hbaca1 next week it’s like exams looming! Happy with the way I get to eat and drink especially since I started baking low carb cakes!
 
@shelley262 -- I empathize. It definitely feels like a major exam coming up. It would surprise me, though, if your result was anything but brilliant.

Hi Ziggy, it’s me trying to give up coffee, nothing to do with bg though, just stomach cramps. Was hoping it’d be caused by metformin, like @shelley262 found, that’d be a lot easier to give up, but I don’t think it is. I did suffer from IBS which improved staggeringly after starting lchf ( in particular, bread I think) but have started getting these cramps now. I like quite a lot of the fancy teas you can get these days but nothing hits the spot like a coffee in the morning.

Were your homemade tortillas the DD recipe? Do you know if you can freeze them?

So sorry to read about your cramps. This is definitely no fun.

I guess the best way is to see if you feel better cutting out coffee.

Another alternative might be switching to espresso with heavy cream instead of regular coffee. I have found espresso to be a lot easier on the tummy compared to regular coffee. Just googled it too and google results also seem to confirm that espresso is a better choice in this respect. Because the water is pushed through the coffee grounds with high pressure, a lot fewer of those bitter and sour substances end up in the brew. (The heavy cream also helps to soothe your tummy.) Some of the nespresso machines (or similar) aren't too expensive and the capsules are about 30 pence each.

The tortillas are from a year ago. (Makes you wonder when they are still good after a year in the fridge, doesn't it?) Back then, I was experimenting a bit and if I remember correctly I used a mixture of soy flour, almond flour, salt, some spices (especially caraway seeds) and gluten. Today, I try to avoid gluten, though it is reasonably low carb with 4g of carbs per 100g. (Although never diagnosed with gluten sensitivity or intolerance, I found my psoriasis was improved a lot since cutting it out.) Today, I just use the DD keto bread recipe and a rolling pin to flatten the dough before putting them in a pan (or the oven) to bake.
 
Good morning everyone.

I am feeling very positive today.

I had my lowest ever morning BG Reading (due to yesterday’s exercise?!). I did a 40 min walk followed by a 40 min swim this morning and my numbers came down straight afterwards.

I also downloaded the my sugr app and input all of my readings for the last 2 weeks since I was diagnosed and my predicted HbA1C is now at 59mmol/l (down from 105 at diagnosis)

I fully understand that HbA1C doesn’t follow SMBG exactly and obviously there are data gaps over night, but this is really encouraging given I’m not on any meds. I’m hoping that in another 2 weeks time things look even better as there’s still a way to go!

2 weeks into lchf and I genuinely feel better than I have for years!
 
P.S I made the lemon cake and was so so so surprised by how delicious it is! So light and fluffy.

The only downside is the aftertaste from the sweetener.

I only had Truvia at home so wondering if there are any better sweetener options out there?

Gather truvia is a mix of erythritol and stevia but not sure how mix is done percentage wise. I buy granulated erythritol which you use weight for weight as a replacement for sugar and a couple of liquid stevia drops of which I just add a few to balance taste. Stevia can be over sweet in my opinion so you need to be careful. I don’t get an aftertaste with this tiny amount.
Meanwhile you could always warm up a slice and serve as a pud with cream - may take aftertaste away?
Good isn’t it that recipe works - though maybe order some erythritol if you have another go! I buy from amazon as cheapest source.

I also had to give up coffee completely, Sniff.

Ended up being really miserable for a while, and trying a number of substitutes before settling for Prewitts Organic Roast Chicory.
It will never be real coffee, but it sort of equates to a mild instant, like Mellow Birds, or similar. I have it with double cream and erythritol. Better than nothing. Sniff. But I can't go back to coffee - it was raising my blood pressure.

@ziggy_w and @Brunneria thanks for your coffee suggestions. The thought of giving up coffee is worse than no bread or pasta by far!
I do have a Nespresso machine, which I gave to no. 3 daughter but I dont think she uses it much so I might ask for it back and follow your suggestion first Ziggy. If that fails it’ll be the roast chicory, good back up plan @Brunneria Do you get it from Amazon or H&B? Don’t think I’ve seen it in Sainsburys.

Also thanks for the tortilla source Ziggy, I’ll give them a go.
